1 teaspoon vegetable oil
4 ounces turkey bacon, chopped
1/2 yellow onion, chopped (1 cup)
1 small green bell pepper, chopped (3/4 cup)
coarse salt and ground pepper
1 garlic clove, minced
3/4 cup rolled oats (not instant)
1 cup evaporated milk
1 1/2 pounds ground turkey (preferably 85% lean) or a blend of ground turkey thighs and breast
1 1/4 cups chili sauce (sweet) or ketchup

Steps:

  • Preheat oven to 350 degrees. In a large skillet, heat oil over medium-high. Cook bacon, stirring, until almost crisp, about 4 minutes. Add onion and bell pepper, season to taste with salt and pepper, and cook until vegetables are soft, about 3 minutes. Add garlic and cook 1 minute. Transfer mixture to a large bowl and add oats and evaporated milk. Let cool.
  • Add turkey, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 2 tablespoons chili sauce and stir well to combine. Transfer mixture to a 5-by-9-inch loaf pan and smooth top. Spread remaining chili sauce over top. Bake until meatloaf is cooked through (an instant-read thermometer inserted in center should read 165 degrees), about 1 hour 10 minutes. Let cool in pan 20 minutes before slicing.

1 1/2 cups fine chopped onions
1 tablespoon minced garlic
1 teaspoon olive oil
1 medium carrot, diced fine
3/4 cup mushroom, finely chopped in food processer
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 teaspoons Worcestershire sauce
1/3 cup finely chopped parsley
5 tablespoons ketchup
1 cup fine fresh breadcrumb (2 slices firm white bread)
1/3 cup 1% low-fat milk
1 large egg, lightly beaten
1 large egg white, lightly beaten
1 1/4 lbs ground turkey (mix of light and dark meat)
roasted red pepper tomato sauce or ketchup

Steps:

  • Preheat oven to 400 degree.
  • Cook onion and garlic in oil in a 12-inch nonstick skillet over moderate heat until onion is softened - about 2 minutes.
  • Add carrot and cook, stirring, until softened, about 3 minutes.
  • Add mushrooms, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Cook stirring occasionally, until liquid, mushrooms gives off is evaporated and they are tender, 10 to 15 minutes.
  • Stir in Worcestershire sauce, parsley and 3 tablespoons Ketchup.
  • Transfer Vegetables to a large bowl and cool.
  • Stir together bread crumbs and milk in a large bowl.
  • Let stand 5 minutes.
  • Stir in egg and egg white.
  • Add to vegetables.
  • Add TURKEY and remaining 1/2 teaspoon salt and 1/4 teaspoon pepper to the Vegetable mixture.
  • Mix well with hands (mixture will be very moist).
  • Form into a 9-by 5-inch oval loaf.
  • Put into lightly oiled 13 x 9 x 2 inch metal baking pan.
  • Brush meatloaf lightly with remaining 2 tablespoons ketchup.
  • Bake in the middle of oven 50 to 55 minutes--until meat thermometer reads 170 degrees.
  • Let meatloaf stand 5 minutes before serving.

1 teaspoon vegetable oil
4 ounces turkey bacon, chopped
1/2 yellow onion, chopped (1 cup)

1 1/2 cups sweet chili sauce or 1 1/2 cups ketchup

Steps:

  • Preheat oven to 350. In a large skillet, heat oil over medium high heat. Cook bacon, stirring until almost crisp (4 min). Add onion and bell pepper, season to taste with salt and pepper and cook additional 3 minutes. Add garlic and cook 1 minute.
  • Transfer mixture to a large bowl & add oats and evaporated milk.
  • Let cool.
  • Add turkey, 1/2 tsp salt, 1/2 tsp pepper and 2 TBSP chili sauce (or ketchup) and still well to combine.
  • Transfer mixture to a 5x9 loaf pan and smooth top.
  • Spread remaining sauce (ketchup) over top.
  • Bake 1 hour 10 minute until instant read thermometer reads 165.
  • Let cool in pan 10 min before slicing.

2 teaspoons plus 1/4 teaspoon freshly ground black pepper
4 slices bacon, cut in half
2 tablespoons white or red wine vinegar
1/2 cup canned tomatoes, chopped or crushed
2 tablespoons butter
1 large onion, chopped
1 rib celery, finely chopped
1/2 red bell pepper, finely chopped
2 teaspoons minced garlic, plus 1 teaspoon
1 teaspoon chopped thyme leaves
1 teaspoon chopped rosemary
1/3 cup chopped fresh parsley
2 eggs
1 1/2 teaspoons Dijon mustard
1/2 cup ketchup, plus 1/4 cup
2 tablespoons plus 1 teaspoon Worcestershire sauce
1/2 cup Heavy cream
2/3 cup Breadcrumbs
1 pound ground chuck
1/2 pound pork sausage (such as breakfast sausage)
1/2 pound ground veal
1 1/2 teaspoons salt

Steps:

  • In a large skillet heat the butter over medium-high heat until melted. Add all but 1/4 cup of the onions, the celery and all but 2 tablespoons of the bell pepper and cook, stirring occasionally, until vegetables are softened and beginning to caramelize around the edges, about 6 minutes. Add 2 teaspoons of the garlic, the thyme, rosemary, and parsley and cook for 2 minutes. Remove from the heat and allow to cool.
  • Preheat the oven to 350 degrees F.
  • When the vegetable mixture is cooled, transfer to a mixing bowl and add the eggs, mustard, 1/4 cup of the ketchup, 1 teaspoon of the Worcestershire sauce, and heavy cream and mix until thoroughly combined. Add the breadcrumbs, ground chuck, pork sausage, ground veal, 1 teaspoon of the salt and 1/4 teaspoon of the pepper and mix until just combined. Do not overmix. Transfer meat mixture to a 9 by 5 by 3-inch loaf pan and using your hands, form mixture into a loaf shape. Arrange the slices of bacon on the top of the meatloaf and set aside.
  • In a small saucepan combine the remaining 1/4 cup of chopped onion, remaining 2 tablespoons of green pepper, remaining teaspoon of garlic, remaining 1/2 cup of ketchup, remaining 2 tablespoons of Worcestershire sauce, remaining 1/2 teaspoon of salt, remaining 2 teaspoons of pepper, vinegar, and canned tomatoes and bring to a boil over medium-high heat. Cook until thickened, about 5 minutes.
  • Pour the sauce over the uncooked meatloaf and bake for 45 minutes to 1 hour, or until the bacon and sauce are slightly caramelized on the top of the meatloaf. Remove from the oven and cover loosely with aluminum foil. Let stand for 10 minutes before serving. Slice and serve along with the Macaroni with 4 Cheeses.

1/2 cup chopped yellow onion
1/2 cup plain bread crumbs
1/4 cup chopped celery
1/4 cup chopped red or green bell pepper
1 large egg
1/4 cup ketchup
2 teaspoons minced garlic
2 teaspoons Baby Bam, recipe follows
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Make sure the oven rack is in the center position and preheat the oven to 375 degrees F. place the turkey in a large mixing bowl. Add the onion, bread crumbs, celery, bell pepper, egg, 1 tablespoon of the ketchup, the garlic, Baby Bam, salt, and ground pepper, and mix with your hands until the ingredients are well incorporated. Pour the remaining 3 tablespoons of ketchup on the turkey and smear evenly over the top with the back of a spoon. Bake until brown on top, cooked through, and an instant-read thermometer inserted into the center reaches 165 degrees F, about 45 to 50 minutes.

2 slices soft white sandwich bread, torn into small pieces (about 2 cups)
1/2 cup whole milk
1 1/2 pounds ground turkey
2 large eggs, lightly beaten
1/4 cup grated Parmigiano-Reggiano cheese
8 thin slices pancetta, finely chopped
1/2 onion, finely chopped
3 cloves garlic, chopped
1/4 cup ketchup, plus more for drizzling
1 cup loosely packed flat-leaf parsley leaves, chopped
1/2 teaspoon dried oregano
1/4 cup Italian-seasoned dry breadcrumbs
1/4 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the bread and milk in a large bowl and soak for 10 minutes. Add the turkey, eggs, cheese, pancetta, onion, garlic, ketchup, parsley, oregano, breadcrumbs, salt and pepper. Mix well with your hands. Shape into an 8-inch-by-5-inch loaf and transfer to a rimmed baking sheet. Bake for 15 minutes. Reduce the heat to 325 degrees F and drizzle more ketchup all over the top of the loaf. Bake until a meat thermometer inserted into the center of the loaf reads 165 degrees F, about 45 minutes. Let the meat loaf rest for 10 minutes, then transfer to a platter and serve.

3/4 cup quick-cooking oats
1/2 cup skim milk
1 medium onion, peeled
2 pounds ground turkey breast
1/2 cup chopped red bell pepper
2 eggs, beaten
2 teaspoons Worcestershire sauce
1/4 cup ketchup
1/2 teaspoon salt
Freshly ground black pepper
1 (8-ounce) can tomato sauce

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small bowl, stir together the oats and milk. Thinly slice 1/4 of the onion and set aside. Finely chop the remaining onion. In a large bowl, combine the turkey, oat mixture, chopped onion, bell pepper, eggs, Worcestershire sauce, ketchup, salt and a few grinds of pepper. Mix just until well combined.
  • Transfer the mixture to a 9-by-13-inch baking dish and shape into a loaf about 5 inches wide and 2 1/2 inches high. Pour the tomato sauce over the meatloaf and sprinkle with the sliced onions. Bake for about 1 hour or until an instant-read thermometer registers 160 degrees.F.
  • Remove from the oven and let rest for 10 to 15 minutes before slicing.

1 cup onion, chopped
3 garlic cloves, minced
1 1/4 lbs ground turkey
1/2 cup breadcrumbs
1 egg (or 1/4 cup egg substitute)
3/4 cup catsup
2 teaspoons Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Melt butter in a skillet.
  • Cook onion and garlic in melted butter for 5 minutes, stirring occasionally.
  • Place mixture in a large bowl to cool for 5 minutes.
  • Combine turkey, bread crumbs, egg, 1/4 cup of the katchup, Worcestershire sauce, salt, and pepper with onion mixture.
  • Press meatloaf into an 8x4-inch loaf pan.
  • Spread remaining catsup on top.
  • Bake in a 350 degree oven for 50-55 minutes.
  • (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.

  • Saute butter, onion, celery, and bell pepper until carmelized.
  • Add garlic, thyme, rosemary, and parsley. Cook 2 minutes. Cool in a mixing bowl.
  • Preheat the oven to 350°F.
  • To mixing bowl with vegetables, add eggs, mustard, 1/4 cup ketchup, Worcestershire, and cream. Mix.
  • Add breadcrumbs, meat, salt, and mix with hand just until combined. Do not overmix.
  • Form into 9 x 5 x 3-inch loaf pan. Set aside.
  • Combine 1/2 cup ketchup and 1/4 cup of brown sugar (or to taste).
  • Poke holes into the meatloaf and drizzle the topping over it, allowing it to seep into the meat.
  • Cut bacon slices in half, lengthwise, and place in strips over the top of the meatloaf.
  • Bake for 45 minutes and until the sauce is slightly caramelized on the top.
  • Remove from the oven and tent with foil. Let it stand about 10 minutes before serving.
  • I serve it with scalloped potatoes.

1 egg
15 -17 saltine crackers, crushed
1 cup cheddar cheese, finely shredded

Steps:

  • Preheat oven 400.
  • Combine all ingredients except cheddar cheese in large bowl and mix well.
  • Separate half of mixture and smooth out in loaf pan. Sprinkle 1 cup of the cheddar cheese and top with remaining part of meat mixture and smooth.
  • Bake for 1 1/2 hour. If desired sprinkle 1/2 cup of cheddar cheese over top of loaf for the last 10-15 minutes.
