CLASSIC MEATLOAF RECIPE - THE BEST!
Enjoy this classic meatloaf recipe, with a tangy tomato glaze! Perfect for sandwiches the next day, too!

Steps:
- Preheat oven to 350ºF. Spray a 9" by 5" loaf pan with nonstick cooking spray.
- In a large bowl, lightly beat two eggs.
- Place onion, celery, carrot, and garlic in a food processor and pulse until finely chopped. Add to bowl with eggs.
- Add ground meat, bread crumbs, parsley, milk, 1/4 cup ketchup, Worcestershire, salt, and pepper. Mix to combine. Go ahead and use your hands. Don't over mix; ingredients should be just combined. Press lightly into prepared pan.
- In a small bowl, combine 1/4 cup ketchup, brown sugar, and red wine vinegar. Brush meatloaf with half of ketchup mixture and bake for 35 minutes.
- Brush with remaining ketchup mixture; return to the oven and bake for another 55 minutes or until middle of the loaf reaches at least 165ºF when checked with an instant-read thermometer. Internal temperature will continue to rise as the meatloaf rests.
- Let meatloaf rest 15 minutes before removing from pan or slicing.

I modified a recipe from Emeril's book "There's a Chef in my Kitchen" on a night when I had little time and less ingredients. The family loved it, so I thought I would share.

- Mix all ingredients for the meatloaf together, and press into an 8x8 baking pan.
- Mix together the glaze ingredients, and spread over the top of the meatloaf. Bake for 1 hour at 375 degrees.

Steps:
- Preheat oven to 350 degrees.
- Mix together beef, onion, garlic, egg substitute, and ketchup in a mixing bowl.
- Pinch bread into small pieces and add to meat mixture; add milk slowly, trying to achieve a sticky but firm loaf consistency.
- You may need slightly less milk, or a little more, depending on the water and texture of your beef.
- Spray a loaf baking pan with non-stick spray; shape meat into loaf and place in pan.
- Bake at 350 degrees for 1 hour.
- Serve with gravy, or top with bbq or marinara sauce before baking.

TERIYAKI MEATLOAF

- Preheat the oven to 400 degrees F. Grease two 2-quart rectangular baking dishes with some sesame oil.
- In a small bowl, add the panko and milk and sprinkle with salt and pepper so all the panko has a chance at absorbing. In another bowl, add the meat, eggs, soy sauce, sesame seeds, mirin, fish sauce, 1 cup teriyaki sauce and 1 tablespoon sesame oil. Add the panko mixture and gently fold everything together. This is where a lot of folks mess up. DO NOT OVERMIX. Just combine gently. Split the meat mixture between the 2 prepared baking dishes, spreading evenly from edge to edge. Bake for 45 minutes.
- Top the meatloaves with the furikake and set aside to cool slightly. Meanwhile, add the butter to a small saucepan and heat until browned, about 2 minutes. Stir in the remaining 2 tablespoons teriyaki. Slice the meatloaves and top each slice with the teriyaki butter sauce.
TERESA'S "EVERYBODY LOVES IT" MEATLOAF
This recipe is pretty easy to put together and freezes REALLY well, if it lasts long enough to freeze that is. With just two adults in my house, we usually go through the first loaf the first night I make it. The second loaf is great to warm up for leftovers, or slice and make meatloaf sammies. Yum!

- Don't cut the recipe in half. You'll end up needing the second loaf. . . trust me. :). Soup mix is 1 package of dry soup mix, your choice of flavor. I like the onion soup mix myself.
- Combine cubed toast and milk or half and half; set aside to soak.
- Mix ground meat, soup mix, onion, basil, thyme, cayenne and parsley. Use listed amounts or to taste.
- Mix in bread and milk. The mix should be workable but not too tight.
- Beat eggs and add to meat mixture. Blend well.
- Add bread crumbs to consistency desired if needed.
- Divide mixture between two loaf pans.
- Make shallow impression down the center of the top of each loaf to keep the topping on.
- Topping: Mix brown sugar, tomato sauce, and Worcestershire sauce together well. Pour equal amounts of topping over top of each loaf.
- Bake 60 to 75 minutes at 350 degrees Fahrenheit.

SWEET AND TANGY MEATLOAF RECIPE

- Preheat oven to 350 degrees F.
- In a large bowl, combine ground beef, breadcrumbs, egg, garlic powder, Worcestershire sauce, ketchup, brown sugar and apricot preserves.
- Place in a greased 9x5 inch loaf pan.
- Cook for 40-50 minutes.
- In a separate bowl combine ketchup, brown sugar and apricot preserves. Remove meatloaf from oven after it has cooked, spread on glaze and cook for an additional 20 minutes.

- Preheat oven to 350°. In a large bowl, combine the first 7 ingredients. Add beef; mix lightly but thoroughly.
