Steps:
- 1. Reserve 1/2 cup drained tomatoes; set aside. Blend remaining tomatoes and reserved liquid with beans in medium bowl.
- 2. Spread bean mixture in 8x8-inch glass baking dish or round casserole dish. Top with guacamole.
- 3. Blend together sour cream and seasoning mix in small bowl. Spread over guacamole. Top evenly with layers of cheese, olives, green onions and reserved tomatoes. Chill 2 hours prior to serving. Serve with tortilla chips, if desired.

- Peel, pit and mash avocados in a bowl with lemon juice, salt and pepper (or put in blender). If you're in a hurry and don't have any ripe avocados, you can also substitute 2 containers of mildly seasoned guacamole dip from the refrigerated section at the grocery store.
- In another bowl, combine yogurt and taco seasoning mix.
- To assemble: Spread bean dip/refried beans on a LARGE shallow serving platter. Spread avocado mixture over bean dip. Spread yogurt-taco mixture over the avocado mixture. Sprinkle with the chopped green onions, then the tomatoes, and finally the olives. Cover with the grated cheddar cheese.

- In large bowl, combine tomatoes, green onion, garlic, jalapeno, 1 tablespoon lime juice, and 1/4 teaspoon salt. In 8-inch skillet, heat oil on medium. Add onion; cook 3 to 4 minutes or until golden, stirring. Add chili powder; cook 1 minute. Remove from heat; add beans and 1/8 teaspoon each salt and black pepper. Mash until almost smooth.
- In bowl, with fork, mash avocado, cilantro, remaining lime juice, and 1/8 teaspoon salt until almost smooth.

FANTASTIC SEVEN LAYER DIP
This recipe is from the Ortega web site, I have made this many times in the past for get-togethers and BBQ' and everyone loves this dip! If you are a garlic lover like myself then add in some fresh minced garlic to the sour cream, but it is just as great without the garlic --- this dip can be prepared in advance and refigerated until ready to serve --- my recipe#76616 works well for this recipe!

- Begin by throwing the refried beans into a small pan over medium-low heat. Add several dashes of Tabasco sauce and a small can of (undrained) diced green chilies. Stir well. Stir together and allow flavors to meld and warm through, about 5-7 minutes. Remove from heat and set aside. In a medium size bowl, mix together all of the pico de gallo ingredients (tomatoes, jalapeno, red onion, lime, salt and cilantro) and set aside.
