MARVELLOUS MINI MEATLOAVES (WITH OPTIONS!) OAMC
A perfect addition to your OAMC collection because you can start with the base recipe and then make 1 or all of the variations so that you don't feel like you are eating the same thing for every dinner. This recipe is great for singles too because the mini loaves are individual servings and you can take out as many or as few as you need.

Steps:
- Preheat oven to 375 degrees.
- Mix meat, stuffing mix, or bread cubes,water, and seasoning (choose one: italian seasoning, OR chili powder, OR oregano OR garlic powder) until well blended.
- Press evenly into 12 greased muffin tins.
- Make a small indentation in the middle of each with the back of a spoon.
- Fill the indentation with your choice of filling. (Choose one: pasta sauce OR salsa OR roasted red peppers OR BBQ sauce following the version of your choice.).
- Bake for 30 minutes or until loaves are cooked through. Top with the cheese specified in the recipe of your choice and bake 5 minutes or until cheese is melted.
- Let stand 10 minutes before removing from baking pan.
- For OAMC: Remove from baking pan and let cool. Flash freeze on a cookie sheet until frim. Transfer to a labeled ziploc bag. To serve: Defrost overnight, then reheat in oven or microwave until heated through.

GRAHAM CRACKER MEATLOAF (OAMC)
This recipe was posted on the internet when "The Big Cook" cookbook was coming out. We tried it and loved it. It freezes well, making it perfect for a OAMC session or bulk cooking. Recipe is written for 1 loaf, multiply to make multiples. I usually make at least 2 when I include it in my meatloaf session.

- Mix all ingredients until thoroughly combined.
- Place in loaf pan OR 8x8 pan.
- Drizzle with ketchup or BBQ sauce if desired.
- Bake at 350 degrees for 1 hour.
- For freezing, I bake first then let cool. Wrap in foil and place in freezer bags for freezer.

SALSA MEATLOAF (OAMC)
This meatloaf tastes even better reheated the next day! - Mix ingredients for loaf together and place in a loaf pan.
- Bake at 350 degrees for 45 minutes or until almost done.
- Top loaf with sauce and bake 10-15 minutes longer.
- ** for OAMC: complete steps 1 & 2 but bake until done. Defrost overnight, top with sauce and then bake at 350 degrees for 20 minutes or until sauce bubbles. OR bake from frozen for 1 hour at 350 degrees, top with sauce and then bake for 30 minutes or longer until sauce bubbles.**

HOMESTYLE SAUSAGE/GROUND BEEF MEATLOAF
This is the meatloaf my mom made and it was always one of her most requested recipes. I'm not sure if it's one of her recipes or not, since she was always clipping recipes from magazines and newpapers. It's still a big hit with family and friends and remains one of my most requested recipes. My hubby is a hunter, so I do make it with ground vension and vension sausage and it's wonderful. You can also make meatballs with the meat mixture and brown them in a skillet, pop them in a crockpot with spaghetti sauce and it's great served over pasta. The meatballs also make a wonderful appetizer served with your favorite sweet & sour or BBQ sauce. Any leftover meatloaf or meatballs make a mean sandwich the next day as well. I usually make two recipes and bake both loaves on a large baking sheet so I have enough for sandwiches the next day, LOL.

Steps:
- In a small bowl, combine ketchup, brown sugar and mustard; set aside.
- In a large bowl, combine 1/3 cup of the ketchup mixture and the remaining ingredients; mix well.
- Spray a foil lined, shallow baking pan with non-stick spray. Shape mixture into loaf and bake at 350 for 1 hour; remove from oven and pour remaining sauce over loaf; bake for 10 more minutes and remove.
- Let stand for 5 minutes before slicing.

SAMMY'S BEEF AND SAUSAGE MEATLOAF
I got the idea of using sausage in this from my hubby, and I built it from there. This makes an excelent, juicy, and very tasty meat loaf. Note: I mince my onions because I like the flavor, I just don't want to know they are there, but obviously you can chop them to your liking.

- Preheat oven to 350*.
- In a large bowl, combine beef, sausage, egg, crumbs, onion, water, garlic powder and seasoned salt.
- Mix together until all the ingredients are incorporated.
- Lightly spray baking dish (I use a glass, 8X10).
- Move meat mixture to baking dish, and press to the sides.
- Squirt ketchup across the top, or spread with a brush.
- Transfer to oven, and bake for 1.25 hours.
- Let stand for 5-10 minutes.
SAUSAGE MEATLOAF OAMC
I grew up on this meatloaf, and I love it. It's always a hit with company. My supposedly "vegetarian" friend eats it up every time I make it. Serve with mashed potatoes.

Steps:
- Combine ground beef, sausage, celery, onion, saltines, and eggs together and form into 2 loaves.
- Bake covered at 350 degress Fahrenheit in stoneware for 45 to 75 minutes(depending on the shape of your loaves and desired doneness). Drain grease.
- For the sauce, combine tomato sauce, brown sugar, mustard, and Worcestershire sauce.
- Pour sauce over loaves.
- Cover meatloaf and cook 15 minutes.
- Remove cover and cook 10 to 15 minutes.
- To freeze, just freeze the meat mixture in meal size portions. Thaw it in the refrigerator for a day before cooking. You could make and freeze the sauce too, but I usually mix it up when I cook the meat.
