1 1/2 lbs. boneless, skinless chicken breasts, cubed in 1/2-inch pieces
2 teaspoons paprika
1 teaspoon poultry seasoning
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 tablespoon fresh lemon juice

Steps:

  • Mix paprika, poultry seasoning, salt and pepper in a small bowl.
  • Sprinkle the seasoning over the cubed chicken and toss to get it coated on all sides.
  • Heat olive oil in a large saute pan over medium-high heat. Add chicken and saute for 5-6 minutes.
  • Stir and turn the chicken pieces over and cook for another 3-4 minutes, until cooked through.
  • Squeeze the fresh lemon juice over the chicken and serve!

1 cup all-purpose flour, plus 2 tablespoons
2 tablespoons dried marjoram
3 teaspoons sweet paprika
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
2 tablespoons olive oil
One 3- to 4-pound chicken, cut into 8 pieces
3 large onions, chopped (about 4 cups)
1 tablespoon sugar
4 cloves garlic, thinly sliced
2 red bell peppers, diced (about 2 cups)
One 4.56-ounce tube tomato paste (about 1/2 cup)
2 cups chicken broth
1 teaspoon crushed red pepper flakes
2 cups sour cream
1/2 cup chopped fresh dill

Steps:

  • Combine 1 cup of the flour, 1 tablespoon of the marjoram, 1 teaspoon of the paprika and some salt and black pepper in a low-sided dish. Stir until blended.
  • Heat a large Dutch oven over medium-high heat; add the butter and oil. Heat until the butter has melted and the oil is shiny.
  • Sprinkle the chicken all over with salt and black pepper. Next, dredge the chicken in the seasoned flour on all sides. Shake to remove excess flour before placing the chicken into the hot pot. Working in batches if necessary, sear the chicken on both sides until golden brown, about 4 minutes per side. Remove the chicken to a plate and set aside.
  • Add the onions to the pot and reduce the heat to medium. Sprinkle with the sugar and some salt and black pepper. Cook, stirring occasionally, until the onions have softened and turned golden, about 12 minutes. Add the garlic and bell peppers and cook for 1 minute more. Add the tomato paste, chicken broth, red pepper flakes and the remaining 1 tablespoon marjoram and 2 teaspoons sweet paprika; stir to combine.
  • Place the chicken back in the pot, nestling it in the sauce. Reduce the heat to low and simmer, covered, until the chicken is very tender and reaches an internal temperature of 165 degrees F, about 50 minutes.
  • Remove the chicken to a serving dish. Mix the sour cream with the remaining 2 tablespoons flour in a medium bowl. Stir the mixture into the sauce.
  • Pour the sauce over the chicken and sprinkle generously with dill.

3 Tbsp. Hungarian paprika, divided

1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
1 cup sour cream
4 cups hot cooked egg noodles

Steps:

  • Remove skin from all chicken pieces except wings. Mix flour, 2 Tbsp. paprika and black pepper in pie plate; reserve 1/4 cup. Coat chicken with remaining flour mixture; discard any remaining flour mixture.
  • Heat oil in Dutch oven or large deep skillet on medium heat. Add half the chicken; cook 3 min. on each side or until browned on both sides. Transfer to plate. Repeat with remaining chicken; cover to keep warm. Add shallots to pan; cook and stir 4 min. Stir in remaining paprika and red pepper; cook 1 min. Add broth; stir. Bring to boil. Return chicken to pan; cover. Simmer on medium-low heat 30 min. or until chicken is done (165ºF.) Remove chicken from pan; cover to keep warm.
  • Mix sour cream and reserved flour mixture in medium bowl. Stir in 1/2 cup of the hot broth from pan. Add to pan; simmer 1 to 2 min. or until thickened, stirring constantly. Return chicken to pan; cook until heated through. Serve over noodles; sprinkle with parsley.

1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up
1 tablespoon canola oil
1 tablespoon butter
1 cup sliced fresh mushrooms
1 cup diced onion

After many, many requests, I'm excited to be sharing what is my second favorite Hungarian dish of all time. I really love making anything Hungarian, since the recipes tend to be simple and easy to make, as well as comforting and delicious, and the names are never not fun to say. Top with extra sour cream and freshly sliced chives on top.

8 (5 ounce) bone-in, skin-on chicken thighs
salt to taste
2 tablespoons olive oil
2 medium yellow onions, diced
3 cloves garlic, minced
2 tablespoons tomato paste
4 teaspoons all-purpose flour
1 teaspoon kosher salt, or to taste
½ teaspoon freshly ground black pepper
1 teaspoon smoked paprika
¼ cup sweet Hungarian paprika
1 pinch cayenne pepper
2 cups chicken broth
⅔ cup sour cream, room temperature
¼ cup heavy whipping cream

Steps:

  • Season chicken generously on both sides with salt. Heat olive oil in a heavy, deep-sided pan (that comes with a lid) over high heat and brown the chicken well, skin-side down, about 5 minutes; flip and continue to sear until other side is browned, 3 to 4 minutes more. Turn off heat. Transfer the browned chicken to a plate and reserve until needed; spoon out excess chicken fat if desired.
  • Add onions and a pinch of salt to the same pan and saute over medium until golden, about 5 minutes. Add garlic, tomato paste, and flour and cook, stirring, another 3 to 4 minutes to form a tomato roux. Stir in 1 teaspoon kosher salt, freshly ground black pepper, smoked paprika, and sweet paprika and cook for 1 minute. Add chicken broth and bring to a simmer over high heat.
  • Reduce heat to medium-low and transfer chicken and accumulated juices back into the pan. Baste the tops with the sauce, cover the pan with the lid, and simmer, basting occasionally with the sauce, until the chicken is no longer pink in the centers and is fork-tender, 45 to 60 minutes. Remove the chicken and transfer to a plate.
  • Skim some fat off the top of the sauce if desired. Whisk heavy cream and sour cream into the sauce and bring to a simmer, stirring occasionally. Transfer the chicken and any juices back into the sauce. Simmer, uncovered, basting often, until chicken is heated through and very tender, about 10 minutes. Taste and adjust seasoning if needed.

1 (4 pound) whole chicken, cut into pieces
½ cup all-purpose flour
1 teaspoon seasoned salt
½ teaspoon dried thyme
¼ teaspoon ground black pepper
¼ cup shortening
2 tablespoons paprika
½ teaspoon garlic salt
2 ½ cups hot water
2 onions, peeled and sliced into rings
2 tablespoons all-purpose flour
½ cup milk

Steps:

  • In a shallow dish or bowl, combine 1/2 cup four, seasoned salt, thyme and ground black pepper. Mix together; coat chicken pieces in this mixture and fry in shortening in a large skillet until lightly browned on all sides.
  • Sprinkle paprika and garlic salt over chicken. Add hot water to skillet and simmer for 30 minutes. Placed onion rings on top of chicken pieces and simmer for another 30 minutes. Remove chicken, with onions on top, to a serving platter and reserve.
  • In a small bowl, blend 2 tablespoons flour with milk and add to liquid in skillet. Cook, stirring, until thickened. Pour thickened mixture over chicken and serve with hot cooked white rice or egg noodles, if desired.

4 (12-ounce) chicken breasts or 4 half-chickens
Salt and freshly ground black pepper
3 tablespoons sweet paprika
2 tablespoons flour
1/4 cup peanut oil
4 cups onions, thinly sliced
2 tablespoons minced garlic
1 teaspoon cumin seeds, toasted and ground
2 tablespoons tomato paste
1 cup tomato, concasse
2 tablespoons minced marjoram leaves
1 teaspoon minced thyme leaves
1 bay leaf
2 tablespoons balsamic vinegar
1 cup dry white wine
2 cups chicken stock
1/4 cup heavy cream
2 red bell peppers, both roasted, peeled, cored, seeded, and 1 cut into 1 inch by 1/4-inch strips
2 tablespoons minced parsley leaves
2 tablespoons creme fraiche
Napkin Dumplings, recipe follows
2 ounces butter
1 1/2 teaspoons minced garlic
1 small onion, minced
1 loaf white bread, crust trimmed
2 teaspoons minced thyme
2 teaspoons minced chives
1 teaspoon minced parsley
1/4 cup flour
1 egg, lightly beaten
1/4 cup milk
Salt and pepper
Freshly ground nutmeg, to taste

Steps:

  • Cut each chicken breast into 3 pieces. Season with salt, pepper and 1 tablespoon of paprika. Lightly coat with flour. In a braising pan, heat peanut oil. Sear chicken pieces until brown on all sides. Remove the chicken from the pan and place in a tray.
  • Add onions to the pan and saute for 5 minutes until golden brown. Add the garlic and cumin seeds. Cook 1 more minute. Add the tomato paste, tomato, and remaining 2 tablespoons of paprika. Stir until well blended. Add the marjoram, thyme and bay leaf. Deglaze with the vinegar and wine. Add chicken stock. Season with salt and pepper. Bring to a boil. Add the reserved chicken pieces and cover with a piece of vented parchment paper. Simmer for 20 minutes. Add cream and continue to simmer another 10 minutes or until the chicken is tender.
  • Transfer chicken to a saute pan. Pour sauce and 1 roasted pepper in a blender. Process to a puree. Taste and adjust seasoning. Pour sauce over chicken. Reheat until warm. Garnish with pepper strips, minced parsley and creme fraiche.
  • Preheat the oven to 250 degrees F.
  • In a saute pan, over medium high heat, melt the butter. Cook the garlic and onions until translucent. Do not allow to develop color.
  • Cut the bread into 1/2-inch cubes. Place in a baking sheet and bake in the oven to dry, about 20 minutes. Do not allow to develop color. Transfer to a large mixing bowl. Pour the onion mixture all over the bread. Add the thyme, chives, parsley and flour. Toss to evenly distribute the herbs with the bread and flour.
  • In a small bowl, combine the egg and milk. Add to the bread mixture. Season with salt, pepper and nutmeg, to taste.
  • Divide the mixture into 6 portions. Wrap each portion in plastic wrap, roll and secure the ends, shaping like a large sausage. Wrap with a layer of aluminum foil.
  • Prepare a steamer. Add wrapped dumplings to the steamer and steam for about 20 minutes. Remove from the pot and unwrap. Slice into 1-inch disks.
  • Yield: 6 servings

This is the recipe my Mom and I have made for years. I don't know where it originally came from, just that everyone seems to love it- I did growing up - and now my whole family does (always a plus to find a quick meal that my kids like that my hubby and I can enjoy eating too!!) Easy to round out with a green salad or veggie and roll or bread on the side. I have made this in a pinch for friends and they always rave thinking it took more time than it did to prepare. ;) Mushrooms are a great addition, simply add them in when adding the onions. I also like to stir in sautéed asparagus sometimes or frozen peas. ;)

4 - boneless skinless chicken breasts
1 medium onion, chopped (walla walla or vidalia preferred)
1 1/2 cup(s) chicken broth
2 tablespoon(s) sweet hungarian paprika, more to taste

Steps:

  • Cube chicken into 1-2 inch chunks- as desired.
  • In a deep skillet, brown chicken breasts with oil, garlic and pepper.
  • Once cooked, add onions and cook for 2 minutes, stirring lightly.
  • Add paprika (at least 2 tbsp -more to taste) and the chicken broth.
  • Bring to a rolling bubble, add wine and simmer for 5 minutes.
  • In a cup on the side, mix cold water and cornstarch completely.
  • Spoon mixture into simmering chicken, stirring until desired thickness is achieved.
  • Cook for at least 5 more minutes to cook out the starch taste.
  • When ready to serve, remove from heat and stir in the sour cream, enough to achieve the creaminess desired.
  • Serve over your favorite pasta(egg noodles, cavatappi, penne), mashed potatoes or rice. Enjoy!! :)

This is a Hungarian dish that seems to be loved by almost everyone....the chicken is very tender and very flavorful and the sauce is one that is always soaked up by good french bread or hungarian bread.....althought there are many different versions of this made up by many different people......there is only 1 true Hungarian Paprikas. I come from a family of 7 generations of full blooded Hungarians, we eat , we talk and we all cook hungarian.....still to this day. So I will pass on this recipe from many generations of fantastic cooks and people. Enjoy.

2 (3 lb) frying chicken, cut up
3 tablespoons butter
2 large onions, peeled and chopped
2 garlic cloves, crushed
2 teaspoons Hungarian paprika
1 1/2-2 cups chicken broth
1 teaspoon salt (to taste)

2 -3 tablespoons flour
2 cups sour cream, at room temperature
1 pint heavy cream

Steps:

  • Wash and cut up chickens into pieces. Heat butter in large skillet and fry chicken pieces till browned. Remove from skillet and keep warm. Pour off most of fat from skillet and add chopped onions and garlic, saute till tender, add paprika and cook for a minute, add salt and pepper to onion mixture. Add chicken broth and stir well to remove mixture from bottom of pan. In a large dutch oven or cooking pot, add broth mixture and bring to a boil, add chicken. Make sure there is enough liquid to just cover all the chicken (if there is not enough, then add some water or more broth.)Cook covered on low heat till chicken is so tender it will fall off the bones. Remove chicken to a platter when fully cooked. Combine flour and sour cream, mix into the pot, cook slow, stirring often until thickened and smooth. At this point if sauce is not thick enough, add cream slowly while still cooking on low until desired thickness. You want to achieve a sauce that is a consistancy of gravy, but not too thick. Once this is done you will need to make some dumplings as follows:.
  • 3-C. flour.
  • 5 eggs.
  • 2 teaspoons salt.
  • 1/4 C water.
  • mix ingredients together until smooth. Drop batter by teaspoons into boiling salted water. Cook 10 minutes. Drain. Rinse with cold water. Serve on plates and top off with sauce and chicken. This can also be served with the traditional Hungarian Cucumber salad.
  • Hungarian Cucumber Salad with Sour Cream:.
  • 2 cucumbers.
  • 1 lg clove garlic, pressed.
  • 1 1/2 teaspoons salt.
  • 2 T. vinegar.
  • 1/2°C sour cream.
  • Hungarian Paprika.
  • Pare cucmbers and slice into thin slices, place in bowl,add garlic, toss with salt. Refrigerate for 2 hours. Drain cucumbers very well. Blend vinegar with sour cream and add cucumbers, mix well and sprinkle top with paprika generously, and serve.
