SLOW COOKER CASHEW BEEF AND BROCCOLI STIR FRY
Delicious melt in your mouth beef that cooks right in your slow cooker with veggies and cashews hidden throughout. One of the best meals that you will make in your slow cooker and so much better than takeout!

Steps:
- In a mixing bowl, whisk together the beef consume, soy sauce, dark brown sugar, sesame oil, and garlic.
- Lay the beef strips in the crockpot and pour the sauce over, tossing the strips to coat.
- Turn the crockpot on low and cook for about 6 hours. You don't want to cook the beef too long or it will start to shred.
- When it is just about done, take 4 Tbsp of the sauce and whisk it in a small bowl with the cornstarch. Slowly stir this into the crockpot. Add the broccoli, cashews and carrots and stir. Cook an additional 30 minutes so that the sauce can thicken and frozen broccoli and carrots can cook. You don't want to add the broccoli until the very end or it will be mushy. If you are using fresh broccoli, steam before or add about an hour before it is done cooking to heat through.
- Serve over rice and enjoy!

Steps:
- Season steak with salt and pepper; set aside.
- Cut up the vegetables and place in the slow cooker.
- Place steak over veggies.
- Pour sauce over meat and vegetables.
- Cover and cook on low for 6 hours or on high for 4 1/4 hours, or until meat is done.
- Remove beef from slow cooker and cut into thin strips; place back in the slow cooker.
- Serve over brown rice or quinoa.

- Add beef, bell peppers, onion, and carrots to the slow cooker.
- In a small bowl, mix together SAUCE ingredients. Pour sauce into the slow cooker. Stir to mix well.
- Cook HIGH 2-3 hours or LOW 4-6.
- Add broccoli and cook an additional 30 minutes.
- Turn on the IP and select Sauté. Once hot add oil to the pot. Add the beef and sear until browned, 2-3 minutes on each side. Remove beef & set aside.
- Add bell pepper, onion, carrots & cook for a 5-7 minutes, or until soft, stirring frequently. Add garlic and cook an additional minute.
- Add beef back to the pot. Stir in ginger, salt, pepper, water, coconut aminos, rice vinegar, and sesame oil.
- Close lid and seal valve. Set high pressure and cook for 9 minutes. Quick release pressure.
- Turn on the IP and select sauté. Mix together arrowroot starch flour & water. Stir mixture into the Instant Pot along with the broccoli. Cook 5-10 minutes or until broccoli is tender and sauce has thickened to your liking.

BEEF VEGETABLE STIR FRY RECIPE BY TASTY

- To marinate beef: Add corn flour and soy sauce to the beef strips. Toss together to coat and marinate well for 5 minutes.
- To prepare sauce: Stir cornstarch and beef stock together until cornstarch is dissolved, then add soy sauce and brown sugar and mix well until combined.
- In a large skillet, heat 2 tbsp of oil and add the ginger, garlic, sliced carrots, broccoli florets and sliced bell peppers into the skillet. Saute and set aside.
- Add beef strips in a single layer to the same skillet and cook for 5 minutes, turning constantly to easily brown.
- Add the sauce and bring to a boil. Cook for 2 minutes.
- Once the sauce has thickened, toss with sauteed vegetables and garnish with roasted sesame seeds.
