CHICKPEA PASTA WITH SAUSAGE AND ESCAROLE



Chickpea Pasta with Sausage and Escarole image

Gluten-free pastas are tastiest with olive oil-based pan sauces that don't thicken too much, which can make the pasta feel gummy. Pasta with chickpeas and greens is a classic dish from the Puglia region of Italy. In our riff with chickpea pasta, we added sausage to complement the earthy flavors of the greens and noodles.

Kosher salt
One 8-ounce box dried chickpea penne
1/4 cup olive oil
8 ounces sweet Italian sausage, casings removed
1 small red onion, thickly sliced
1 medium head escarole, trimmed and coarsely chopped
1/4 teaspoon crushed red pepper flakes
1/2 cup grated Parmesan
1/2 cup grated Pecorino Romano

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta until al dente, 1 to 2 minutes shy of the package directions. Reserve 1 1/4 cups pasta water, then drain.
  • Heat a large skillet over medium heat. Add 2 tablespoons of the olive oil. Crumble in the sausage and cook until no longer pink, 2 to 3 minutes. Add the onion and cook until golden and wilted, about 4 minutes.
  • Add the escarole, red pepper flakes and 1/2 cup pasta cooking water. Cover and cook until the escarole has just wilted, 3 to 4 minutes. Increase the heat to reduce the liquid in the skillet and thicken it slightly, about 1 minute.
  • Add the pasta to the simmering sauce and drizzle with the remaining 2 tablespoons olive oil. Toss well, adding a little more of the reserved pasta water if it seems dry. Remove the skillet from the heat. Sprinkle with the Parmesan and Pecorino, toss and serve immediately.

To maximize the protein portion here I added the chick peas on a whim. This dish makes a nice any meal: lunch, snack or dinner. Enjoy!

4 (5 ounce) cans light chunk tuna in water
2 potatoes (peeled, cubed and steamed until tender)
2 carrots (diced and steamed)
1 lb chickpeas (one 16 ounce can cooked)
1 (15 ounce) can baby peas
21 ounces fat-free chicken broth (2 cans 98% fat free cream of)
1 (14 ounce) bag frozen mixed vegetables
15 ounces wide egg noodles
1 teaspoon salt (Lemon Pepper)

Steps:

  • Cook noodles to desired tenderness. Drain but do not rinse. In a very large bowl mix all ingredients until well combined. Microwave individual servings as desired.

  • Cook your pasta noodles to a fairly firm al-dente, as the noodles will continue to cook when you bake. Blanch your peas when your noodles are al dente, heat through for a couple minutes, then drain and set aside.
  • In a pot over medium heat, prepare the creamy sauce by melting the butter, then sauteing your diced onion and celery until tender and the onion is translucent.
  • Add the flour and mix to create the roux. Add a splash of water (or broth) to loosen the mixture and allow the flour to thicken.

  • Preheat your oven to 350 degrees Spray a 2-quart baking dish or 9x9 inch baking pan with nonstick cooking spray, or grease with olive oil or butter.
  • First boil the noodles until al dente, according to the directions on the package. Once done cooking, drain and set aside.
  • Cook your mushrooms: Place a large pot over medium-high heat and add in 1 tablespoon butter. Once butter melts, add in the mushrooms, onions, thyme and salt and pepper. Stir occasionally until mushrooms and onions are cooked down about 4-6 minutes. Transfer to a bowl.
  • In the same skillet you cooked mushrooms, add in 2 tablespoons of butter and place over medium heat. Once butter is melted, whisk in a little bit of the flour and then slowly add in milk, a little bit at a time, alternating with the flour and vigorously whisking away any lumps. Bring mixture to a boil, then reduce heat and simmer for a few minutes stirring every so often, until the sauce thickens up. If it gets too thick, add in ¼ cup more milk.
