GRILLED CHICKEN MARINADE
Simply the best chicken marinade for any occasion. Works wonderfully on top of a salad.

Steps:
- Whisk vinegar, soy sauce, olive oil, parsley, basil, oregano, garlic powder, and black pepper together in a bowl and pour into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, at least 4 hours.
- Preheat grill for medium-low heat and lightly oil the grate. Drain and discard marinade.
- Grill chicken on the preheated grill until no longer pink in the center, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

MARINATED CHICKEN
I set out to create the ultimate all-purpose marinade, and after spending many hours in the laboratory, I developed the perfect formula for balanced flavor. Fellow food lovers, I give you S.A.S.H.A. It stands for Salt, Acid, Savory, Heat, and Allium. All you need to do is combine ingredients that represent those flavor elements and you have yourself a fantastic marinade. I love using soy and/or fish sauce as my salty elements because they provide the perfect level of salt and savoriness and pack in the flavor. This marinade is perfect for all proteins: beef, poultry, pork and fish!

Steps:
- Butterfly the chicken breasts using a sharp knife, then lightly pound to an even thickness.
- In a large glass bowl, whisk together the brown sugar, fish sauce, soy sauce, lime juice, canola oil, chile-garlic paste, scallion whites, sesame oil and ginger until combined. Add the chicken and turn to coat in the marinade. Cover and let marinade in the refrigerator for at least 2 or up to 4 hours.
- Preheat a grill or grill pan over medium-high heat until hot.
- Remove the chicken from the marinade and transfer to a paper-towel-lined baking sheet. Use paper towels to dab off some of the marinade.
- Brush the grill with canola oil, then grill the chicken until fully cooked, 3 to 5 minutes per side. Transfer the chicken to a platter and garnish with the scallion greens and sesame seeds. Serve.
MARINATED GRILLED CHICKEN BREASTS

- Combine the oil, wine, ginger, coriander, cumin, mustard and pepper. Blend well.
- Put chicken breasts in a glass or ceramic baking dish. Pour 1 1/4 cup of the marinade over them, making sure all the pieces are coated. Marinate at room temperature for 2 hours, turning the chicken pieces a few times to coat well. Refrigerate the remaining marinade.
- Remove the chicken from the marinade and discard what's left in the dish. Grill the chicken over medium heat, basting with the reserved marinade, until cooked through, 4 to 6 minutes.
- Spread the salsa on a serving platter and arrange the chicken on top. Decorate with sprigs of cilantro.
GRILLED MARINATED CHICKEN BREASTS
Using bottled salad dressing, my cousin put a twist on a recipe I have used for years and came up with this super easy crowd pleaser. We have this with roasted potatoes and Greek salad all summer... and the kids love it!

Steps:
- Rinse chicken breasts and pat dry.
- Sprinkle both sides of the breasts with salt, pepper, and garlic powder, using more or less to taste.
- Put chicken in a dish and add about 1/3 cup of the salad dressing, making sure all of the chicken is coated. Cover. A plastic bowl with a lid works well.
- Refrigerate for at least an hour or two.
- Grill over medium direct heat for 8-10 minutes or until juices run clear.
- Remove from grill to a cutting board, cover with foil and allow to sit for 10 minutes.
- Slice breasts on a diagonal crosswise in 1/4 inch slices.
- Toss slices on a shallow serving platter with the remainder of the salad dressing coating all the chicken well. Use more dressing if desired.
- Serve hot or at room temperature.
- Note: To prepare as an appetizer, cube chicken in small chunks, marinate as above, grill 3-5 pieces on small wooden skewers (soaked in water), brush on salad dressing and serve.

KITTENCAL'S EASY MARINADE FOR GRILLED CHICKEN
If you are in a hurry and want a great marinade for chicken this is it! marinade for about 6-8 hours, no longer than 8 hours as the vinegar will start to "cook" the chicken.... I find that Kraft Italian is the best for this and by the sounds of it this marinade works on beef too so you might want to give that a try!

GRILLED HERB-MARINATED CHICKEN BREASTS
The key to moist grilled chicken is leaving the skin on during cooking. Some people are reluctant to do this because they think it will increase the fat calories in the finished dish. But the fact of the matter is that, if you remove the skin before eating the chicken, you'll reap the best of both worlds: juicy chicken without significantly more fat than if you'd removed the skin before grilling. - Put chicken breasts in large zip-lock bag, and pour marinade over chicken.
