1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
1 stalk chopped celery
4 cups chicken stock
1/3 cup butter
1 (5 1/3 ounce) can evaporated milk

Steps:

  • Put all ingredients except milk and butter in crock pot. Cover & cook on simmer for 1 hr on stove. Stir in last 2 ingredients the last 30 minutes before serving. Add salt & pepper to taste. Garnish with shredded cheese, sour cream & bacon.

Posted on the Napa Valley Wine site as a suggested side dish for Whole Roasted Beef Sirloin. Have not tried this recipe, putting here for safekeeping. I also question the 8 servings.

10 ounces yukon gold potatoes
2 1/2 ounces heavy whipping cream
2 ounces whole butter
4 ounces fresh prepared horseradish
2 ounces shredded asiago cheese
2 whole eggs
1 cup panko breadcrumbs (Japanese breadcrumbs)
cooking spray
salt and pepper, to taste

Steps:

  • Boil potatoes until soft and put through a ricer. Heat cream and butter together. Mix potatoes together with cream mixture, horseradish, cheese and eggs. Season with salt and pepper. In a 2-ounce muffin tin apply the cooking spray and coat with Panko. Pour potato mixture in and bake in a 350ºF oven for 25 minutes, or until a toothpick comes out clean. When soufflés are done, invert onto a clean cutting board and serve.

3 cups Simply Potatoes® Shredded Hash Browns, at room temperature
1 (8 ounce) cream cheese
1/2 cup pancake mix or 1/2 cup baking mix
2 eggs, slightly beaten
2 tablespoons fresh dill, chopped

Steps:

  • Measure potatoes into a medium size mixing bowl. Add beaten eggs and mix thoroughly. Add pancake mix and dill and stir to combine. Allow mixture to sit for 5 or 10 minutes. Take a teaspoonful of the cream cheese and roll into small ball about the size of a marble. Using hands, take just enough of the potato mixture to totally surround the cream cheese ball and form into a ball, gently applying just enough pressure to hold potato mixture together. A little messy but kind of fun! Gently drop potato balls into hot oil with a slotted spoon and fry until golden about 3 -4 minutes. Allow to cool slightly -- cheese inside will be hot!

1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
1 lb regular cut bacon
6 eggs
1/3 cup shredded cheddar cheese
1 tablespoon half-and-half cream

Steps:

  • Preheat oven to 350 degrees F.
  • Turn a large muffin tin upside down. Place a slice of bacon down the middle of the inverted cup. Place another piece of bacon perpendicular to the first piece. Continue to place bacon slices on cups slightly overlapping each piece until the cup is covered in bacon. Repeat on remaining cups until all bacon is used.
  • Place bacon cups in oven and cook 20-30 minutes or until bacon is golden brown.
  • Remove from oven and set aside to cool.
  • Cook potatoes in skillet according to package instructions. Set aside.
  • Beat eggs and half-and-half in a medium bowl.
  • Scramble eggs in a non-stick skillet over medium low heat until cooked through.
  • Assemble breakfast parfaits by spooning potatoes into bacon bowls and top with eggs and a sprinkle of shredded cheddar cheese.

2 -3 teaspoons red curry paste
1 (13 1/2 ounce) can light coconut milk
2 tablespoons olive oil
1 cup frozen peas

Steps:

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Add the Simply Potatoes and allow them to cook undisturbed for a couple of minutes. Use a metal spatula to give the potatoes a stir and then cook for another 1-2 minutes.
  • Meanwhile, stir together the coconut milk and the curry paste. (Use 2 teaspoons of curry paste for a milder dish or 3 for a stronger one.).
  • Add the curry-coconut combination to the slightly browned potatoes and stir gently.
  • Stir in the frozen peas and simmer for a 3-4 minutes.

1/2 cup pancake mix
2 eggs, slightly beaten
1 (8 ounce) cream cheese
2 tablespoons fresh dill, chopped

Steps:

  • Measure potatoes into a medium mixing bowl. Add pancake mix and mix well. Add beaten eggs and dill and stir to combine thoroughly. Allow to sit for 5 to 10 minutes. Measure one teaspoon of cream cheese and roll into a ball about the size of a marble. Using hands, scoop about a tablespoon of potato mixture and coat cream cheese ball so that it is completely covered with potato mixture.   • Beat the egg whites in a bowl until you can make peaks in them.
  • Meanwhile, add the egg yolks, cheese, salt, pepper, and nutmeg to the mashed potatoes.

Unsalted butter, for dish
3 tablespoons fine dried bread crumbs
1 cup leftover mashed potatoes
2 large eggs, separated
3 tablespoons heavy cream
3 tablespoons grated Parmesan cheese
1/2 teaspoon minced garlic
Salt and freshly ground pepper
Freshly grated nutmeg

Steps:

  • Heat oven to 375 degrees. Butter an 8-inch-long, 1/4-inch-deep oval gratin dish. Coat with bread crumbs, and set the dish aside.
  • In a large bowl, whisk together the potatoes, egg yolks, cream, Parmesan cheese, and garlic until creamy and well combined. Season with salt and pepper, and set the potato mixture aside.
  • Place egg whites and a pinch of salt in the bowl of an electric mixer fitted with the whisk attachment. Whip on medium speed until the whites are glossy and stiff.
  • Fold the egg whites into the potato mixture. Transfer mixture to the prepared gratin dish, and bake until golden and puffy, about 40 minutes. Top with nutmeg, and serve.

1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
1/3 cup white cheddar cheese, shredded
3 eggs, divided
1 ounce prosciutto
1 tablespoon chives, chopped

Steps:

  • Crisp the prosciutto in a 350° oven for 10 minutes. Let cool then crumble into small pieces.
  • Set oven to 375°.
  • Separate the egg whites and yolks. Whip the 3 egg whites until stiff.
  • Mix together the Simply Potatoes, 1 egg yolk, prosciutto, and white cheddar cheese. Fold in the egg whites.
  • Put the mixture into a greased mini-cheesecake pan. Sprinkle 2 t. of chives on top.
  • Bake for 25-30 minutes. Let cool for 5 minutes, then remove from pan. Sprinkle the remaining chives on top.
