This salad can be tossed together before serving, but another delightful option is to spread the ingredients out on wooden cutting boards and let guests compose their own salads right at the table.

6 cups mixed baby greens
6 radishes, thinly sliced
1 small zucchini, very thinly sliced
1 small summer squash, very thinly sliced
2 cups green beans, trimmed
2 carrots, thinly sliced
4 links of turkey or other low-fat sausage
Four 3/4-inch-thick slices of country sourdough bread (optional)
4 tablespoons Buttermilk Dressing

Steps:

  • Prepare a stove-top griddle or an outdoor grill.
  • In a large bowl, combine all of the vegetables and set aside.
  • Grill the sausage until golden brown, about 5 to 7 minutes. Transfer to a cutting board and cut into 1/4-inch pieces. Grill the bread until golden, about 2 minutes.
  • Toss the sausage into the salad bowl, drizzle the Buttermilk Dressing over, and toss to incorporate. Place a slice of grilled bread on each of 4 dinner plates and arrange the salad over each piece.

1 1/4 pounds lean Italian turkey sausage
2 tablespoons extra-virgin olive oil
3 assorted bell peppers, thinly sliced
1 bulb fennel, trimmed and chopped
1 large onion, cut into wedges
Kosher salt
3 cloves garlic, minced
1 teaspoon chopped fresh rosemary
1/2 teaspoon red pepper flakes
1/2 teaspoon fennel seeds (optional)
1 15-ounce can no-salt-added diced tomatoes
12 basil leaves, chopped, plus more for topping

Steps:

  • Preheat the broiler. Pierce the sausages all over with a fork, arrange on a baking sheet and broil, turning halfway through, until golden brown, about 8 minutes (they will not be fully cooked). Transfer to a cutting board and cut in half on the diagonal.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the bell peppers, fennel and onion and cook, stirring, until they soften slightly, 3 minutes. Add 1/2 teaspoon salt, the garlic, rosemary, red pepper flakes and fennel seeds. Cook, stirring, 1 more minute.
  • Stir in 1/2 cup water, the tomatoes and basil. Reduce the heat to medium; cover and cook until the vegetables are tender, 5 minutes. Uncover; add the sausages and cook through, 3 to 4 minutes. (Add a splash of water if the sauce gets too thick.) Top with more basil.

1 pound purchased pizza dough
1 tablespoon yellow cornmeal
1 (14 ounce) package Hillshire Farm® Smoked Sausage
½ cup marinara sauce
8 ounces burrata cheese, cut into 3/4-inch pieces
4 slices bacon, crisp-cooked and crumbled
2 cloves garlic, minced
2 tablespoons chopped fresh parsley
½ teaspoon crushed red pepper

Steps:

  • Divide dough in half. On a lightly floured surface, roll out each half into an 11x7-inch oval. Sprinkle cornmeal on a large baking sheet. Place dough ovals on baking sheet; set aside.
  • Grill sausage on the rack of a covered gas or charcoal grill directly over medium heat for 8 minutes or until browned, turning once halfway through grilling. Bias-slice sausage into 1/4- to 1/2-inch thick pieces; set aside.
  • Grill pizza crusts on the grill rack directly over medium heat for 2 to 3 minutes or until bottoms are lightly charred. Transfer crusts back to the baking sheet, charred side up. Spread marinara sauce over crust and top with grilled sausage, cheese, bacon, and garlic.
  • Return pizzas to the grill rack. Cover and grill about 4 minutes more or until bottoms of crusts are crisp and lightly charred.
  • Transfer pizzas to a cutting board. Sprinkle with fresh parsley and crushed red pepper. Serve immediately.
