2 tablespoons canola oil
1 broiler/fryer chicken (3 to 4 pounds), cut up
2 cups barbecue sauce
1-1/2 cups coarsely chopped onions
1 large green pepper, chopped
1/2 cup water

Steps:

  • Select saute or browning setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, brown chicken in batches. Press cancel. Return all to pressure cooker. Combine remaining ingredients. Pour over chicken., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 10 minutes. Let pressure release naturally. A thermometer inserted in chicken should read at least 170°. If desired, thicken cooking juices.

1 1/2 teaspoons packed light brown sugar
1 teaspoon paprika
1/2 teaspoon garlic powder
Kosher salt and freshly ground black pepper
8 bone-in, skin-on chicken thighs (about 3 pounds), patted completely dry
2 tablespoons chopped chives

Steps:

  • Combine the sugar, paprika, garlic powder, 1 tablespoon salt and 1/2 teaspoon black pepper in a large bowl. Toss the chicken in the spice mixture until coated. Arrange the chicken in a single layer in a flameproof 9-by-13-inch baking dish. Cover with foil and refrigerate for at least 4 hours and up to overnight.
  • Preheat the oven to 300 degrees F.
  • Bake until the chicken is super moist and falling off the bone, about 2 hours. Remove the baking dish from the oven and remove the foil. Use a spoon or ladle to remove as much liquid from the dish as possible and reserve. Turn the oven to broil.
  • Broil the chicken until the skin is golden brown and slightly crisp, about 5 minutes. Sprinkle the chicken with the chives and serve with the reserved pan juices.

INSTANT POT FALL-OFF-THE-BONE CHICKEN

Now you can have a whole chicken on your table -- tender enough to fall of the bone and ready to serve -- in under an hour. If you want extra roasted flavor, try browning the chicken breast and back first on the high saute setting until golden brown, 6 to 8 minutes.

1 large whole chicken (3 to 4 pounds)
Kosher salt and freshly ground black pepper
2 bay leaves
2 shallots, halved
1 head garlic, halved crosswise
1 lemon, quartered
1 bunch fresh thyme

Steps:

  • Generously sprinkle the cavity of the chicken with salt and pepper. Stuff the cavity with the bay leaves, shallots, garlic, lemon and thyme. Generously sprinkle the outside of the chicken with salt and pepper, making sure to get into every nook and cranny.
  • Fold an 18-inch piece of foil in half lengthwise, then fold it in half again lengthwise, and finally once more in half lengthwise, making a 4 1/2-inch-wide foil sling for the chicken. Put the sling in the center of a large plate and transfer the chicken to the center of the sling.
  • Put the rack in the bottom of a 6-quart Instant Pot®, add 1 cup water and lower the chicken onto the rack using the sling. Fold down the foil sling as needed so it fits in the pot.
  • Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 18 to 24 minutes (see Cook's Note).
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid. Carefully transfer the chicken to a cutting board and let sit for 10 minutes.
  • Meanwhile, set the pot to high saute and reduce the sauce for 5 minutes. Turn off and let the sauce sit for 5 minutes.
  • Cut the chicken into pieces and serve with the sauce and the shallots and lemon, if desired.

1/4 cup water
1/4 cup vinegar
1/4 cup butter
3 tablespoons sugar
1/2 teaspoon mustard
1 1/2 teaspoons salt

1/4 cup water

Steps:

  • Combine ingredients (except chicken and 1/4 cup water) and bring to a boil. Simmer for 10 minutes.
  • Pour 1/4 cup water in bottom of a shallow pan. Lay chicken tightly in the pan.
  • Pour sauce over chicken.
  • Bake at 275 degrees for 2 1/2 to 3 hours uncovered. Turn chicken halfway through.

Delicious BBQ chicken is made using an easy homemade barbecue sauce. Cooking the chicken at a low temperature allows the meat to become tender and stay juicy.

2 cups ketchup
1/4 cup apple cider vinegar
1/4 cup Worcestershire sauce
1/4 cup brown sugar (firmly packed)
2 tablespoons molasses
2 tablespoons prepared yellow mustard
1 tablespoon Tabasco sauce
1 tablespoon barbecue dry rub
1/2 teaspoon ground black pepper
15 drumsticks (about 4 pounds)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 300 F. Line a rimmed baking sheet with aluminum foil, and spray the foil with nonstick cooking spray.
  • In a nonreactive saucepan , make the sauce by combining all of the ingredients except the drumsticks: ketchup, vinegar, Worcestershire sauce, brown sugar, molasses, mustard, Tabasco sauce, rub, and pepper. Slowly bring it to a boil over medium-high heat, stirring frequently.
  • Reduce the heat to medium-low and gently simmer until dark, thick, and richly flavored, about 10 to 15 minutes.
  • Place chicken drumsticks into a large bowl, and pour some sauce over them. Toss the chicken in the sauce until well coated.
  • Using ​ tongs , transfer the chicken to the prepared baking sheet, leaving any remaining sauce in the bowl. Make sure the drumsticks aren't touching.
  • Bake for 1 1/4 to 1 1/2 hours, basting once midway through the baking time with the remaining sauce in the bowl.
  • Bake until the chicken is fully cooked through and the outside has a nice glaze. Serve hot or at room temperature and enjoy.

4 racks of baby back pork ribs or other whole racks (about 450g each)
5 tbsp cider vinegar
2 tbsp smoked paprika
4 tbsp light brown soft sugar
1 tbsp garlic granules
1 tbsp onion granules
1 tbsp Chinese five-spice powder
300g tomato ketchup
2 tbsp honey
1 tbsp soy sauce
1 tbsp Dijon mustard
300ml apple juice

Steps:

  • If there's a thin membrane on the back of the ribs, peel this off as best you can. The length of the ribs will be determined by the size of your roasting tin and barbecue - leave them whole or cut in half or thirds. Tip the ribs into a large, deep roasting tin. Whisk the rest of the ingredients together in a bowl until completely combined, then pour this over the ribs. Toss the ribs in the sauce using your hands to ensure they're completely coated. Cover the tin with foil, shiny-side down. To cook straightaway, simply leave to marinate while the oven heats up, or chill the ribs overnight.
  • Heat the oven to 160C/140C fan/gas 3 and bake the ribs for 2 hrs 30 mins-3 hrs, turning once or twice until the bones are exposed and the meat is pull-apart tender. When the ribs are cooked, leave to cool a little, then lift onto a tray using tongs. Pour the sauce from the tin into a saucepan and bring to the boil. Reduce the heat and simmer for 25-30 mins, stirring occasionally until thickened. Leave to cool. The sauce and ribs can be prepared up to two days ahead and chilled.
  • Light the barbecue and wait until the coals are ashen, or set a gas barbecue to medium. Put as many ribs on the grill as you can fit, then brush generously with the sauce. Working quickly, grill the ribs, basting with more sauce and turning every minute or so until the ribs are well-coated, charred at the edges, caramelised and sticky. Repeat with any remaining ribs and sauce if they didn't all fit on the grill at once. Serve piled high on a platter with the reserved sauce on the side for slathering on top. Any leftover sauce will keep chilled in the fridge for up to a week.

½ cup water
⅓ cup ketchup
⅓ cup white vinegar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place drumsticks in a baking dish.

  • Heat oven to 400°F. Pour buttermilk into large shallow dish. In large plastic food-storage bag, mix flour, salt and pepper. Dip each chicken piece in buttermilk, then place in bag with flour.
