- 1. Dissolve the yeast and the sugar in a small measuring cup, and let it stand 5 minutes, then stir in the biscuit mix.
- 2. I use Pioneer brand buttermilk biscuit mix. Make a dough and knead until it is smooth and elastic, about 8 minutes.
- 3. Roll out the dough and cut into round shapes. (You can make other shapes if you wish.) You will get around 20 rolls, less if you make them bigger.
- 4. I use an air baking sheet with parchment paper for best results. (The reason I like an air baking sheet is they don't overbrown baked goods) Place the cut rolls on the greased baking sheet and let them rise until double in size, about 30 minutes or so, and bake in a 400 degree oven for 10 to 15 minutes until golden brown. HOMEMADE YEAST ROLLS

- Preheat the oven to 400 degrees F.
- Melt 1 stick of the butter in a small saucepan, then bring to a boil and cook until there are light brown specks in the butter, 3 to 4 minutes. Pour the browned butter into a small bowl and whisk in the sugar until dissolved. Whisk in the milk; the mixture should be lukewarm, around 110 degrees F. Next, whisk in the active dry yeast. Set aside until foamy, 5 minutes.
- In a large bowl, mix together the flour and salt. Make a well in the center, add the eggs and whisk the eggs together with a fork. Pour the browned butter mixture into the well. Using a fork, gradually incorporate the flour into the liquids. Continue stirring just until a shaggy dough comes together. Transfer to a lightly floured work surface and knead with floured hands until the dough becomes very smooth, about 5 minutes.
- Lightly grease a large bowl with olive oil. Add the dough, turning it once to coat. Cover with a clean kitchen towel and let rise until doubled in size, about 1 hour.
- Punch down the dough. Melt the remaining 1/2 stick of butter and use half of that to grease the bottom and sides of a 9-by-13-inch baking dish. Divide the dough into thirds and divide each third into 10 balls. To create smooth tops: roll each ball between your palms, and then stretch the dough across the top of the ball, pinching the excess at the bottom.
- Place the dough balls, seam-side down, in the prepared baking dish -- 5 to the short side, 6 to long side. Cover and let rise until slightly puffy, 30 minutes. Brush the tops with the remaining butter and sprinkle generously with flaky sea salt.
- Bake until the tops are golden brown and the rolls sound hollow when lightly tapped, 15 to 17 minutes. Serve warm.
YEAST ROLLS
Steps:
- In a large bowl, add a pinch of sugar to the warm water. Sprinkle the yeast over the top and let stand until foamy, about 5 minutes. Stir to dissolve yeast. Beat in the remaining sugar, salt, shortening, cold water, and egg until well blended. On low speed, beat in 2 cups of flour and beat for 2 minutes. Beat in enough of the remaining flour, 1/2 cup at a time, to make soft dough. Place the dough in a well-greased bowl and turn to coat the dough. Cover with a towel and let rise until doubled in bulk, about 1 1/2 hours.
- Punch the dough down and refrigerate for 2 hours. The dough will almost double in bulk. Grease 2 (9-inch) cake pans. Turn the dough out onto a floured surface. Pull off pieces of the dough, about a 1/4 cup each and shape into 24 rolls. Place 12 rolls, sides touching in each of the 2 prepared pans. Brush with butter. Let rise in a warm place for 1 hour or until doubled.
- Preheat oven to 425 degrees F. Bake the rolls until well browned on the top, about 15 minutes. Transfer the pan to wire racks to cool for 5 minutes.

- 1. I use my Kitchen Aid bread hook to do the mixing work. You can knead by hand if you must.
- 2. Rinse out the large stainless mixing bowl with hot water and get it warm ( I use the one that fits the Kitchen Aid) add the 1 1/2 cups water, the yeast and the sugar, mix with a spoon and let stand for 10 minutes to work.
- 3. Then add 2 tablespoons of oil, and 2 cups of the flour with the 1 teaspoon of salt added to it and stir and then add that to the yeast mixture and stir again. Put the mixing bowl on the stand and add 1/2 cup of the remaining flour, a little at a time. The dough will pull away from the sides of the bowl.
- 4. Knead 8 minutes by mixer (or on floured board by hand) until the dough is smooth and elastic.
- 5. Lightly oil a large deep bowl, put the ball of dough in it and turn the oiled surface to the top. Place the dough in the oven, cover with a towel, and turn the oven light on to keep it warm. Let it rise about one hour until it has doubled in size.
- 6. If it has doubled in size, punch it down, turn out on a lightly floured board and shape into a large ball, divide that in half and divide it again. and so on until you have 16 pieces. Now if you want half sandwich rolls and half dinner rolls then make your sandwich rolls larger. You can also make a long loaf of French bread from this recipe or a braid if you wish.
- 7. Place the shaped rolls on a greased cookie sheet. I like a ball shape the best for dinner rolls, and you can make oval shape for sandwiches if desired. Let rise for about 40 minutes until double in size.
- 8. Preheat the oven to 400 degrees. Bake at 18 to 20 minutes if you make the standard 16 rolls. It may take a few minutes longer for the sandwich rolls depending on your oven. I have to tent the rolls the last five minutes or they get too brown. Cool on rack. Butter the tops to keep them nice and soft, or don't, and the bread will be crispy like French bread. When cool place in zip lock bags. Enjoy!
- 9. Cook's tip: To freshen the rolls the next day, put them in a paper bag in a pre-heated 350 degree oven for five minutes. They will be as good as fresh baked! These rolls freeze well. Defrost in the plastic bag and then freshen as stated above.

- Combine yeast, 1 Tablespoon sugar, and warm water in a 2-cup liquid measuring cup; let stand 5 minutes. Add milk to yeast mixture and stir.
- In a food processor, combine flour, salt, remaining 2 Tablespoons sugar, and butter or margarine. Pulse until thoroughly incorporated. With food processor running, slowly drizzle yeast mixture through feed tube until ball forms. Run machine for about 2 minutes to knead dough thoroughly.

- Bake at 425°F for 10-15 minutes or until rolls are golden brown.

- Heat the buttermilk, water and butter together, stirring over low heat just till the butter begins to melt.
- Remove from heat and pour the liquid into another container.
- Stir as the butter finishes melting. The liquid should feel hot to the touch, but not scalding.
- Stir together 2 1/2 cups flour with the yeast, sugar, salt and baking soda.
- Stir in the oats.
- Mix the warm liquid into the dry mixture and stir till a sticky dough forms.
- Sprinkle the remaining flour on a board or counter top and turn the dough out on it, coating the dough with the flour.
- Knead gently for about 5 minutes, working in more flour as you go.
- The dough should remain fairly soft, but become smoother and more elastic.
- Form the dough into a rope about 20 inches long, then cut it into 12 equal pieces.
- Shape each piece into a ball, pulling the sides down and pinching together at the bottom.
- Arrange the balls on a butter baking sheet, seam side down, and cover with a tea towel.
- Or, put balls of dough close together in a buttered 10-inch cake pan; they will grow together as they rise, forming a "loaf" of rolls that will easily pull apart.
- Either way, leave the rolls to rise in a warm, sheltered place for about an hour (less if using fast-rising yeast).
- Bake the rolls in a preheated 350°F oven for 20-22 minutes, or until they are lightly browned and sound hollow when the bottom is tapped.
- Cool the rolls on a rack for a few minutes before serving.
GRANDMA BONNIE'S CINNAMON ROLLS
These are my grandma's cinnamon rolls. A favorite at Christmas or just a Saturday morning.

- Combine water, yeast, and 1 tablespoon sugar in the bowl of a stand mixer fitted with the paddle attachment. Let sit until foamy, about 5 minutes.
- Add remaining sugar, 1/4 cup oil, egg, and salt; mix until combined. Scrape paddle attachment and switch to the dough hook. Mix in flour, 1 cup at a time, until dough comes away from the sides of the bowl. Continue kneading for about 3 more minutes.
- Add a bit of oil on the dough and roll the dough in the bowl until all sides are coated. Cover with a towel and let rise until at least doubled in size, about 45 minutes.
- Punch down the dough and transfer to a floured surface. Roll out into a rectangle. Pour melted butter onto the dough and sprinkle with sugar and cinnamon to taste. Add pecans. Roll up lengthwise and cut into 12 rolls. Transfer to a greased 9x13-inch baking dish and let rise for 15 minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- Bake rolls in the preheated oven until golden brown in color, about 15 minutes.
- While the rolls are baking, combine powdered sugar, melted butter, and vanilla for topping. Add 1 tablespoon milk and mix to a pourable consistency, adding more if necessary.
- Remove rolls from the oven. Immediately pour topping over top and sprinkle with pecans.

- 1. Pre-heat the oven to 425 degrees. I use a large stainless steel pan with a shallow rim, big enough to hold all the ingredients in a single layer. Grease the pan with kitchen spray.
- 2. Zest the lemon and squeeze the juice. Place the lemon juice in a large bowl. Add the zest, garlic, Dijon mustard, olive oil, salt, and pepper. Whisk until well combined. Pat thighs dry and add to the mixture in the bowl. Coat the chicken thighs with the mixture and place them skin UP in the center of the baking pan.
- 3. Add the vegetables to the bowl with your hands and toss the vegetables until they are coated. Place the vegetables around the chicken in the pan in a single layer.
- 4. Roast in the oven at 425 degrees for about 45 minutes. Stir the vegetables halfway through the cooking process. Test the vegetables to see if they are done, if not, continue cooking. At this time, using tongs, flip the chicken thighs over to "baste" the top of the meat in the juices, and then flip it back over. (Sneaky way to baste.)
- 5. The meat and vegetables will be golden brown. It may take a few minutes less or a few minutes more, depending on how big the pieces of meat are, and how big you slice the vegetables. If you like them more brown, turn on the broiler for a few minutes, but watch them carefully.
- 6. Next time, after you have tried this dish, feel free to add anything else to it that you can't live without. Enjoy!
