INDIAN-SPICED BBQ RIBS
Steps:
- Heat olive oil in a large saucepan over medium-heat. Add onions and garlic and cook until soft, about 4 to 5 minutes. Add ginger and continue cooking for 2 minutes. Add spices and cook for 2 to 3 minutes. Add tomatoes and their juice, water, brown sugar, tamarind paste and serano and stir to combine. Cook for 30 to 40 minutes, or until thickened, stirring occasionally. Remove from heat, add cilantro and place in a food processor, process until smooth. Season with salt and pepper, to taste. Let cool.
- For the ribs: Preheat grill to medium-low heat. Brush ribs on both sides with the olive oil and season with salt and pepper to taste. Grill ribs slowly with the cover closed for 2 to 3 hours over medium to medium-low heat until tender, turning every 10 minutes. During last 15 minutes of grilling, baste with some of the bbq sauce. Remove from the grill and immediately brush with more bbq sauce.
HOT AND SPICY BBQ SAUCE
This sauce is great on ribs, chicken, burgers, pork chops and steaks. This recipe is one of my brothers that he swears is his own creation. It is a Hot and Spicy BBQ Sauce, you don't have to use as much of the hot sauce as the recipe calls for. That is the way my brother likes it, "Nice and Hot".

Steps:
- Combine all ingredients in a pot and bring to a boil.
- Reduce heat and simmer until slightly thickened, about 10-15 minutes.
- Pour sauce through strainer to remove onion and garlic.
- Adjust All Seasonings To Your Own Taste.
- Let cool, then refrigerate for a couple of hours.
SPICY BBQ SAUCE
This is the BEST BBQ sauce you've ever had, bursting with flavor and not too sweet. A perfect accompaniment to pork ribs, but do it up on chicken, beef, or anything else you like to BBQ. This sauce is so Yummy, you will devour your entree in no time flat and wish you had made enough for a second serving. I made this sauce on pork ribs for my boyfriend who has never been a "rib fan". When he was finished he said "I get ribs now", he loved them. This recipe is truely delicious.

Steps:
- Grind everything together, except for the chicken drumsticks, to a fine and thick paste in your grinder/mixer.
- Gently, make thin slits on the chicken drumsticks.
- Marinate them with the above prepared ground paste.
- Cover and refrigerate overnight{or for 24 hours}.
- Barbecue the chicken drumsticks or grill in a moderate oven for 30 minutes.
- Squeeze a little lemon juice over the grilled/barbecued chicken drumsticks.
- Garnish with green chillies and cashewnuts.
- Serve!

- In a 1 quat saucepan cook onion,garlic and gingerroot in hot oil till onion is golden brown.
- Stir in curry powder,cook for 1 minute more.
- Add barbecue sauce,paprika,salt and pepper sauce.
- Bring to a boil,reduce heat and simmer uncovered for 5 minutes.
- Remove from heat,cool slightly.
- Stir in yogurt.
- Place sauce in a blender cover and blend until smooth.
