BAKED FARFALLE WITH ESCAROLE AND ZUCCHINI



Baked Farfalle With Escarole and Zucchini image

1 pound farfalle
2 tablespoons extra-virigin olive oil, plus more for brushing
4 cloves garlic, sliced
Pinch of red pepper flakes
1 28-ounce can plum tomatoes
1 15-ounce can plum tomatoes
4 large sprigs basil, plus 1 cup chopped fresh basil
1 cup chopped fresh parsley
1 1/2 cups chopped escarole, sauteed
1 1/2 cups sliced zucchini, sauteed
3 cups shredded Italian fontina cheese
1 cup freshly grated parmesan cheese

Steps:

  • Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil. Cook the farfalle until very al dente, 2 to 3 minutes less than the label directs; drain.
  • Meanwhile, make the sauce: Heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook until the garlic is golden. Crush the plum tomatoes into the skillet with your hands; rinse out each can with 1/2 cup water and add the water to the skillet. Add the basil sprigs; simmer, uncovered, until the sauce is thickened, 15 minutes. Discard the basil; season the sauce with salt. (Alternatively, heat 4 cups prepared tomato sauce.)
  • Stir the chopped basil and parsley into the sauce, then add the escarole and zucchini.
  • Brush a 3-to-4-quart baking dish with olive oil. Toss the cooked pasta with the sauce and half of each cheese. Spread in the prepared baking dish. Sprinkle the remaining cheese over the pasta. Bake, uncovered, until browned, about 15 minutes. Let rest 15 minutes before serving.

5 small zucchini, julienned
2 onions, minced
1 clove garlic, minced
⅔ cup heavy whipping cream
1 (16 ounce) package farfalle pasta
2 tablespoons grated Parmesan cheese
salt to taste
freshly ground black pepper
2 tablespoons grated Parmesan cheese

Steps:

  • Heat oil in large skillet over medium high heat. Add zucchini, and saute quickly until golden. Remove and set aside.
  • Add onion and garlic to the pan, and saute until golden. Stir in cream; increase heat, and boil until sauce is reduced by one third.
  • Meanwhile, cook the pasta according to package directions. Drain.
  • Add noodles, zucchini, 1/2 cup cheese, and salt and pepper to the cream sauce. Toss thoroughly until heated through. Serve immediately with additional grated parmesan cheese.

How to make pasta with zucchini (courgette) and Gorgonzola cheese

400 g Fusilli
2 Zucchini (medium sized)
200 g Gorgonzola (7 oz - or more or less depending on how much you like it!)
½ cube Beef bouillon cube (or ½ a vegetable bouillon cube)
80 -100 ml Cream (approximately ⅓ cup )
40 g Walnuts (1 ½oz )
Parmesan cheese (to taste )

Steps:

  • Cook at the pasta as per the packet instructions.
  • While the pasta is cooking, slice the zucchini thinly and saute it in olive oil until it's cooked through and browned a little.
  • Take the pan off the heat. Add the cream, the bouillion cube and the Gorgonzola. Stir until the cheese is melted. If you have very soft gorgonzola dolce, you can mix it in a bowl with the cream until it becomes a uniform mixture, and then add it to the zucchini .
  • Chop the walnuts and add them in to the sauce.
  • Drain the pasta then add to the sauce.
  • Grate Parmesan cheese over the finished dish.
  • Sprinkle with cracked black pepper

2 tablespoons unsalted butter
3 tablespoons all-purpose flour
5 ounces creamy gorgonzola, cubed
2 1/2 cups whole milk
salt & freshly ground black pepper, to taste
crushed red pepper flakes, to taste (optional)
3 tablespoons extra virgin olive oil
1 lb assorted mushroom, chopped
3/4 frozen peas, thawed
16 ounces farfalle pasta (Barilla)
2 tablespoons chopped fresh chives

Steps:

  • Melt butter in a 2 qt saucepan over medium heat.
  • When the butter starts to sizzle, add the flour and whisk until smooth, about 2 minutes.
  • Gradually whisk in the milk.
  • Bring the sauce to a simmer.
  • Simmer for 2 minutes, whisking constantly.
  • Remove from the heat.
  • Add the Gorgonzola and stir until melted.
  • Season the sauce with salt, pepper and crushed red pepper(if using),to taste.
  • Set aside and cover to keep warm.
  • Heat the oil in a heavy large skillet over medium heat.
  • Add the mushrooms and sauté until tender and golden, about 12 minutes.
  • Stir in the peas.
  • Season to taste with salt and pepper.
  • Cook farfalle according to pkg directions and drain.
  • Transfer the pasta to a large bowl.
  • Add the Gorgonzola sauce and mushroom mixture, and toss to coat.
  • Season the pasta with salt and pepper, if needed and top with chopped chives.

1 cup whipping cream
8 ounces farfalle (bow-tie) pasta
1/3 cup walnuts, toasted, chopped

Steps:

  • Combine 1 cup cheese and cream in heavy small saucepan. Cover and bring to boil over medium heat. Uncover; whisk until cheese melts and sauce is smooth, about 2 minutes. Set sauce aside.
  • Cook pasta in pot of boiling salted water until just tender but still firm to bite. Drain pasta; return to same pot. Add Gorgonzola sauce. Toss over medium heat until heated through and sauce coats pasta thickly, about 3 minutes. Season pasta with salt and pepper. Transfer to serving bowl.
