3 Tbsp extra virgin olive oil
3 Tbsp lemon juice (from 1 large lemon)
1 garlic clove (pressed or minced)
1/2 tsp sea salt (or to taste)
1/8 tsp black pepper
1 1/2 cups cherry tomatoes (halved)
1 English Cucumber (halved and sliced)
15 oz chickpeas (or garbanzo beans, drained, rinsed)
1/2 medium red onion (thinly sliced)
1 avocado (sliced)
1/4 cup cilantro (chopped)
4 oz feta cheese (diced)

Steps:

  • Combine the dressing ingredients in a small bowl: 3 Tbsp olive oil, 3 Tbsp lemon juice, 1 pressed garlic clove, 1/2 tsp salt and 1/8 tsp pepper and whisk to combine (or shake them together in a small mason jar).
  • Combine remaining chickpea salad ingredients in a salad bowl, add dressing to taste (we used all of it) and toss to coat.

Here's a fantastically fresh vegetarian salad that's a meal in a bowl. Healthy fats from olive oil and protein from chickpeas make this lemony, mediterranean-flavored salad super satisfying.

Number Of Ingredients 12

1/3 cup extra-virgin olive oil, plus more if desired
3 cups chopped red onion
1/4 cup finely chopped fresh garlic
2 cans (15 ounce size) garbanzo beans, drained and rinsed
3/4 cup (packed) chopped fresh cilantro
3/4 cup (packed) chopped fresh flat leaf Italian parsley
1 1/2 cup chopped green onions (scallions), green parts only
1/4 cup fresh lemon juice
1 cup crumbled feta cheese
salt, to taste
freshly ground black pepper, to taste
1 handful chopped kalamata or black oil-cured olives, optional

Steps:

  • Heat 1/3 cup olive oil in a large frying pan and add red onion, stirring to coat it with the oil. Cook onion gently over medium or medium-low heat, stirring often, until soft and starting to brown, about 10 to 12 minutes. Stir in garlic and cook until fragrant, about one minute; don't let the garlic brown. Remove from heat and let cool. In a large bowl, stir together garbanzo beans, cilantro, parsley, green onions and lemon juice. Add cooled onion garlic mixture. Mix in crumbled feta cheese and olives (if using). Add salt and freshly ground pepper to taste (remember that the feta and olives will already be salty) and up to 1/2 cup more olive oil if desired. This salad tastes best if made ahead and allowed to sit for a few hours before serving. Serve at room temperature, with or without a drizzle of oil and/or a squeeze of lemon.

½ cup chopped celery
1 tablespoon diced onion
1 apple, cored and chopped
¼ cup chopped walnuts
¼ cup mayonnaise
1 tablespoon honey
½ teaspoon prepared mustard
¼ teaspoon lemon juice
½ head iceberg lettuce - rinsed, dried, and shredded

Steps:

  • In a salad bowl, combine the chick peas, celery, onion, apple or grapes and chopped nuts.
