2 (6 1/4 ounce) boxes long grain and wild rice blend (I use Uncle Ben's)
1 onion, chopped
2 cups mushrooms, sliced
1 bell pepper, chopped
1 garlic clove, minced
1/2 cup butter, divided
4 cups chicken broth
1/2 cup parmesan cheese
1 bell pepper, thinly sliced
1 cup heavy cream
salt and pepper, to taste

Steps:

Cook onion, chopped bell pepper, mushrooms, and garlic in 1/4 cup of butter until the onion is transparent. Add rice and herb packets and cook, stirring, until the rice begins to turn golden.
Add the chicken broth and simmer gently in a covered pan until the rice is barely tender and the liquid is mostly absorbed.
Preheat oven to 400 degrees.
Butter a deep casserole dish. Lightly transfer half the rice mixture to the dish with a fork. Top with half the pepper rings and half the cheese. Repeat layers. Dot with remaining butter and pour cream over the top.
Cover and bake at 400 degrees for 20 minutes.

This is Divine! My mom made this for us growing up and it's a wonderful "fancy" rice dish that's definitely up to company standards and doesn't take up stove top room. One of my favorite recipes! You can also make it the "stove-top" way by sauteeing the onions until soft, toasting the spices and rice for a bit with the onions and then bringing everything to a boil with the chicken broth and simmering for 15 minutes.

1 onion
1/4-1/2 cup butter
1 1/2 cups rice
1/2 teaspoon allspice
1/2 teaspoon turmeric
1/2 teaspoon curry
1/2 teaspoon salt
1/2 teaspoon ground pepper
3 1/2 cups chicken broth

Steps:

Saute onion in butter until softened.
While onions are sauteeing, bring chicken broth to boil in another pot.
Add rice and spices to onion and brown slightly.
Add boiling chicken broth.
Pour into 9x13 glass dish and cover with plastic wrap.
Microwave for 20 minutes at 80% power.

1 cup cold cooked rice
14 ounces crushed pineapple, drained
1/4 cup white sugar
1 cup whipped cream
1/4 cup mayonnaise
8 -12 maraschino cherries

Steps:

Combine rice, pineapple and sugar. Stir.
Whip cream until stiff. Beat in mayonnaise. Fold into rice mix.
Arrange salad on lettuce. Top with cherry.

This is a recipe I have made for ages...I got it out of a recipe book from the old Hudsons Department Store Recipe Book called "With Warmest Regards". A wonderful recipe to serve a lot of people for a special occasion.

4 tablespoons butter, melted
1 (10 3/4 ounce) can condensed French onion soup
1 (14 ounce) can beef broth
1 (7 ounce) can mushroom stems and pieces, drained
1 (6 ounce) can diced water chestnuts
1 cup brown rice
1/2 cup wild rice, rinsed
garlic salt

Steps:

1. Preheat oven to 375 degrees.
2. In a large mixing bowl, combine all ingredients.
Transfer mixture to a 2 Quart casserole dish.
Cover and bake for about 1 hour, until all liquid has been absorbed and rice is tender. Very easty to double as I do it all the time.
