If you want to taste what the Italians are so blessed with over in Italy, I suggest you give this pasta sauce a try. You won't ever go back to your plain 'ol marinara that you thought was good. This sauce here is beyond genuine and you will love it!

1 pound 80/20 ground beef OR 90/10 ground beef
6 ounce can tomato paste
6 ounce water
24 ounce jar tomato puree
5-6 cloves garlic (minced)
2 tablespoon granulated sugar
Pinch of dried oregano
Pinch of onion powder
Pinch of garlic powder
Handful of fresh basil (chopped)
Salt and pepper (to taste)

Steps:

  • In a large stockpot, saute garlic until soft and fragrant in 2 tbsp. of olive oil, about 2 minutes.
  • Throw your meat in with the garlic and brown until meat has been thoroughly cooked through, about 5 minutes. Season with salt and pepper.
  • Pour in the tomato paste, tomato puree, and seasoning, including the fresh basil and sugar. Stir to mix well. With the 6 oz. can from the tomato paste, fill that with water and pour it in the stockpot as well.
  • Let mixture simmer, uncovered, for 2 or more hours (the longer the better, but minimum 2 hours), stirring occasionally.
  • Serve hot over fresh pasta.

1 large onion, chopped, or more to taste
2 (16 ounce) cans tomato sauce, or more to taste
2 (6 ounce) cans tomato paste
ground black pepper to taste

½ cup ketchup
1 cup brown sugar
1 tablespoon prepared yellow mustard
1 tablespoon celery salt
1 tablespoon onion salt

Steps:

  • Cook and stir ground beef and onion in a large pot until beef is no longer pink, about 10 minutes. Drain excess grease.
  • Pour tomato sauce and tomato paste into the pot; season with pepper. Stir in tomato puree and ketchup. Add brown sugar, mustard, celery salt, onion salt, and garlic salt, stirring after each addition.
  • Simmer sauce over medium-low heat, stirring frequently, until flavors combine, 30 to 45 minutes. Sprinkle in Parmesan cheese during the last 5 minutes of cooking.

This is one that was recited to me out of memory alone, and described as a hand of garlic, etc., though the ingredient quantities should be accurate. I encourage buying the cheapest versions of these ingredients you can find; it will feed an army for about $15 without ruining the taste. You should add more seasonings based on preference. A great vegetarian sauce, and with meatballs...it makes great meatball sandwiches.

2 tablespoons olive oil
1 onion, chopped
1 whole head garlic, peeled and chopped
2 cups sliced fresh mushrooms
½ cup chopped fresh basil leaves, or to taste
1 (28 ounce) can whole peeled tomatoes
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
¾ cup Merlot wine
2 teaspoons salt
1 teaspoon ground black pepper
2 teaspoons dried oregano
¼ cup white sugar

Steps:

  • Heat olive oil in a large saucepan over medium-low heat, and cook and stir the onion and garlic until translucent but not browned, 6 to 7 minutes. Stir in the mushrooms and basil, and cook and stir until the basil is wilted and the mushrooms are cooked through and have given up their juices, about 10 minutes.
  • Pour in the whole peeled tomatoes, and bring the mixture to a boil, stirring and chopping the tomatoes into pieces with a spoon. Pour in the tomato sauce and stir, crushing any large pieces of tomato left, and bring to a simmer. Let the sauce simmer until slightly thickened and bubbling, stirring occasionally, about 15 minutes.
  • Stir the tomato paste into the sauce, and fill the empty tomato paste can with Merlot wine, stirring to dissolve any remaining tomato paste in the can. Pour the Merlot wine into the sauce, and stir well to combine. Bring the sauce back to a simmer, and stir in the salt, pepper, dried oregano, and sugar. Let the sauce simmer until the seasonings are blended and the sauce is heated through, about 3 more minutes.

4 tablespoons olive oil
1 onion, chopped
1 bell pepper, chopped
2 teaspoons chopped garlic
2 lbs ground beef round
1 (28 ounce) can tomatoes (28 or 32 oz)
1 (8 ounce) can tomato paste
4 (4 ounce) jars whole mushrooms, drained
3 tablespoons chili powder
2 tablespoons Worcestershire sauce

Steps:

  • Saute garlic, onion and bell pepper in oil until onion and pepper are translucent.
  • Add beef to onion-pepper mix.
  • Cook til you no longer see pink; drain well and then return to pot.
  • Add tomatoes with juice, paste, chili powder and Worcestershire; mix well.
  • Simmer for 20 minutes.
  • Add mushrooms; mix well.
  • Simmer 10 minutes longer.
  • Serve over hot pasta.
  • I like angel hair with this sauce--it gives it a unique texture.
  • I use Georgio bottled mushrooms, Del Monte Tomatoes, Hunts Paste, Lea& Perrins Worcestershire Sauce, McCormick Chili powder.
  • All the rest are fresh ingredients.
  • This is an old family recipe.
  • Once you taste it, you will never go back to any other sauce.

This is my mother's recipe for spaghetti sauce and is wonderful! It is a chunky, meaty sauce. We usually make this in two 5 quart pots and freeze them in 2-3 cup portions, great for OAMC. It uses jars of spaghetti sauce for ease and flavor, you could also purchase a warehouse sized can of spaghetti sauce and flavor to taste to cut costs. Also add more vegetables as desired and if the mixture is too thick add another jar or a can of sauce.

2 (28 ounces) can Hunt's diced tomatoes (one can is petite diced, one can is regular diced) Or you can use fresh tomatoes.
2 (15 ounce) cans Hunt's tomato sauce
2 cups of water

2 teaspoons dried parsley flakes

1/4 teaspoon ground black pepper
1/4 cup red wine
salt & pepper to taste

Steps:

  • Brown meat and Italian sausage (break it up as you stir it. You may want to heat up a little olive oil (about 2 minutes) before adding the meat...)
  • Add chopped onions to the meat mixture and continue cooking. Stir occasionally until onions are softened.
  • Next, add your diced tomatoes, tomato paste, and tomato sauce.
  • Next, mix in the spices, sugar, and garlic.

1 can(s) stewed tomatoes (14.5 oz)
1 can(s) tomato paste (6 oz)

This is my grandma's go-to sauce. I've upscaled it to a larger batch that I make in my CrockPot so I can freeze a bunch for quick meals later on. This is the one I use for my grandma's manicotti recipe.

3 tablespoons extra virgin olive oil
5 large onions
16 garlic cloves
12 ounces tomato paste
106 ounces whole san marzano tomatoes
1/2 cup sugar
1 tablespoon dried basil
1/2 teaspoon ground cloves
1 teaspoon ground pepper
1 teaspoon salt

Steps:

  • Pour olive oil in a large pan, and heat to medium high.
  • Add onions and stir until translucent.
  • Add garlic and stir until onions are golden. Watch closely so garlic doesn't burn or it will be bitter.
  • Add tomato paste, and stir constantly to slightly brown paste for additional flavor.
  • Dump contents of pan into a 6 quart or larger CrockPot.
  • Add San Marzano tomatoes by hand-crushing each tomato into CrockPot and dumping remaining contents of can into the CrockPot.
  • Add sugar, basil, cloves, salt, and pepper. Turn CrockPot to low, and cook at least 4-6 hours stirring occasionally throughout the day.
  • Check for seasoning and adjust if needed, and serve.
  • Turn off CrockPot, and let contents cool completely before packaging into freezer-safe containers and placing in the freezer.

2 tablespoons olive oil
3 whole garlic cloves, peeled
2 pig's feet
1 pound pork neck bones
2 (6 ounce) cans tomato paste
1 ½ cups water
2 (28 ounce) cans tomato puree
1 tablespoon white sugar
1 teaspoon black pepper
¾ teaspoon baking soda
1 (16 ounce) loaf fresh Italian bread, torn into 2-inch pieces
1 cup water
6 eggs, beaten
1 pound ground pork
1 pound ground veal
1 pound ground beef
1 tablespoon olive oil
1 clove garlic, minced
2 tablespoons chopped fresh basil
salt and pepper to taste
6 hard-boiled eggs, peeled

Steps:

  • Heat 2 tablespoons of olive oil over medium heat in the bottom of a large saucepan, and fry the garlic cloves 5 to 8 minutes, until brown and fragrant. Remove the garlic cloves and set aside. Place the pig's feet and pork neck bones in the saucepan and fry, turning occasionally, until the meat and bones have browned, about 15 minutes.
  • Return the garlic cloves to the saucepan, and stir in the tomato paste and 1 1/2 cups of water. Bring to a boil, and pour in the tomato puree. Reduce heat to low, and simmer for about 3 hours, stirring from the bottom often to prevent burning, until the pig's feet are tender and the mixture begins to thicken. Stir in the sugar, pepper, and baking soda. Continue to simmer while you prepare the meatballs.
  • Soak the torn bread with 1 cup of water in a bowl. Squeeze excess water out of the bread, and place the bread in a large bowl with the 6 beaten eggs, ground pork, ground veal, and ground beef. Mix thoroughly and form into 24 meatballs about 2 1/2 inches in diameter.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat, stir in the minced garlic and chopped fresh basil, let them cook for about 1 minute, and then add the meatballs. Season with salt and pepper to taste, and fry them on all sides until brown, about 15 minutes, working in batches, if necessary.
  • Place the browned meatballs, along with the oil, garlic, and basil from the skillet into the sauce, stirring lightly to avoid breaking them. Add the whole hard-boiled eggs, and simmer for about 1 1/2 more hours, until the meatballs are cooked, the sauce is thick, and all the flavors have blended.

4 ounces button mushrooms, trimmed, sliced (about 3 cups)
3 sweet Italian sausages, removed from casings (about 1 pound)
8 ounces ground beef
8 ounces ground pork
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon celery salt
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder

3 (28-ounce) cans crushed tomatoes

Steps:

  • Make the tomato sauce:
  • Heat oil in a large stockpot over medium. Add onion, garlic, and mushrooms and cook, stirring occasionally, until soft, 6-8 minutes. Crumble sausage, beef, and pork with your fingers into onion mixture. Add kosher salt, pepper, celery salt, oregano, garlic powder, and onion powder and cook, breaking up meat with a wooden spoon, until browned and cooked through, 3-5 minutes. Add tomato paste and cook, stirring occasionally, 15 minutes. Add crushed tomatoes and tomato sauce. Stir to combine, then reduce heat to medium-low and simmer, stirring occasionally, at least 3 hours and up to 8.
  • Cook the meatballs:
  • Meanwhile, combine sausage, beef, pork, onion, breadcrumbs, Parmesan, milk, kosher salt, pepper, celery salt, oregano, garlic powder, and onion powder in a large bowl, breaking up meat with a wooden spoon. Using your hands, form mixture into 1" balls and chill until sauce is ready.
  • When sauce is ready, heat 1-2 Tbsp. oil in a large skillet over medium-high. Working in batches, add meatballs (without crowding) and cook, turning frequently, until browned on all sides, about 5 minutes per batch, adding more oil as needed. Transfer meatballs to a rimmed baking sheet as you finish cooking each batch.
  • Reserve 2 cups tomato sauce, then add meatballs to remaining sauce in stockpot. If your pot is not large enough, divide sauce and meatballs between 2 pots. Cover and continue to simmer until meatballs are cooked through, 10-15 minutes.
  • Cook spaghetti and serve:
  • When meatballs and sauce are almost ready, cook spaghetti in a large pot of boiling salted water, stirring occasionally, until al dente. Drain, reserving 1 cup pasta cooking liquid, and return pasta to pot over medium-low heat. Spoon reserved 2 cups tomato sauce over pasta and toss to coat. Add pasta cooking liquid, 1/4 cup at a time, as needed to loosen sauce and coat pasta.
  • Divide pasta among plates and top with meatballs and remaining sauce. Sprinkle with Parmesan.

  • Sauce can be made, cooled, and chilled for up to 5 days or frozen for up to 3 months. Meatballs can be shaped and chilled 1 day ahead. Meatballs can be cooked in sauce, cooled, and chilled for up to 5 days or frozen for up to 3 months.

2 cans stewed tomatoes
1 (1 big) can tomato paste
1 (1 big) can tomato sauce

1 teaspoon oregano
1 teaspoon garlic powder

1/2 cup romano cheese

Steps:

  • Mix together first 10 ingredients (down to pepper) for sauce and let simmer for approx 1 1/2 - 2 hours on low, stirring occasionally.
  • For meatballs mix together remaining ingredients, brown in a little oil then cook them in the sauce.
  • Once sauce is finished add to any pasta like spaghetti or ravioli.
