CHICKEN FAJITA CASSEROLE

Here is a delicious casserole from Old El Paso, that will have your family begging for more! I have found that these ingredients are fairly easy to come by, but I make my own taco and fajita seasonings. You may use your own seasonings, or use the ones provided here in this recipe.

1 (16 ounce) can old el paso refried beans
1 (15 ounce) can tomato sauce
1 (1 ounce) package old el paso fajita seasoning mix
1 (9 ounce) package , frozen cooked chicken breast strips, thawed (seasoned with Southwest seasonings)
Smucker's No Sugar Added Orange Spread, 8
8 (1 lb) bags frozen stir-fry bell peppers and onions, thawed, drained
2 cups shredded colby-monterey jack cheese (8 oz)

Steps:

  • Heat oven to 375°F Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In medium bowl, mix refried beans, tomato sauce and fajita seasoning mix. Stir in chicken.
  • Spread 1/2 cup of the bean mixture over bottom of baking dish. Arrange 4 tortillas, overlapping if necessary, in baking dish. Top with half of remaining bean mixture, half of the stir-fry vegetables and 1 cup of the cheese. Repeat layers with remaining tortillas, bean mixture, stir-fry vegetables and cheese.
  • Cover baking dish with foil. Bake 30 minutes. Uncover; bake 15 to 20 minutes longer or until hot and bubbly. Let stand 5 minutes before cutting.

8 chicken breast tenders or 8 boneless skinles chicken tenderloins
1 (6 ounce) box uncle ben's chef's recipe traditional red beans & rice
4 ounces black olives, sliced and drained
4 ounces green chilies, drain and diced
2 cups water, boiling
1 (15 ounce) can diced tomatoes
1 cup shredded monterey jack cheese (about 4 ounces)
1 cup tortilla chips, crushed

Steps:

  • Preheat oven to 350°F Wash hands. Place red beans and rice (do not include seasoning packet) in 13x9-inch baking dish; top with olives and chilies. Place chicken in baking dish. Wash hands.
  • Combine boiling water, tomatoes and contents of rice seasoning packet in medium bowl. Pour over chicken mixture. Cover and bake 45 minutes. Remove cover; sprinkle with cheese and tortilla chips. Bake 5 minutes longer or until rice is cooked and chicken is done (internal temperature 170° F).
  • Serving Suggestion: Serve with a tossed salad and lime sherbert for dessert. Refrigerate leftovers.
  • Substitution Tip: To substitute Individually Frozen Boneless, Skinless Chicken Tenderloins, simply increase cooking time by about one-third.

I found a recipe on Recipezaar.com called "Gringo Casserole" which was very good, but I got the idea to make it more like my favorite Mexican dish; chicken fajitas. My whole family loves this dish and it's very easy to make.

3 boneless chicken breasts
1 small white onions or 1 small yellow onion, chopped
1 tablespoon garlic, minced
1 red bell pepper, chopped or sliced
1 green bell pepper, chopped or sliced
1 yellow bell pepper, chopped or sliced
3 tablespoons oil
1 can tomatoes and green chilies
2 cans cream of chicken soup, fat free is fine
1/2 package flour tortilla
1 lb monterey jack cheese, shredded

Steps:

  • Boil breasts for 20 minutes or until thoroughly cooked.
  • chop chicken into chunks and set aside.
  • Saute onions, garlic, peppers, salt& black pepper over medium heat until tender.
  • Mix soup, tomatoes-chile& chicken in large bowl.
  • Tear tortillas into fourths.
  • Layer tortillas on bottom of baking dish, top with soup-chicken-tomatoes-chiles mixture, then top with layer of sauted veggies, then top with layer of cheese.
  • Repeat as needed until dish is full to top.
  • Bake at 350 for 35 minutes.

2 bell peppers, with seeds remove and sliced into strips red and green
1 1/2 onions, sliced
1/4 cup diced tomatoes and green chili
2 tablespoons taco seasoning
1 cup shredded cheese cheddar cheese and monterey jack cheese
8 ounces cream cheese, softened
1/4 cup heavy cream (optional)

Steps:

  • First, preheat the oven to 350 degrees Fahrenheit.

  • Next, season the tender vegetable and baked chicken with 1 tbsp taco seasoning.
  • Add heavy cream, all cream cheese, and half of the shredded cheese to the bowl with peppers and chicken. Combine everything and then add remaining taco seasoning and again combined well.
  • Place mixture into the casserole dish and top with remaining shredded cheese and bake into the oven at 350 degrees Fahrenheit for thirty to thirty-five minutes.
  • Serve with rice!
