ELLEN'S PURPLE GREEN BEANS
When I received purple beans instead of green ones I didn't know what to do with them until a JAP member told me that they were just like green beans and would turn green during cooking. So here is the result.

- 1. Wash beans thoroughly and drain. Place in a large saucepan with enough water to cover the beans. Bring to a boil. Reduce heat to medium-low.
- 2. Add bacon, onion, salt and pepper. Cover and simmer for 2 hours, making sure water covers beans and doesn't evaporate.

- In a large nonstick skillet, heat oil over medium-high heat. Add onion, and cook, stirring occasionally, 2 minutes. Add garlic, and cook 2 minutes more. Add escarole, and stir slowly, allowing it to wilt slightly. Add chicken stock, thyme, and salt; reduce heat to medium-low. Simmer for 15 minutes. Stir in the beans, and continue to simmer until most of the liquid is absorbed and the greens are tender, 3 to 5 minutes. Remove from heat. Serve warm, garnished with grated Parmesan cheese.

- Boiling. Boil a pot of water — you'll want to fill the pot with enough water so the beans are covered. When the water begins to boil, add the beans. Boil the beans for about 6 to 8 minutes until desired tenderness.

- Roasting. "I always roast string beans with oil, salt and pepper," says registered dietitian Alex D'Elia, RDN, founder of Olox Nutrition. Preheat the oven to 400 to 425 degrees Fahrenheit.
