A fantastic sandwich with sliced turkey, guacamole, toasted whole wheat bread, fresh tomato, lettuce, bean sprouts, yellow mustard and light mayo. For cheese lovers, Colby-Jack makes a great addition as well. No one I know can resist this one!

2 slices whole wheat bread, toasted
1 tablespoon mayonnaise
2 teaspoons Dijon-style prepared mustard
3 slices smoked turkey breast
2 tablespoons guacamole
½ cup mixed salad greens
¼ cup bean sprouts
¼ avocado - peeled, pitted and sliced
3 ounces Colby-Monterey Jack cheese, sliced
2 slices tomato

Steps:

  • Spread mayonnaise on one slice of toast, then spread mustard on the other. Arrange the sliced turkey on one side. Spread guacamole over the turkey. Pile on the salad greens, bean sprouts, avocado and cheese. Finish with tomato slices, then place the remaining slice of toast on top.

  • Stir lemon peel into mayonaisse. Spread on both slices of bread.
  • Layer half of spinach leaves, turkey, tomato slices, and remaining spinach leaves on one slice of bread.

6 garlic cloves, minced
12 submarine buns, split
24 slices cheddar cheese
3 medium tomatoes, sliced

Steps:

  • Cut the red peppers into eighths; cut onions and zucchini into 1/2-in. slices. Brush vegetables with oil; sprinkle with salt and pepper. Grill vegetables in batches, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until crisp-tender. 1/2 cup mayonnaise
1 teaspoon finely grated lemon zest, plus 3 tablespoons fresh lemon juice
1/4 teaspoon freshly ground pepper
2 cups diced roast turkey (a mixture of white and dark meat)
1 large stalk celery, finely diced (about 1/2 cup), plus 1/4 cup chopped celery leaves or parsley
1/2 cup diced peeled green apple, such as Granny Smith or Mutsu
1/4 cup chopped golden raisins
3 tablespoons extra-virgin olive oil
6 thin slices rustic bread, toasted
Seedless cucumber, very thinly sliced, and watercress, for serving

Steps:

  • In a bowl, mix together mayonnaise, lemon zest, 1 tablespoon lemon juice, and pepper. In another bowl, mix together turkey, celery and leaves, apple, raisins, remaining 2 tablespoons lemon juice, oil, and 2 tablespoons of mayonnaise mixture.
