SPICY SAUSAGE AND KALE SOUP



Spicy Sausage and Kale Soup image

This soup is probably my mom's favorite thing that I've ever made. The funny thing is, it's inspired by her guilty pleasure: the Olive Garden. I can see why she likes it, though-it's hearty, with bright green kale, homemade sausage, and a little Parmesan to take the savory flavor to a whole new dimension.

1 1/3 tablespoons fennel seeds
1 pound pork shoulder, boneless, cubed
1 tablespoon Espelette pepper
1 teaspoon red pepper flakes
Salt, to taste
2 tablespoons olive oil
5 cloves garlic
1 onion, diced
1 onion, diced

7 cups chicken stock
3 Yukon Gold potatoes, peeled
1 tablespoon sherry vinegar
1 bunch kale, stems removed, roughly chopped
olive oil
Parmesan

Steps:

  • For the sausage: Heat a dry skillet and toast the fennel seeds until fragrant. Add toasted fennel to the pork along with the Espelette pepper, red chili flakes and a big pinch of salt. Toss and set aside. Over high heat, coat the bottom of a soup pot or Dutch oven with olive oil. Position the meat grinder over the pot. Add 5 whole garlic cloves and the onions to the meat mixture. Turn the grinder on high and run the sausage mixture through the grinder. Use the plunger if needed to push the meat through and into the heated soup pot to brown.
  • For the soup: When the sausage has begun to brown and caramelize, add the onions and garlic, roughly chopped, to the pot. Stir the sausage mixture so it doesn't stick to the bottom; then add olive oil and cook 2-3 more minutes. Add the stock and a pinch of salt, scrape the bottom of the pot with a wooden spoon, and cover. Bring to a rolling boil over high heat.
  • As the soup comes to a boil, thinly slice the potatoes on a mandoline. Stir them into the soup, making sure the slices come apart. Add plenty of freshly ground black pepper and another pinch of salt. Cover, bring back to a rolling boil, and continue to let boil for 20 minutes.
  • Finish the soup: Reduce heat to low and remove lid. The potatoes should be broken down and the soup thickened. Adjust the seasoning with salt and pepper; then stir in the vinegar. Pull the fibrous stem out of the kale leaves and discard; roughly chop the leaves and add to the soup to wilt. Ladle into bowls and serve with more pepper, salt, a drizzle of olive oil, and a fresh grating of Parmesan.

1 package (12 ounces) bucatini pasta or fettuccine
2 teaspoons plus 3 tablespoons olive oil, divided
1 pound regular or spicy bulk Italian sausage
5 garlic cloves, thinly sliced
8 cups chopped fresh kale (about 5 ounces)
3/4 teaspoon salt
1/4 teaspoon pepper
Shredded Romano cheese

Steps:

  • Cook pasta according to package directions, decreasing time by 3 minutes. Drain, reserving 2 cups pasta water. Toss pasta with 2 teaspoons oil., In a 6-qt. stockpot, cook sausage over medium heat until no longer pink, 5-7 minutes, breaking sausage into large crumbles. Add garlic and remaining oil; cook and stir 2 minutes. Stir in kale, salt and pepper; cook, covered, over medium-low heat until kale is tender, about 10 minutes, stirring occasionally., Add pasta and reserved pasta water; bring to a boil. Reduce heat; simmer, uncovered, until pasta is al dente and liquid is absorbed, about 3 minutes, tossing to combine. Sprinkle with cheese.

Sweet and Spicy Sausage and Farfalle is a recipe that I grew up eating, and fell in love with again as an adult. It is one of the easiest recipes you can ask for, and the speedy preparation time makes it a perfect weeknight dinner option. When I was growing up I couldn't understand why we had sweet and spicy sausage and farfalle for dinner all the time. As an adult, I get it! This is the little recipe that can feed your family of 4-5 with just 20 minutes to total preparation time. Plus, the ingredients are all super cheap. It makes perfect sense that my Mom made this recipe to feed our family of five frequently.

2 Sweet Italian Sausages (1/2 lb total)
1/4 cup chopped White Onion
2 cloves Garlic
1 14.5 oz can of Crushed Tomatoes
1/2 cup Heavy Cream
1 teaspoon Red Pepper Flakes
2 cups Farfalle
2 cups Baby Spinach
2 tablespoons Parmesan
1 tablespoon Olive Oil

Steps:

  • Finely chop the onion and garlic. Slice the ends off the sausage, and push the meat out of the casing, and loosely crumble it up.
  • Bring a pot of salted water to a boil. Once the water has come to a boil, add the pasta. Cook for 7-8 minutes, until al dente. Then drain the pasta and set aside.
  • As soon as you put the water on the boil, start to prepare the rest of this dish. Heat the olive oil in a skillet over medium high heat. Add the onions and sauté. After 2 minutes, add the sausage and red pepper flakes. For a mild spice add 1/2 teaspoon of red pepper flakes, or add more for extra spice.
  • Brown the sausage, while using a wooden spoon to break it into small pieces.
  • Once the sausage has browned, add the garlic, crushed tomatoes, and cream. Stir together. Let simmer for 2-3 minutes.
  • Add the drained pasta to the sauce, along with the spinach (I tear it up as I add it in). Let the pasta and spinach simmer in the sauce for 2 minutes over medium heat. Serve with a sprinkle of Parmesan.

Kale is what makes this pasta a standout. This leafy green is similar to chard and has an assertive flavor that really stands up to the spicy sausages. This was the only way I would eat kale when I was young.

3 tablespoons olive oil
1 pound spicy Italian sausage, casings removed
1 medium onion, chopped
2 garlic cloves, minced
1/4 pound cremini mushrooms, sliced
1 (28-ounce) can peeled tomatoes, with juice
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon crushed red pepper flakes
1 bunch of kale, stems removed, rinsed, and chopped (about 4 cups)
1/3 cup heavy cream
1 pound farfalle pasta
Grated Pecorino Romano cheese, for garnish

Steps:

  • Bring a large pot of salted water to a boil over high heat.
  • In a large, heavy soup pot, heat the olive oil over medium heat. Add the sausage and cook until golden brown, using a wooden spoon to break the sausage into bite-size pieces. With a slotted spoon, remove the sausage from the pot and set aside. To the same pot, add the onion and garlic and cook over medium heat for 3 minutes. Add the mushrooms and cook until the onion and mushrooms start to brown, about 5 minutes. Add the canned tomatoes with juice. Use a wooden spoon to stir the brown bits off the bottom of the pot and break up the tomatoes. Add the salt, pepper, red pepper flakes, and the sausage.
  • Meanwhile, blanch the kale in the boiling water for 5 minutes. Use a skimmer to remove the kale from the boiling water and add it directly to the sausage mixture. Reduce the heat and simmer the sauce, covered, for 10 minutes. Add the cream and stir to combine. Remove the mixture from the heat.
  • While the sauce is simmering, add the pasta to the boiling water. Cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain the pasta, add to the sauce, and toss to combine. Serve with the Pecorino Romano cheese sprinkled on top.
