MINI MARASCHINO CHERRY MUFFINS
A sweet cherry glaze brings out the best of an almond and cherry muffin.

Steps:
- Heat oven to 400°F. Grease bottoms only of 24 miniature (1 3/4x1-inch) muffin cups or 12 regular-size muffin cups with shortening or cooking spray, or line with paper baking cups.
- In medium bowl, beat granulated sugar, butter, milk and egg with fork or wire whisk until well blended. Stir in flour, baking powder and salt just until flour is moistened. Fold in cherries and almonds. Divide batter evenly among muffin cups (cups will be full).
- Bake 10 to 15 minutes or until golden brown.
- Meanwhile, in small bowl, mix glaze ingredients until smooth and thin enough to drizzle. Immediately remove muffins from pan to cooling rack. Drizzle glaze over warm muffins. Serve warm if desired.

Another of my original baking recipes (bet u could tell because it contains spirits :P) This is the most requested muffin in my house. There are just so many layers of flavor to them! You can make these as regular or gourmet size -either way they are delicious. Enjoy!

- 1. While preheating oven to 400 degrees, sift together flour, baking powder and salt. Stir in brown sugar and dried cherries.
- 2. In a separate bowl, beat egg lightly and then beat in milk, oil, vanilla extract, amaretto and applesauce. Make a well in the center of the dry ingredients and pour in egg mix, stirring to just mix. Bake for 20 mins.

- Preheat oven to 350 and line muffin pan(s) with liners (the batter makes 18 muffins).
- In a bowl mix together buttermilk, water, canola oil and egg. Mix well.
- Next add the lemon zest, flour, sugar, and baking powder and stir until well incorporated.
- Lastly fold in the cherries and stir until just combined.
- Using a 2 tablespoon cookie scoop (or just using a spoon), scoop batter into muffins cups so that each muffin cup is about 3/4 full. Sprinkle a little sanding sugar on top of the muffin batter, and then bake for 25 minutes, or until a tooth pick inserted into the center comes out clean.
- Let rest for a few minutes, and then transfer to a wire cooling wrack and allow to cool for 10 minutes before enjoying.

- Stone the cherries with a cherry pitter. Place them in a large heavy-bottomed pot. Add the sugar, stir gently, and bring to a boil. Cook gently for about 15 to 20 minutes, the liquid should start to look like a light syrup.
- Add lemon juice, alcohol, vanilla extract, and bitter almond flavor. Continue cooking for 10 more minutes. Remove the foam.
- Divide the cherries between the sterilized jars and cover them completely with the liquid. Seal well and let cool. Keep in a dark cool place and let steep for about 3-4 weeks before serving. Once you open a jar, keep it refrigerated.

- Prepare the topping first. Put the stoned cherries in a pan with 50g of the brown sugar and 2 tablespoons of water. Heat gently until the sugar has dissolved, then bring to a simmer and cook gently for 5 minutes, or until the cherries have softened slightly. Remove the cherries with a slotted spoon to a sieve set over a bowl to drain. Add any liquid from the bowl to the pan, plus the amaretto, and bring to the boil. Reduce the heat and simmer for another 3-4 minutes, or until the liquid has reduced and is very syrupy. Return the drained cherries to the pan and set aside to cool.
- Meanwhile, put the plain flour and butter for the topping in a bowl. Rub in until it resembles coarse crumbs, then toss in the remaining sugar, amaretti biscuit crumbs and flaked almonds. Set aside.
- Preheat the oven to 180°C, fan 160°C, gas 4. Grease and line a 21cm loose-based cake tin with baking paper. Beat the butter and sugar together until light and fluffy, then add the eggs one at a time, beating well between each addition.
- Combine the flour, baking powder, ground almonds and a pinch of salt, and fold through the creamed mixture. Finally fold through the buttermilk and almond extract. Transfer to the tin and level the batter. Spoon on the syrupy cherries then sprinkle over the crumble topping. Bake for 1 hour 30 minutes, or until golden on top and a skewer comes out clean.

- In a medium mixing bowl, sift together cake mix and pudding and set aside. In the bowl of a stand mixer (or large mixing bowl) using the paddle attachment, beat together eggs, sour cream, liquor, milk, and extract at low speed. Add shortening and extract and beat until combined. Slowly add in powdered sugar and cocoa beating slightly between each addition. Add in amaretto and then milk 1 tablespoon at a time beating in between additions until desired consistency. Turn mixer medium- high and beat for 1-2 minutes.
