FAMILY LOVIN' LASAGNA

Please every family member with this two-in-one lasagna. The kids will favor the extra-cheesy half while adults will feel good about getting their greens.

1 pound lean ground beef
3 1/3 cups hot water
1 package Hamburger Helper™ Oven Favorites® lasagna
2 tablespoons grated Parmesan cheese
1/2 container (15-ounce size) ricotta cheese
1/2 package (9-ounce size) frozen spinach, thawed and squeezed to drain
1 1/2 cups shredded mozzarella cheese (6 ounces)

Steps:

  • Heat oven to 375°F. Cook and stir beef in 3-quart saucepan over high heat about 5 minutes or until brown; drain. Add hot water; slowly stir in Sauce Mix, using wire whisk, until blended (sauce will be thin). Stir together 2 tablespoons Parmesan cheese, the ricotta cheese and spinach in medium bowl.
  • Place 5 uncooked Pasta, slightly overlapping, in ungreased 13x9-inch rectangular pan; top with about half of the beef sauce. To make part of lasagna extra-cheesy and part spinach, dollop half of the ricotta mixture over one side and sprinkle 1/2 cup of the mozzarella cheese over other side. Repeat--except top all of the lasagna with remaining 1 cup mozzarella cheese and the Parmesan Cheese (included).
  • Bake uncovered 25 to 30 minutes or until cheese is light brown. Remove from oven; let stand at least 5 minutes before cutting.

This is my family's favorite lasagna. It is a recipe I got from a local mennonite cookbook and it is SUPERB! It has a homemade tomato sauce that is easy to whip up while the noodles are cooking. Try it... I hope you love it as much as we do!

1 lb ground beef
1/2 cup chopped onion (sometimes I use slightly more)
3 cups tomato juice
2 tablespoons brown sugar
1 tablespoon vinegar
1 1/2 teaspoons salt
1 teaspoon oregano
1 teaspoon marjoram
1/2 teaspoon garlic powder
2 tablespoons cornstarch
1/3 cup water
8 ounces lasagna noodles
2 cups cottage cheese
2 cups shredded mozzarella cheese (I have always used the mozzarella) or 2 cups swiss cheese (I have always used the mozzarella)
1 tablespoon parsley flakes (I substitute fresh parsley when I have it)
1/3 cup parmesan cheese

Steps:

  • Brown ground beef and onion in large skillet, then drain.
  • Place beef and onion back into skillet.
  • Add tomato juice, brown sugar, vinegar, salt, oregano, marjoram, and garlic powder; cover and simmer for 20 minutes.
  • Meanwhile, cook lasagna noodles with 1 Tbsp oil according to the package directions.
  • Dissolve cornstarch in water and add to sauce, stirring until thickened.
  • In a greased 9x13 inch baking dish, layer noodles, meat sauce, cottage and mozzarella or swiss cheese, and parsley flakes.
  • Sprinkle parmesan cheese over the top.
  • Bake at 350 degrees for 35-40 minutes.

1 egg, beaten
1/4 cup parmesan cheese
1 1/2 teaspoons italian seasoning
1 (16 ounce) container cottage cheese, divided
2 cups grated mozzarella cheese, divided
1 lb ground beef
1 medium onion, chopped
2 garlic cloves, minced
1/2 cup water
2 (26 ounce) cans chunky spaghetti sauce
1 (12 ounce) box oven-ready lasagna noodles, uncooked

Steps:

  • Preheat oven to 350°.
  • In a mixing bowl, combine the egg, parmesan cheese, Italian seasoning, cottage cheese, and 1 cup mozzarella cheese; set aside.
  • In a large skillet, brown the beef, onion, and garlic together until the beef is done; drain excess grease.
  • Add water and all but 1 cup of spaghetti sauce to beef.
  • Spread reserved spaghetti sauce into the bottom of a greased 13x9 inch pan.
  • Layer 5 to 6 lasagna noodles over the sauce, overlapping or breaking to fit.
  • Spread half the cheese mixture over the noodles.
  • Spoon a third of the beef mixture over the cheese layer.
  • Repeat layers once.
  • Add one more layer of 5 to 6 noodles and spoon remaining third of beef mixture over the top.
  • Cover and bake 50 minutes.
  • Sprinkle remaining mozzarella cheese over the top.
  • Let stand 5 minutes before serving.
