Ingredients

1 lb ground beef
1/2 cup onion, chopped
2 garlic cloves, minced
1 tablespoon cumin
1 teaspoon chili powder
8 ounces cream cheese, softened
2 (10 ounce) cans Ro-Tel tomatoes, undrained (tomatoes with green chilies)
3 cups beef broth
1/2 cup heavy cream
2 teaspoons salt (to taste)

Steps:

In a large soup pot, brown the ground beef with the onion and garlic; drain.
Add the spices and cook a couple minutes.
Drop the cream cheese in bits into the meat. With the back of a big spoon, smash it into the meat until no bits of white remain.
Stir in remaining ingredients and heat through.

1 pound ground beef
1/2 cup onion, diced
1/2 cup green bell pepper, diced
2 cloves garlic, minced
1 tablespoon cumin
1 teaspoon chili powder
2 teaspoon sea salt
8 ounces cream cheese, softened
1 can (26-ounce) Ro-tel tomatoes, undrained
1 cup beef broth
1/2 cup heavy cream

Steps:

In a large soup pot, brown the ground beef with the onion, bell pepper and garlic; drain well. Add the spices and cook a couple minutes. Drop the block of cream cheese into the meat. With the back of a wooden spoon, smash it into the meat until no bits of white remain. Add the Ro-tel, broth and heavy cream and mix well. Simmer for 30 minutes.

1-1/2 pounds ground beef
1 large onion, chopped
1 can (15 ounces) pinto beans, rinsed and drained
1 can (14-1/2 ounces) stewed tomatoes
1 can (10 ounces) diced tomatoes and green chilies
1 can (10 ounces) chili without beans
1 pound process cheese (Velveeta), cubed
Salt, pepper and garlic powder to taste
2 cups sour cream, divided

Steps:

In a Dutch oven or soup kettle, cook beef and onion over medium heat until meat is no longer pink; drain. Add the beans, tomatoes, chili, cheese and seasonings. Reduce heat to low; cook and stir until cheese is melted. Stir in 1 cup sour cream; heat through (do not boil). Garnish with remaining sour cream.
