The strong muscat scent of elderflower not only works well with gooseberries but also raspberries with these these melt-in-the-mouth jellies

150ml (1/4 pt) elderflower cordial
5 leaves gelatine, soaked in cold water
150g (5oz) raspberries

Steps:

  • Place the cordial in a small saucepan and heat gently to just below boiling point. Remove from the heat, squeeze the excess water from the soaked gelatine leaves and add to the cordial, stirring until the gelatine is completely dissolved. Pour into a bowl and add 300ml (1/2 pt) cold water. Stir well and when cold, chill in the fridge for 1-2 hours, checking regularly until it starts to thicken- you want it to be thick enough to hold the raspberries without them floating to the top.
  • When the jelly is thickened but not set, stir in the raspberries and divide between the glasses. Return to the fridge and leave for 4-5 hours or overnight until completely set. Serve with a scoop of vanilla ice-cream and some extra raspberries.

Many jams call for a squeeze of citrus, such as lemon, to balance the sweetness of the fruit, but vinegar can bring the same acidity with a more neutral flavor. In this jam, a small bit of red wine vinegar balances the sweetness but lets the strawberries be the star.

1 1/2 pounds strawberries, hulled and quartered (or chopped if large)
1 cup sugar
2 teaspoons red wine vinegar
Pinch of salt
1/3 cup elderflower liqueur

Steps:

  • Combine the strawberries, sugar, vinegar and salt in a medium saucepan or Dutch oven. Toss well and let stand until the strawberries are juicy and the sugar is moistened, about 20 minutes.
  • Add the elderflower liqueur to the pan and bring to a boil over medium-high heat, stirring. Reduce the heat to maintain a simmer; cook, stirring and skimming off any foam, until the juices become glossy, thick and syrupy and the fruit is very soft, 25 to 30 minutes. If the berries are still in large pieces after about 20 minutes, gently mash with a rubber spatula or potato masher. Remove from the heat and let the jam cool to room temperature, stirring occasionally, about 1 hour.
  • Transfer the jam to a jar or other airtight container. Refrigerate until cold and fully jelled, at least 2 hours. Store in the refrigerator for up to 2 weeks.

4 tbsp hot water
100ml elderflower cordial
punnet of raspberries
sparkling white wine

Steps:

  • Soak gelatine leaves in cold water. Dissolve the gelatine in a measuring jug in the hot water from the kettle. Add the elderflower cordial and top up with sparkling white wine to make 450ml of liquid in total. Drop a few raspberries into six tall glasses and fill to about a third with the elderflower syrup. Leave to set completely, then add a few more raspberries and some more elderflower syrup. Repeat again until the glasses are nearly full to the top.
