How to Make Full English Breakfast with Baked Beans image

A traditional full English breakfast: a hearty way to begin the day with eggs, sausages, bacon, beans and tomatoes.

Baked beans:
250 g dried small white beans (8.8 oz, like cannellini (See note))
1 onion
1 tablespoon oil
¼ teaspoon smoked paprika
1 teaspoon sweet paprika
1 can tomatoes (400 g/ 14 oz)
1 tablespoon soy sauce
1 tablespoon sugar
2 tablespoons red wine vinegar
3 tablespoons salsa or ketchup
3 bay leaves
Fry-up
2-4 small pork sausages (depending on size and appetite)
2-4 rashers smoked streaky bacon or back bacon (depending on size and appetite)
2-4 small tomatoes (preferably plum tomatoes, depending on size and appetite)
2 large eggs
1 teaspoon oil or butter
salt and pepper
To serve
4 bread slices
ketchup
brown sauce
jam or marmalade
butter
tea (coffee)
freshly squeezed orange juice

Steps:

  • The baked bean recipe serves 4, while the fry-up serves 2. If making an English breakfast for 4 persons, double the ingredients used for the fry-up.
  • Baked beans
  • Soak the beans in plenty of water overnight.
  • Cook the beans in fresh water for about 40 minutes or until tender. The cooking times depend on the size and age of the beans, so keep checking and don't let them turn to mush. Drain well. You can use two cans of beans instead.
  • Chop the onion finely. Heat the oil in a saucepan and cook the onion until golden and softer, about 5 minutes. Add the smoked and sweet paprika and stir well for another minute.
  • Simmer: Add the chopped tomatoes and their juices, cooked beans, soy sauce, sugar, vinegar, salsa or ketchup, bay leaves, some salt, and pepper. Simmer on low heat for about 20 minutes or until the sauce has thickened slightly.
  • Adjust the taste with more salt and pepper and depending on taste with more sugar. If I make the beans with ketchup, I usually don't need to add any sugar anymore, in the case of salsa I might add a pinch more, depending on the brand of salsa I use.
  • Fry-up
  • Cook sausages: Heat a grill pan. Add the sausages and cook them on medium-low heat, turning often, until nicely browned and crispy on all sides. To make sure they are cooked through I usually cut one in the middle (the one I am eating myself afterward). Depending on the size of the sausages, cooking them might take between 10 and 15 minutes.
  • Grill tomatoes: Halve the tomatoes, lightly sprinkle the cut side with salt and cook them on the cut side until done and slightly caramelized. This should take about 10 minutes. Turn them on the other side for a minute or so at the end of the cooking process.I only have one grill pan, the one I use for the sausages as well, so I usually cook the sausages and tomatoes together. If they don't fit together in the pan, cook the sausages in a regular pan and use the grill pan for the tomatoes.
  • Fry the bacon in the same pan for a few minutes on each side, until the desired level of crispiness is achieved. Let drain on kitchen paper. If the pan is not large enough, fry the bacon after the sausages are ready, it will not take long.
  • Fry eggs: When ready to serve, fry the eggs in a little oil or butter. You can fry them to your liking, the egg yolk can be runny or set.
  • Toast the bread.
  • Serve: Arrange the beans, sausages, bacon, tomatoes on a large heated plate and place the fried egg on top. Serve with toasted bread, tea, coffee, orange juice, jam or marmalade, ketchup, and brown sauce.
  • Or you can serve the breakfast between two slices of toasted bread or toasties as suggested above.

One 14.5-ounce can white beans, drained
2 tablespoons ketchup
1 tablespoon maple syrup
1 tablespoon Worcestershire sauce
2 teaspoons whole-grain mustard
3 strips bacon, chopped
Kosher salt
Canola oil, as needed
4 large button mushrooms, halved
1 Roma tomato, sliced
2 black pudding sausage links
2 thick-cut slices brioche
4 large eggs
Freshly ground black pepper
1/4 cup arugula leaves
2 tablespoons sliced fresh chives
2 tablespoons extra-virgin olive oil

Steps:

  • For the beans: Add the beans, ketchup, maple syrup, Worcestershire, mustard, bacon and 2 teaspoons salt to a small pot, bring to a simmer over medium heat and cook for 10 minutes. Remove from the heat and keep warm.
  • Heat an indoor grill pan over medium-high heat. Brush lightly with canola oil. Arrange the mushrooms and tomatoes on the pan and sprinkle with salt. Grill until they begin to brown, about 2 minutes. Flip and cook until just heated through. Remove from the heat and set aside.
  • Add the sausage links to the pan. Cook, turning as needed, until crispy and browned on all sides and cooked through in the center, about 7 minutes. Set aside and keep warm.
  • Grill the brioche until golden brown, about 2 minutes per side.
  • Add enough canola oil to coat the bottom of a large nonstick skillet and heat over medium. Crack the eggs into the skillet and adjust the heat to low. Sprinkle the eggs with salt and pepper. Cover the skillet and cook until the whites are firm but the yolks are still runny, about 2 minutes.
  • Arrange the grilled tomatoes and mushrooms over the cooked whites of the eggs. Slide the eggs off onto a large plate. Top with the arugula leaves, sprinkle with most of the chives and drizzle with the extra-virgin olive oil.
  • Serve the black pudding and toast on a side dish and the beans in a small cast-enamel pot. Sprinkle the beans with the remaining chives.

5 breakfast sausage links
8 cremini mushrooms, stalks removed, quartered
12 to 15 cherry tomatoes on the vine
5 large eggs
Kosher salt and freshly ground black pepper
One 15-ounce can great northern beans, drained and rinsed
3/4 cup tomato sauce
2 tablespoons Worcestershire sauce
4 English breakfast teabags
5 thick slices white bread or sourdough bread
Fresh parsley leaves, for serving
Ketchup, for serving

Marmalade, for serving
Milk, to taste

Steps:

  • Cook the bacon, sausages and mushrooms in a large nonstick skillet over a medium heat, turning occasionally, until well browned, about 8 minutes. Make room in the skillet so the tomatoes can sit directly on its surface and cook for 2 minutes.
  • Create 4 "wells" in the skillet around the perimeter and one in the center. Crack the eggs into the wells and tilt the skillet around so the whites go under all the other ingredients. Cook until the eggs just start to set, about 2 minutes. Put the lid on and continue to cook until the eggs are cooked to your desired doneness, 4 to 6 minutes for runny yolks. Season the eggs.
  • Meanwhile, make the beans: Combine the beans, tomato sauce and Worcestershire sauce in a saucepan and cook over low heat until the beans are tender and flavors are combined, about 10 minutes.
  • For the tea: Put the kettle on, and when it has boiled, pour into a teapot containing 4 English Breakfast tea bags and leave to steep. Put the bread in the toaster. When toasted, cut into triangles. Stand up so the slices stay crisp.
  • To serve: Remove the lid from the skillet and tip the breakfast onto a serving board. Sprinkle over the parsley. Put the beans in a pretty bowl or handled cup.
  • Arrange the toast on the board. Put ramekins of ketchup, butter, and marmalade on the board. Add some milk to a mug or cup and pour some strong tea from the teapot, then stir.
  • Breakfast is served.

2 medium pork sausage patties
1 tomato
2 tablespoons butter, divided
2 slices bacon
¼ (16 ounce) package frozen hash browns, thawed
1 (6 ounce) package sliced fresh mushrooms
1 (15 ounce) can baked beans
1 large egg
2 slices bread
salt and ground black pepper to taste
1 sprig fresh parsley, chopped

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Brown the sausages on all sides in a frying pan over medium heat for 5 minutes. Transfer to a baking dish.
  • Bake the sausages in the preheated oven for 10 minutes.
  • Score a cross into the bottom of the tomato and place, cross-side up, in the baking dish with the sausages.
  • Bake the sausages and the tomato for 10 minutes. Turn off the oven, but do not remove the sausages and tomato.
  • Meanwhile, in the frying pan used to brown the sausages, melt 1 tablespoon of butter and fry the bacon, hash browns, and the mushrooms over high heat until the mushrooms have softened, the bacon begins to crisp, and the hash browns turn golden, about 7 minutes. Transfer to the oven to keep warm.
  • Pour beans in a small saucepan and cook, stirring frequently, over medium heat until heated through.
  • Crack egg into a skillet over medium heat. Cook until outer edges become opaque, about 1 minute. Cover, reduce heat to low, and cook until whites are completely set, about 4 minutes.
  • Toast bread and spread remaining butter over.
  • Bring together the sausages, hash browns, bacon, beans, tomato, mushrooms, fried egg, and toast on a warm serving plate. Season with salt and pepper, garnish with parsley, and serve immediately.

  • When your sausages and black pudding are ready, assemble all of the ingredients on their final plates for serving. Plates should be large enough to hold all the ingredients of a full English breakfast comfortably without everything feeling cramped.
  • Serve the breakfast with lots of fresh tea and coffee, together with a glass of fresh orange juice, its also nice to serve a glass of water with breakfast too.
  • Make sure there is a selection of jam, butter and marmalade for the toast on the table, as well as salt, pepper, tomato sauce and HP Brown sauce if you can get it.
  • Enjoy your breakfast! After all of that preparation you have earned it and this is the point where the newspapers are consumed, they are best when nobody has read them before you.
