LEMON MERINGUE COOKIES

All the flavors of a classic diner dessert come together in these bite-size cookies: a buttery sugar cookie crust, a tangy and bright lemon curd filling and a chewy meringue topping.

1/4 cup granulated sugar
1 large egg plus 1 yolk
1/3 cup lemon juice
3 tablespoons unsalted butter
Nonstick cooking spray, for the mini muffin tin
1 3/4 cups all-purpose flour, plus more for dusting (see Cook's Note)
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
2/3 cup granulated sugar
10 tablespoons (1 1/4 sticks) unsalted butter, at room temperature
1 teaspoon pure vanilla extract
1 large egg, at room temperature
1 large egg white, at room temperature
1/8 teaspoon cream of tartar
1/4 cup superfine sugar

Steps:

  • For the lemon curd: Whisk together the granulated sugar, whole egg and egg yolk in a medium bowl.
  • Heat the lemon juice in a small pot over medium heat until just simmering. Temper the eggs by slowly pouring the lemon juice into the egg mixture while whisking constantly. Pour everything back into the pot and cook over medium heat, stirring constantly, until the mixture has thickened to the consistency of a milkshake, 2 to 3 minutes. Remove from the heat and stir in the butter until melted and incorporated.
  • Strain the curd through a fine-mesh strainer into a bowl, place a piece of plastic wrap directly on the surface of the curd and refrigerate until completely chilled and very thick, at least 4 hours and up to overnight.
  • For the cookies: Preheat the oven to 350 degrees F. Lightly spray a 24-cup mini muffin tin with nonstick cooking spray.
  • Whisk together the flour, baking powder and salt in a medium bowl. Set aside.
  • Add the granulated sugar and butter to the bowl of a stand mixer fitted with a paddle attachment. Beat on medium-high speed until fluffy, about 5 minutes. Add the vanilla and egg and beat until combined. With the mixer on low, gradually add the flour mixture and beat until just combined.
  • Scoop 1 tablespoon of cookie dough and, using flour to keep it from sticking to your hands, roll it into a ball and place it into one of the cups of the mini muffin tin. Use your fingers to press it into the cup and up the sides. Repeat with the remaining dough.
  • Bake until the cookies are light golden along the edges, about 30 minutes. Using the rounded end of the handle of a wooden spoon, gently press into the divot in each cookie to make a deeper cavity. Let the cookies cool slightly in the tin, then use an offset spatula or butter knife to help transfer them to a wire rack to cool completely.
  • For the meringue kisses: Preheat the oven to 300 degrees F.
  • Put the egg white in the bowl of a stand mixer fitted with the whisk attachment and beat on high until foamy. Add the cream of tartar and continue to beat until soft peaks begin to form. Slowly stream in the superfine sugar and beat until glossy stiff peaks form.
  • Transfer the mixture to a disposable pastry bag with a 1/2-inch round tip. Pipe 24 small kisses onto a parchment-lined baking sheet. Bake until the meringues are beginning to dry, about 20 minutes, then turn off the oven and prop open the door with a spoon handle. Leave the meringue kisses in the oven until very dry, another 30 to 45 minutes. Let cool completely.
  • To assemble the cookies, fill the cavity of each cookie with lemon curd. Top each with a meringue kiss.

VANILLA MERINGUE COOKIES

1/2 teaspoon vanilla extract
1/8 teaspoon cream of tartar
3/4 cup granulated sugar

Steps:

  • Preheat the oven to 200 degrees F; line 2 baking sheets with parchment paper.
  • In a stand mixer fitted with a whisk attachment, add the egg whites, vanilla and cream of tartar. Beat until the mixture is frothy and soft peaks form. Gradually add the sugar 1 tablespoon at a time, waiting about 15 seconds between each addition. Once all of the sugar has been added, beat for an additional 5 minutes. The egg whites should be glossy and stiff but not dry.
  • Spoon the mixture into a large pastry bag fitted with a large star tip. Pipe 2-inch cookies onto the lined baking sheets, leaving 1 inch between each cookie.
  • Bake for 45 minutes, then turn off the oven and leave the cookies in the oven for an additional 30 minutes. Remove and cool completely before storing in an airtight container.

5 large egg whites
1/8 teaspoon cream of tartar
3/4 cup granulated sugar (150 grams)
1 1/2 cups confectioners' sugar (180 grams)

Steps:

  • Preheat the oven to 200°F. Line 2 baking sheets with parchment paper.
  • Put the egg whites, cream of tartar, and 1/4 cup of the granulated sugar in the bowl of a standing mixer with the whisk and turn the mixer on to medium. Whip until the whites are foamy and then slightly increase the speed. Continue whipping until the whites have tripled in volume and are fluffy but still soft. The whites should just be starting to hold the trail of the whisk along the sides of the bowl.
  • With the motor running, very slowly sprinkle another 1/4 cup of the granulated sugar onto the whites between the bowl and the edge of the whisk. Slightly increase the mixer speed and whip until the whites start to turn glossy but are still soft. Slowly sprinkle in the remaining 1/4 cup granulated sugar and increase the heat to medium-high. Whip for 2 to 3 minutes longer, until very stiff and glossy but not dry. Transfer the whites to a very large mixing bowl.
  • Put the confectioners' sugar into a fine-mesh strainer. Sift about one quarter of it onto the whipped whites. Using the largest rubber spatula you have, gently fold the sugar into the meringue, drawing the spatula through the meringue and pulling it up and over itself from the sides of the bowl in. Move slowly and precisely so you don't knock the air out of the whites. Continue sifting and folding in the sugar in 2 or 3 more additions. Once the whites are smooth with no lumps of confectioners' sugar, they are ready.
  • The meringue can be transferred to a pastry bag with a star tip or into a resealable plastic food bag with the corner snipped and used to pipe stars, circles, or any shape you like onto the lined baking sheets. You can make the cookies as small as dimes to sprinkle over ice cream or large enough to sandwich ice cream between them. Or use 2 spoons to mound the meringue into pillows.
  • Bake for 1 hour, rotating and switching the pans halfway through. Baking time may vary depending on the size of the meringues; the cookies should feel dry, light, and hollow and have no give when you press on them. If they still feel soft, bake for 15 minutes longer and test again. Turn the oven off and let the meringues cool completely in the oven. Store the cooled meringues in an airtight container for up to 2 weeks.

VARIATION: NUT MERINGUE

Steps:

  • Before making the meringue, whirl the almonds in a food processor fitted with the metal blade until finely ground. Add the cornstarch and whirl again. Make Meringue. Fold ground almond mixture into finished meringue by hand.
  • Here, cornstarch insulates the meringue from the fat in the nuts, which would otherwise cause it to break down.
  • Easy way to pipe out disks of a particular size: trace a plate or other object of appropriate size onto parchment paper. The turn the paper over and use the circles as your guide. Start piping in the center and form a tight spiral out to the edge.

2/3 cup superfine granulated sugar
1 teaspoon vanilla extract
1 cup semisweet chocolate chips or finely chopped semisweet chocolate
1 cup finely chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F and line 2 baking sheets with parchment paper. Set aside.
  • In the bowl of an electric mixer, beat egg whites until foamy. Add the cream of tartar and beat until fluffy but not at all dry. (Be careful not to over beat.) Add the sugar gradually, about 3 tablespoons at a time. When 1/2 of the sugar has been added, add the vanilla extract. Continue beating and adding remaining sugar in batches, until all of the sugar is dissolved and the meringue is very shiny and tight. Gently fold in the chocolate chips and chopped nuts. Working one teaspoon at a time, push a teaspoonful of meringue from the tip of 1 teaspoon with the back of another teaspoon onto the lined baking sheets, leaving 1-inch of space between cookies. Place baking sheets in the preheated oven and turn the oven off. Leave the cookies (undisturbed) in the oven for at least 2 hours and up to overnight, or until cookies are crisp and dry.
