Roasting strawberries concentrates their natural sugars for a sweeter, deeper and richer strawberry flavor! The berry juices and maple syrup combine, forming a sticky, thick syrup with floral vanilla notes that's equally valuable.

Number Of Ingredients 6

2 pints fresh strawberries (1.5 pounds or about 4 cups sliced )
1-2 tablespoons maple syrup (or honey, date syrup, sugar, or another sweetner of your choice)
1 vanila bean (or 1 tablespoon of vanilla bean paste)
1 cinnamon stick (optional)
3 fresh thyme sprigs (optional)
pinch kosher salt

Steps:

  • Pre-heat oven to 350 F degrees.
  • Rinse and hull strawberries. Leave tiny ones whole, halve or quarter the rest so they're all roughly the same size and cook at about the same rate. Add strawberries to a baking dish.
  • Add maple syrup (or sweetener of choice), vanilla, cinnamon sticks and thyme (if using or other spices of choice) to baking dish with strawberries. Toss to coat strawberries evenly.
  • Bake for 20 min, stirring once along the way.
  • Enjoy straight out the oven or store in an airtight container in the refrigerator.

2 pint baskets strawberries, stems removed
3 tablespoons sugar
1 tablespoon freshly ground black pepper
2 tablespoons balsamic vinegar
Ice cream or whipped cream, for serving

Steps:

  • Rinse the strawberries in cool water, place in a colander or strainer and shake off most of the water. Slice strawberries about 1/8-inch thick, place them in a large bowl, and sprinkle them with the sugar. Cover and refrigerate for at least 1 hour, and up to 4 hours. Preheat oven to 375 degrees. Toss strawberries with the black pepper, add the balsamic vinegar, and put the strawberries and all of their juices into a large saute pan or a large ovenproof dish. Roast for 8 to 10 minutes, until the juices are bubbling and the strawberries are hot but not mushy. Divide among individual dishes and serve immediately, with ice cream or whipped cream if desired.

32 ounces whole strawberries, washed and drained (about 7 cups; 910g)
3 1/2 ounces plain or lightly toasted sugar (about 1/2 cup; 100g)
1/8 teaspoon Diamond Crystal kosher salt; for table salt, use about half as much by volume
1/2 ounce freshly squeezed lemon juice (about 1 tablespoon; 15g)
1 empty vanilla pod, reserved from another project (see note), or 1 drop vanilla extract
1/4 teaspoon rose flower water (about 1ml)

Steps:

  • Adjust oven rack to the middle position and preheat to 375°F (190°C). Slice off the strawberries' leafy caps, removing as little fruit as possible. Leave small and medium berries whole, but cut the largest ones in half. Toss with sugar, salt, and lemon juice in a 2-quart glass or ceramic baking dish. Add the empty vanilla pod, if using.
  • Roast, stirring once or twice along the way, until the berries are fork tender and swimming in bright red juice, about 30 minutes. If you didn't use a spent vanilla pod, stir in one drop of vanilla extract along with the rose water, taking care not to crush the tender berries. Serve warm, or refrigerate to use as a jammy syrup. In an airtight container, the roasted fruit and syrup can be refrigerated up to 2 weeks.

1 1/2 pounds firm strawberries, hulled and quartered
Pinch of coarse sea salt, preferably gray salt
1 1/2 tablespoons freshly squeezed lemon juice
1/2 cup sugar

Steps:

  • Toss the strawberries with the salt, lemon juice, and sugar. Pour into a cast-iron skillet 10 inches wide or larger and set the skillet on the hearth grate or nestle the skillet right in the embers as long as the fire is not too hot. You can also put the skillet over the grate in your fire pit. After 3 minutes, toss the berries in the pan, and then return the pan to the grate or embers. The berries are done when they are soft and syrupy, after about 5 minutes.

2 cups (1 pint) fresh strawberries, hulled and halved
6 tablespoons sugar
3/4 cup all-purpose flour
1/4 teaspoon kosher salt
4 tablespoons (1/2 stick) cold unsalted butter, cut into very small pieces
2/3 cup cream cheese, softened slightly
1 teaspoon fresh lemon juice
1/4 cup confectioners' sugar, plus extra for dusting (optional)
2 English muffins, halved and toasted

Steps:

  • Adjust an oven rack to the middle position and preheat the oven to 350°F. Line a rimmed sheet pan with parchment paper and set it aside.
  • Toss the strawberries and 2 tablespoons sugar in a medium-size bowl. Turn the strawberries out onto the prepared sheet pan and turn them all cut side up. Roast until they are soft and juicy, about 20 minutes. Remove from the oven and return the strawberries to the bowl. Discard the parchment paper and set the sheet pan aside.
  • Meanwhile, whisk the flour, remaining 3 tablespoons sugar, and the salt in a medium-size bowl. Add the butter pieces and, with your fingers, work the butter into the dry ingredients until the mixture forms a sandy streusel with some chunky pea-size pieces.
  • In a separate medium-size bowl, stir together the cream cheese and lemon juice. Place the confectioners' sugar in a sieve and sift it into the cream cheese; stir until smooth. Reduce the oven temperature to 325°F.
  • Divide the cream cheese mixture among the toasted English muffin halves, spreading it evenly. Make a well in the center of the cream cheese mixture and add some strawberries to it, then sprinkle the streusel around the edges of the cream cheese-topped muffin halves.
  • Return the sheet pan to the oven and bake until the streusel becomes golden, 12 to 15 minutes. Remove from the oven and cool slightly before serving. Dust with more confectioners' sugar, if you like.
