1 large English cucumber, halved and sliced
2 cups grape tomatoes, halved
1 medium red onion, halved and thinly sliced
1/2 cup balsamic vinaigrette
3/4 cup crumbled reduced-fat feta cheese

Steps:

  • In a large bowl, combine cucumber, tomatoes and onion. Add vinaigrette; toss to coat. Refrigerate, covered, until serving. Just before serving, stir in cheese. Serve with a slotted spoon.

1 tablespoon finely-chopped fresh rosemary
1/4 cup balsamic vinegar
1/4 cup olive oil
1 tablespoon Dijon mustard
freshly-cracked black pepper
1 English cucumber, with peel washed (or regular cucumber)

Steps:

  • For the Dressing:.
  • Add rosemary, vinegar, and olive oil to a small saucepan. Heat for approximately 5 minutes over very low heat to blend and intensify flavors. Remove from heat. Whisk in the Dijon mustard.
  • Slice the cucumber into very thin slices. Place into a pretty bowl. Pour dressing over cucumber slices and toss to mix. Refrigerate until ready to serve.
  • Serves 4.

4 green onions, chopped
1 medium red onion chopped
1 large tomato, cubed
3-4 medium mini sweet peppers, chopped
2 medium english cucumbers, sliced thinly
1 Tbsp garlic juice, or 2 cloves minced
1/2 c apple cider vinegar
1 c extra virgin olive oil
2 Tbsp chia seeds
4 pkg zero calorie sweetener

Steps:

  • 1. These are some of the ingredients that I used in this recipe.
  • 2. These are the remaining ingredients used.
  • 3. Prep all of the vegetables into desired sizes.
  • 4. Add the olive oil and apple cider vinegar to a large bowl, then whisk together till blended. Then add in the Chia seeds and no calorie sweetener and whisk to combine.
  • 5. Now pour the salad dressing mixture over the veggies and stir to coat. Cover and allow to marinate at least an hour before you are ready to serve if time permits. Then serve and enjoy.

2 bags ready to use mesclun greens
Pinch salt
Freshly ground black pepper
Balsamic Vinaigrette, recipe follows
1 pint grape tomatoes
1 yellow bell pepper, seeded, halved and thinly sliced
1 shallot, peeled and roughly chopped
1 tablespoon chopped fresh basil leaves
1/4 cup balsamic vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 cup olive oil

Steps:

  • Toss the greens, salt and pepper together with just enough vinaigrette to coat, about 1/2 cup. Place them in a decorative bowl and top with the grape tomatoes and bell pepper. Serve the remaining vinaigrette on the side.
  • Put the shallot and basil into the bowl of a food processor fitted with a metal blade. Pulse until the shallot is finely chopped. Add the balsamic, sugar, salt and pepper and pulse again. With the machine running, add the olive oil in a steady stream through the feed tube. Pour the vinaigrette into a small bowl and serve.

This is a quick, lite cucumber salad. The balsamic vinegar adds a zing! I made this recipe because I was looking for quick healthy snack and because mom keeps telling me to eat my veggies! :) Many cucumber salads call for very thin slices which adds to prep time. Here you just dice them quickly!

2 medium cucumbers
4 tablespoons fat-free mayonnaise
1 tablespoon balsamic vinegar (or to taste)
2 tablespoons sugar (or sugar substitute)
1 teaspoon lemon juice
1 clove garlic, minced
black pepper

Steps:

  • Combine all ingredients in a bowl (leaving out cucumber).
  • Slice cucumber lenth wise into quarters, then into 1/2 inch slices.
  • (Cucumber can be cut any way, but I like bite size crunchy pieces.) Mix cucumber into dressing mixture.
  • You can marinate if you wish, but tastes great right away!

1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon light brown sugar
1 garlic clove, crushed through a press
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
3/4 cup extra virgin olive oil
1 small red onion, thinly sliced
1 large head romaine lettuce, rinsed, dried and torn into bite-sized pieces
1 large ripe beefsteak tomato, cut int eighths
1 seedless cucumber, unpeeled, thinly sliced
salt and pepper

Steps:

  • to Make Vinaigrette:.
  • In medium bowl whisk all the ingredients except the oil until mixed. Gradually whisk in the oil until smooth.
  • In a small bowl, cover the onion with iced water and let stand for 10 minutes. Drain well. (Soaking the onion removes the sharp bit).
  • In a large bowl, place the lettuce, drained onions, tomato and cucumber and add the dressing a little at a time, tossing gently and thoroughly until all the vegetables are evenly coated. Season with additional salt and pepper to taste.
  • Serve immediately on chilled salad plates.
