"FAKE" HAM SALAD--SOUTHWESTERN PENNSYLVANIA STYLE
We ate this on Mama's fresh homemade bread growing up in southwestern Pennsylvania. It is so good.

Steps:
- I buy the Bologna from the deli and they cut it into 2 large pieces.
- Using either a food grinder or processor, grind meat. If using a processor, use the blade and not the grater plate and be sure to use the pulse button until it is ground to your liking. Once ground, put in large mixing bowl.
- Mix in your relish and cheese with large spoon. Add mayonnaise and mix well. Serve on any type of bread or use as a dip with crackers. Makes approximately 5-6 cups.

- In a bowl, combine bologna, eggs, onion and pickles. Add mayonnaise; toss lightly until combined. Cover and chill. , To serve, place a lettuce leaf on each sandwich bun, if desired, and top with about 1/3 cup ham salad; replace bun tops.
