GRILLED CHICKEN AND APPLES WITH ROSEMARY
I got this recipe from a cookbook years ago, and it remains one of my all-time favorite chicken recipes. The meat is so juicy and flavorful, and the apples taste like baked apples. It is such an easy meal to prepare and so delicious.

Steps:
- Combine juice, vinegar, oil, rosemary, salt, and pepper in a shallow baking dish or bowl.
- Add chicken and apples; marinate in refrigerator for at least 30 minutes.
- Cook chicken on a hot grill (or broiler) for about 20 minutes or until no longer pink, brushing several times with marinade.
- Cook apples on grill (or under broiler)for last 6 minutes or so, until crispy-tender.

APPLE AND LEMON CHICKEN

Steps:
- Preheat the oven to 180C (360F).
- Cut some nice slits in each chicken breast.
- Season with salt and pepper on chicken.
- Pour the rice wine.
- Now, peel off the apple and cut in abour 4x4 cubic sizes and grind in blender well.
- Mix well the apple, lemon juice and honey in a small bowl.
- Prepare at least 4~5 cm deep oven dish and put the chicken and cover with this sauce on each chicken breast. (You can use foil.).
- Sprinkle Rosemary and Thyme on the top.
- Put it in the oven about 20~30 min depends on the chicken.
- And change to grill setting and leave about 5~10 min to make nice color.

CHICKEN AND APPLE SKILLET SUPPER

Steps:
- Sauté apples, onion and thyme in 2 tsp of the oil in skillet over medium-high heat, just until tender crisp; about 4 minutes.
- Remove from skillet and set aside.
- Cook chicken in remaining 2 tsp oil in skillet for 2 to 3 minutes or until golden brown, turning once during cooking.
- Reduce heat to medium-low.
- Set aside 1 tbsp apple juice; pour remaining apple juice into skillet along with vinegar.
- Cover and simmer until chicken is no longer pink inside; about 6 to 8 minutes.
- With slotted spoon, remove chicken from skillet and keep warm.
- Combine cornstarch with reserved apple juice; stir into skillet and cook over high heat, stirring and scraping up any browned bits on bottom of pan, until thickened; about 2 minutes.
- Return apple mixture to skillet and heat through; add salt and pepper to taste.
- Spoon apple mixture over chicken.
- Serve with egg noodles or rice.

CHICKEN AND APPLE EMPANADAS
This is a fabulous recipe that can be made as an appetizer, hors d'ouevre or even a main course. Kids absolutely adore these and they get a lot of goodness in them.

Steps:
- Pre-heat oven to 200C/400°F.
- Fry apple, garlic and onion in the butter until soft. Add thyme, salt and pepper, honey and chicken. Allow to cool slightly and mix in the cheddar.
- Roll out the puff pastry until about 2-3 mm thick. Using a glass cut out circles of the pastry. Roll the scraps and keep making circles until you've little to no pastry left.
- Place about a tablespoon of filling on each circle and seal the edges with egg wash and use a fork to press down to seal.
- Brush with egg wash and bake for about 25 minutes or until golden brown. You can deep fry these as well, but you will only need to fry for about 3-4 minutes.
