STUFFED EVERYTHING BAGEL PUFFS
We add everything bagel seasoning to classic pate a choux dough, then bake the dough into golden puffs topped with more everything bagel seasoning. A homemade scallion cream cheese filling turns them into the perfect bite-size brunch or party food.

- For the puffs: Position oven racks in the upper and lower third of the oven and preheat to 425 degrees F. Line 2 rimmed baking sheets with parchment.
- Combine the butter, 1/2 teaspoon salt and 1 cup water in a medium saucepan and bring to a boil over medium-high heat. When the mixture boils, immediately add all the flour at once and stir with a wooden spoon until it is fully incorporated and smooth, about 1 minute. Continue to cook, stirring constantly, until the dough pulls away from the sides of the pan, about 30 seconds more.
- Scrape the mixture into a large bowl. Using an electric mixer on medium speed, add the eggs one at a time, mixing well after each addition until completely incorporated and the mixture is thick and smooth. Add the everything bagel seasoning and mix until thoroughly combined.
- Transfer the mixture to a pastry bag fitted with a medium round pastry tip. Pipe 1-inch-wide by 1-inch-tall rounds of dough onto the prepared baking sheets, leaving about 1 inch between each. Dip your finger in water and smooth out any bumps or points on the dough rounds. Sprinkle with more everything bagel seasoning.
- Bake for 20 minutes, then reduce the oven temperature to 375 degrees F and continue to bake, rotating the baking sheets halfway through, until the dough is puffed and golden brown, 15 to 20 minutes more. Place the baking sheets on wire racks and let cool completely.
- For the scallion cream cheese: Meanwhile, pulse the scallions in a food processor, scraping down the sides with a rubber spatula as needed, until finely and evenly chopped. Add the cream cheese, sour cream, a pinch of salt and a few grinds of pepper, then continue to pulse until smooth and combined. Transfer to a pastry bag fitted with a small round pastry tip and keep at room temperature until ready to assemble.
- To assemble, poke a hole in the bottom of each bagel puff with a wooden skewer or toothpick. Gently insert the pastry tip into each hole and pipe in the scallion cream cheese. Serve immediately.

Steps:
- Preheat the oven to 375˚ F. Line a baking sheet with parchment paper. Cut the puff pastry sheet in half crosswise, then cut each half into nine 1-inch-wide strips and twist each strip a few times. Transfer to the baking sheet, brush each twist with the beaten egg and sprinkle with the everything bagel seasoning. Bake for 18 minutes, then rotate the pan and continue baking until the pastry is golden brown, another 4 minutes. Let cool.
EVERYTHING BAGEL STUFFING
Steps:
- Place an oven rack in the middle position.
- Preheat oven to 375 degrees F.
- In a 3.5 quart braiser over medium heat, melt butter. Add the onions and scallion whites. Season with salt and pepper and cook until soft, 5 to 7 minutes. Add the chives, garlic and scallion greens and cook for 2 more minutes, until the garlic is fragrant and the chives and scallions are slightly wilted. Remove from the heat and set aside.
- In a large mixing bowl, whisk together chicken broth and eggs. Add the capers if using, bagels and onion/butter mixture and fold to combine. Add additional chicken broth as needed (the bread should be well-hydrated but not mushy). Pour into the pan and bake for 30 minutes, or longer if you'd like it to be browned more on top. Remove from the oven. Garnish with remaining chives. Serve hot.
EVERYTHING BAGEL CHEESE CRACKERS

- Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
- Place the cheese, flour, everything bagel seasoning, salt and pepper in a food processor and pulse until combined. Add the butter and pulse until the mixture turns to small pea-size pieces. Continue pulsing and add the water, 1 tablespoon at a time, until the mixture resembles couscous and sticks together when you squeeze a small amount in your hand. Turn it onto a lightly floured surface and use your hands to work the mixture together into a ball of dough. Roll it out to 1/4 inch thickness and then cut out 1 1/2-inch squares. Place them 1 1/2 inches apart on your baking sheets, sprinkle with a bit more salt if you'd like and bake until they're lightly browned, about 20 minutes.

- Preheat oven to 425°. Pulse torn bagel in a food processor until coarse crumbs form. Place 1/2 cup bagel crumbs in a shallow bowl; toss with panko, cheese and pepper flakes. (Save remaining bagel crumbs for another use.), In a microwave-safe shallow bowl, microwave butter until melted. Sprinkle chicken with salt. Dip in warm butter, then coat with crumb mixture, patting to help adhere.
