Wassail is a delicious warm drink made up of apple cider, orange juice and lemon juice. Perfectly seasoned to warm you to the core. Wassail is perfect for cold winter days, Holiday parties and Christmas celebrations.

Number Of Ingredients 9

2 cups water
1 cup sugar
5 whole cloves
4 whole allspice
2 cinnamon sticks
1/8 tsp ground ginger
1 quart apple cider
2 cups orange juice
1 cup lemon juice

Steps:

  • In a large pot (at least 4 quarts) stir together the water and sugar and bring to a boil.
  • Boil, stirring occasionally for 5 minutes. Turn off the heat and add in the cloves, allspice, cinnamon and ginger. Let sit for at least 30 minutes.
  • At this point you can strain and remove the spices or leave them in. (I like to leave them in)
  • Add in the apple cider, orange juice and lemon juice. Stir to combine. Bring just to a boil and then turn down to low to keep warm while serving.

2 (3-inch) cinnamon sticks plus 8 for garnish
10 whole allspice
8 whole cloves
1 qt cranberry juice cocktail
1 qt apple cider
2 tablespoons sugar
1 Granny Smith apple
1 cup Calvados or apple liqueur
Special Equipment
a 6- by 4-inch piece of cheesecloth; kitchen string

Steps:

  • Wrap 2 cinnamon sticks, allspice, and cloves in cheesecloth and tie with string. Simmer cranberry juice, cider, sugar, and spice bag in a 5-quart heavy pot, uncovered, skimming froth occasionally, 10 minutes.
  • Halve apple and cut into 1/4-inch-thick slices. Add apple slices and Calvados to cider mixture and simmer 2 minutes (slices will remain crisp). Serve hot and garnish with cinnamon sticks.

2 cinnamon sticks (3 inches)
16 whole cloves
6 cups apple cider or juice
2 cups cranberry juice
1 cup orange juice
1/4 cup sugar
1 teaspoon angostura bitters
1 medium orange, quartered and sliced
1 to 2 cups rum

Steps:

  • Place cinnamon and cloves on a double thickness of cheesecloth. Gather corners of cloth to enclose seasonings; tie securely with string. Place apple cider, juices, sugar and bitters in a large saucepan. Add orange slices and spice bag. Bring to a boil. Reduce heat; simmer, uncovered, 10-12 minutes or until punch reaches desired temperature. Discard spice bag. Stir in rum.

An easy recipe for the traditional holiday drink. If you don't have a tea ball, place spice mixture on a small piece of cheesecloth and tie with a string, forming a small pouch.

Steps:

  • Mix apple cider, orange juice, lemon juice, pineapple juice, and sugar together in a large pot over medium-low heat.
  • Place cloves and cinnamon in a tea ball; add ball to the apple cider mixture. Simmer mixture until warmed through, about 15 minutes. Serve from pot with large ladle.

10 small apples
10 teaspoons brown sugar
2 bottles dry sherry or dry Madeira
1/2 teaspoon grated nutmeg
1 teaspoon ground ginger
3 cloves
3 allspice berries
1 inch stick cinnamon
2 cups superfine sugar
1/2 cup water
6 eggs, separated
1 cup brandy

Steps:

  • Core the apples and fill each with a teaspoon of brown sugar. Place in a baking pan and cover the bottom with 1/8-inch of water. Bake in a 350-degree oven for 30 minutes or until tender. Combine the sherry or Madeira, nutmeg, ginger, cloves, allspice berries, cinnamon, sugar and water in a large, heavy saucepan and heat without letting the mixture come to a boil. Leave on very low heat. Beat the egg yolks until light and lemon-colored. Beat the whites until stiff and fold them into the yolks. Strain the wine mixture and add gradually to the eggs, stirring constantly. Add the brandy. Pour into a metal punch bowl, float the apples on top and serve in 8-ounce mugs.
