PORK STEW
I always made this stew with beef,but pork is so much better.I made this according to my husband's likes. It is good with jean's Recipe #65340

Steps:
- In a large Dutch oven pan, put the butter and the cubed pork. Cook until all the pork is browned, about 30 minutes.
- Add the onion,and the chicken bouillon and a little chicken stock. Let this simmer until tender (this is how you get good gravy on the stew).
- When pork is done, add the vegetables.
- Stir all together and add the chicken broth and enough water to cover the vegetables.
- Simmer until the vegetables are done.
- To thicken the gravy, I use the peppered gravy mix in a 1/2 cup water.

- Preheat oven to 350°.In a large plastic bag, mix flour, salt and pepper. Add pork cubes and shake until well coated.In a 5-quart Dutch oven over medium-high heat, heat butter and oil. Stir in pork, onion and garlic. Cook and stir until meat browns. Sprinkle parsley, bouillon granules , thyme, rosemary and sugar over meat. Add potatoes, carrots and tomatoes. Add enough water to reserved tomato juice to measure 2 cups. Pour into Dutch oven. Over medium-high heat, bring to a boil.Cover, transfer to oven and bake for 1 1/2 hours. Stir mixture well, re-cover and bake 1 to 1 1/2 hours longer or until vegetables are tender. Stir in beans, peas and salt. Bake for 5 to 10 minutes or until beans and peas are heated through.

- In a large cast-iron or other ovenproof skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard all but 2 tablespoons drippings. Increase heat to medium-high. Add onions to drippings; cook until tender, 5-7 minutes. Remove with a slotted spoon; drain. Reduce heat to medium., Preheat oven to 350°. Toss pork with flour. Working in batches, brown pork in drippings, adding oil if needed. Remove with a slotted spoon; drain. Remove skillet from heat; discard drippings. Return pork to skillet. Add bacon, onions, apples, sage, salt, nutmeg, and pepper. Stir in cider and water., Bake, covered, until pork is tender, about 2 hours. Meanwhile, place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-15 minutes., Preheat broiler. Drain potatoes. Mash, gradually adding 3 tablespoons butter, enough milk to reach desired consistency and salt and pepper. Spread potatoes over pork mixture. Melt remaining butter; brush over potatoes. Broil 6 in. from heat until topping is browned, about 5 minutes. If desired, sprinkle with parsley.

PATTE DE COCHON (FRENCH CANADIAN PORK HOCK STEW)
This is a tradional French Canadian dish. Every "Quebeqois" knows what this is. It is basicly a poor mans dish. Farmers found use for every part of the animals they farmed. This recipe uses the pork hocks. This was served at least once a week at my grandparents house.

Steps:
- (For Broth).
- Cover pork hocks with water, add chopped onion, garlic powder, allspice, salt and pepper. Simmer for about 2 hours. Add water as needed.
- Remove hocks, cool and take meat off bones. Strain the broth and reserve.
- (For Meat Balls).
- Mix ground meat, egg, allspice, onion salt, onion chips, garlic powder, nutmeg and allspice together and form into small meatballs. Roll the meatballs in flour to coat. Place on a cookie sheet and bake at 350 degrees for 20 minutes.
- Brown the dry flour in frying pan until light golden brown. Mix flour well with 1 ½ cup water and add to broth. Once meatballs are out of the oven, place in a casserole dish and cover with broth. Simmer in 275 degree oven for 3 hours. Add meat from pork hocks and let simmer for another hour.

- In a skillet, heat 1 tbsp (15 mL) of the butter over medium-high heat. Add pancetta and cook, stirring, until crisp. Using a slotted spoon, transfer to slow cooker stoneware. Add pork, in batches, and cook, stirring, until browned, about 4 minutes per batch. Transfer to slow cooker stoneware.
- Reduce heat to medium. Add remaining tbsp (15 mL) of butter to pan. Add onions, carrots and celery and cook, stirring, until vegetables are softened, about 7 minutes. Add garlic, sea salt, peppercorns and rosemary and toss until coated. Add wine, bring to a boil and cook, stirring for 2 minutes, scraping up brown bits from bottom of pan. Stir in tomatoes with juice. Transfer to slow cooker stoneware. Cover and cook on Low for 8 hours or on High for 4 hours, until meat is very tender.
- In a small bowl, combine lemon juice, paprika and cayenne, stirring until spices dissolve. Add to slow cooker and stir well. Cover and cook on High for 10 minutes, until flavors meld.
