Another way to make use of this versatile plant. You'll get about 5l of syrup. It makes a very nice homemade give away and refreshing drink. The preparation may take some time, but it is absolutely worth it! It's best to use a very large pot or even a thoroughly cleaned bucket.

Number Of Ingredients 6

30 elderflower heads
3 oranges
1 lemon
3 liters water
100 g citric acid (powdered)
4 kg sugar

Steps:

  • Cut oranges and lemon in slices (wash thoroughly before using).
  • Dissolve citric acid powder in the 3 litres of water.
  • Add cleaned elderflower heads, orange and lemon slices to water.
  • Let rest for 3 days.
  • Add 4kg of sugar and stir from time to time.
  • Let rest for another day.
  • Strain contents through a kitchen towel/mousselin and transfer to sterile glass bottles (you can save up some empty wine bottles, rinse them with boiling water and put them in the hot oven for about 1 hour at 150°C).

  • Add the lemon slices and elderflower blossoms to a large heat-safe pot or large jar with a lid that's at least 2 litres (8 cups) in size.
  • In a separate pot, add the sugar, water and citric acid and let the mixture come just to a boil (make sure all the sugar has dissolved).
  • Pour the sugar syrup slowly over the lemons and elderflower blossoms and stir well to combine.
  • Let the mixture come to room temperature and cover with a lid (make sure the lid is airtight, so use plastic wrap if necessary).

  • Tea. For relief from colds or flu, pour boiling water over fresh or dried flowers and steep in a covered container for 10 minutes. Mix in a spoonful of local honey and feel those pesky symptoms ease as you breathe in this steamy sweet beverage.
  • Tincture. The flowers can be tinctured in alcohol for use as an herbal remedy for various ailments. Just place crushed dried flowers in a jar, cover with 60% alcohol, and let sit in a cool dark place for 3 to 4 weeks, shaking daily.
  • Salve for Inflammation Relief. Use a salve or lotion made from the blossoms to reduce inflammation and pain from sprains and strains. You can incorporate other healing herbs such as calendula, comfrey, or st. John’s wort for additional support.
  • Soothing Eye Wash. Make an eye wash for relief from itchy eyes, conjunctivitis, or hay fever. Just make a batch of elderflower tea, let cool, and rinse!
  • Syrup. A syrup for fighting off colds, flus, and winter blues can be made with flowers of the elder tree as well as the berries. Or combine them for maximum benefit and flavor!
