CHERRY-ALMOND COUSCOUS

4 pieces scallions, chopped (save green part for garnishing)
3 cups couscous
2 tablespoons virgin olive oil
1/3 cup dried cherries
1/3 cup toasted almond slices or slivers
3 cups boiling water
Salt and black pepper to taste

Steps:

  • Mix scallion whites, couscous, olive oil and cherries. Boil water and add exactly 3 cups to bowl and quickly stir together. Immediately cover bowl with plastic wrap. Let stand 30 minutes. With a fork, fluff couscous, add almonds and check for seasoning.

SWEET ALMOND MILK COUSCOUS



Sweet Almond Milk Couscous image

2 1/2 cups almond milk
1/3 cup sugar
Pinch of salt
1 cup regular or whole wheat couscous
2 teaspoons grated or minced lemon or orange zest
1 teaspoon ground cardamom
1/2 to 1 teaspoon rosewater, optional
1 cup sliced or chopped almonds
1/4 cup shelled pistachios, optional
1 cup chopped dried apricots

Steps:

  • Bring almond milk, sugar and salt to boil in a pot; add couscous, zest, and cardamom; cover and cook for 1 minute, then turn off heat and let sit for 5 minutes.
  • Fluff couscous with a fork and sprinkle on the rosewater, if using. Add nuts and apricots, and gently combine. Serve warm or at room temperature.
  • Sweet Couscous with Citrus Salad: Make the couscous with mixed citrus zest - a little lemon, orange, lime or grapefruit - and omit nuts, cardamom and rosewater. Let it cool to room temperature and serve topped with a cup of orange, tangerine or grapefruit segments (or a combination) tossed with 3 tablespoons chopped mint leaves.

2 cups couscous
¼ cup extra virgin olive oil
3 sprigs leafy fresh mint chopped
2 cups chicken stock
3 ounces flaked almonds
3 sprigs fresh parsley chopped

Steps:

  • 1. Mix couscous with olive oil and mint in a large bowl. 2. Bring chicken stock to a boil in a small saucepan and pour over the couscous. 3. Cover with clingwrap and allow to stand for twenty minutes, undisturbed. While is couscous is standing, toast the almonds in the oven until golden brown. 4. Using a large fork, fluff up the couscous and sprinkle with the parsley and toasted almonds, before serving with the lamb shanks.

2 tablespoons unsalted butter
1 cup whole blanched almonds.
1 teaspoon ground cumin
1/4 teaspoon ground turmeric
1/2 teaspoon ground coriander
1/2 teaspoon sweet paprika
1 teaspoon sea salt
3 cups chicken stock or vegetable stock
Salt and freshly ground black pepper
1 1/2 cups couscous

Steps:

  • To prepare the almonds, heat the butter in a saute pan over medium heat until it is melted and bubbling. Add the almonds, cumin, turmeric, coriander, paprika, and salt. Saute until the almonds start to brown and the spices smell very fragrant, 4 to 5 minutes. Let cool.
  • To prepare the couscous, heat the stock in a saucepan over high heat until boiling, then season with salt and pepper. Place the couscous in a large bowl, pour the hot stock over the couscous, and cover with foil. Let stand until the stock is absorbed, about 5 minutes.
  • Meanwhile, coarsely chop the cooled almonds. When the couscous has absorbed the stock, fluff with a fork, add the almonds, and mix well. Season, to taste, with salt and pepper. Serve warm or at room temperature.

red onion , halved and sliced
425ml hot chicken stock (from a cube is fine)
pinch saffron strands, optional
1 fat red chilli , sliced
500g couscous
2 x 20 packs coriander , leaves only
50g toasted whole almond
handful dates , roughly chopped (we used medjool dates)
juice ½ lemon

Steps:

  • Heat some oil in a roasting tray and then add the onions and fry for about 5 mins until just softened. While you're frying, add the saffron strands to the stock if using, so the flavour and colour infuses. (If you are making the Fragrant chicken too (see 'Goes well with') use the same pan to add flavour to this dish and leave the juices in there, but you can tip out some of the chicken fat if you like).
  • Tip the chilli into the tray, fry for 1 min more, then take off the heat. Add the couscous and stock, then cover with cling film for 10 mins. Once the couscous has absorbed all the stock, quickly chop the coriander (if you chop it too soon it will start to wilt), then fork it through the couscous with the almonds, dates and lemon juice and serve straight away. To serve cold, leave to cool, then add the chopped coriander just before eating.

1 cup couscous
boiling water
1/2 cup parsley, chopped
1 green onion, diced
1 tomatoes, diced
1/2 red pepper, diced (or yellow or orange)
1/2 cup feta, crumbled
1/4 cup almonds, whole
3 tablespoons olive oil
salt and pepper, to taste
ground fresh chili paste, to taste

Steps:

  • Boil water.
  • Pour couscous into a soup bowl. Add enough boiling water to cover couscous completely (even a bit more, depending on the type of couscous you have) and cover the bowl with a plate. Set aside for 8 minutes.
  • Chop parsley, green onion, tomato, and pepper.
  • When couscous is done (tender), scoop it into a bigger bowl and fluff it with a fork. Add chopped ingredients and mix together.
  • Add crumbled feta and whole almonds and stir to blend everything together.
  • Add olive oil and salt and pepper, and stir well once again.
  • Serve on two plates and add ground fresh chili paste as you eat, according to your taste! Enjoy!

1 cup whole milk
1/2 cup blanched almond, very finely chopped (or ground)
4 tablespoons butter
1 1/2 cups couscous
salt
1/4 cup raisins
1/4 cup dried apricot, chopped
1/4 cup dates, chopped
1/4 cup sugar (to taste)
1/2 teaspoon ground cinnamon (to taste)

Steps:

  • Combine the milk and almonds in a saucepan with a lid and bring to a boil over medium/high heat.
  • Turn off the heat, cover and let sit while you proceed with the recipe.
  • Put 2 tablespoons of the butter in a medium saucepan and turn heat to medium/low.
  • When butter melts, add the couscous and cook stirring for 1 minute.
  • Add 2 1/4 cups water and a pinch of salt.
  • Bring to a boil, then turn heat down very low.
  • Cover and cook until all the liquid is absorbed, about 7-12 minutes.
  • While the couscous is cooking, soak the raisins, apricots and dates in warm water.
  • Pour the couscous into a large serving bowl and stir in the remaining butter along with the drained fruit.
  • Fluff the couscous and break up any lumps.
  • Add the sugar and cinnamon and stir and taste to adjust seasonings if needed.
  • Strain the almond milk and pour over the couscous and serve.
