Steps:

  • Heat olive oil in a medium stockpot over medium-high heat. Add onions and cook until they soften. Add the bay leaves, carrot, split peas, and water. Bring to a boil, then reduce to a simmer. Simmer for 25 minutes, or until the split peas have softened but still have a bite. Season with salt to taste. Add more water if the soup is too thick.
  • Puree the soup, reserving about ¼ of the soup for a chunkier consistency. Heat through, taste for salt.
  • Stir in lemon juice, if using, and a few grinds of black pepper. Serve.

1kg gammon or ham hock
200g split peas , soaked overnight
2 onions , roughly chopped
2 carrots , roughly chopped
2 bay leaves
1 stick celery , roughly chopped
300g frozen peas
crusty bread and butter, to serve

Steps:

  • Put the gammon in a very large pan with 2 litres water and bring to the boil. Remove from the heat and drain off the water - this helps to get rid of some of the saltiness. Recover with 2 litres cold water and bring to the boil again. Put everything but the frozen peas into the pan and bring to the boil. Reduce to a simmer and cook for 1½-2½ hrs, topping up the water as and when you need to, to a similar level it started at. As the ham cooks and softens, you can halve it if you want, so it is all submerged under the liquid. When the ham is tender enough to pull into shreds, it is ready.
  • Lift out the ham, peel off and discard the skin. While it is still hot (wear a clean pair of rubber gloves), shred the meat. Remove bay from the soup and stir in the frozen peas. Simmer for 1 min, then blend until smooth. Add a splash of water if too thick, and return to the pan to heat through if it has cooled, or if you are making ahead.
  • When you are ready to serve, mix the hot soup with most of the ham - gently reheat if made ahead. Serve in bowls with the remaining ham scattered on top, and eat with crusty bread and butter.

1 cup chopped yellow onions
2 cloves garlic, minced
1/8 cup good olive oil
1/2 teaspoon dried oregano
1-1/2 teaspoons kosher salt

1 cup medium-diced red boiling potatoes, unpeeled (3 small)
1 pound dried split green peas
8 cups chicken stock or water

Steps:

  • In a 4-quart stockpot on medium heat, saute the onions and garlic with the olive oil, oregano, salt, and pepper until the onions are translucent, 10 to 15 minutes. Add the carrots, potatoes, 1/2 pound of split peas, and chicken stock. Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking. Add the remaining split peas and continue to simmer for another 40 minutes, or until all the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper. Serve hot.

4 cloves garlic, finely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • For the soup: Heat the EVOO in a soup pot over medium heat. Add the onions and garlic. Season with salt and pepper and cook until tender, 8 to 10 minutes. Add the stock and peas, bring to a boil, then reduce heat to a simmer and cook until just tender, 20 minutes. Remove half the soup and puree with the mint and parsley until smooth in a food processor or high powered blender. Return the puree to the pot, and stir in the lemon juice. Taste and adjust the salt and pepper. Cool and store for a make-ahead meal.
  • For the flatbread: Arrange the flatbread on a wire rack over a baking sheet, spray with the olive oil on both sides and season with salt and oregano. Roast in the oven to toasted and crisp. Store at room temperature in an airtight container.
  • Reheat the soup over medium heat. Serve the soup garnished with feta crumbles and a light sprinkle of cumin and paprika, a drizzle of EVOO and flatbread chips.

8 cups water
1 tablespoon olive oil
1 small yellow onion, diced (1 heaping cup)
2 garlic cloves, minced
1 small Yukon gold potato, finely diced (1 heaping cup)
1 10-ounce bag (2 cups) of frozen sweet corn
4 cups vegetable broth
2 cups cooked green split peas
2 cups diced zucchini
¼ teaspoon smoked paprika
½ teaspoon sea salt
½ cup milk of choice (unsweetened plain if using plant milk)
1 teaspoon lime juice
Chives, corn kernels, and olive oil for topping
2 cups finely diced kale
2 cups cooked green split peas
1 4.5-ounce can chopped mild fire roasted green chiles, drained
1 and ½ cups shredded Monterrey jack cheese, split into 2 bowls
¼ cup minced red onion
1 tablespoon lime juice

Steps:

  • In a large pot, sort through green split peas for any hard debris or rocks. Rinse split peas with water until the water runs clear.
  • Add fresh water and bring split peas to a low boil over medium heat. As soon as they boil, reduce the heat to medium-low and let the lentils simmer for 25-30 minutes or until no longer crunchy.
  • Drain excess water and allow split peas to cool.
  • In a soup pot, combine oil, diced onion and minced garlic, and sauté on medium heat for a few minutes until fragrant.
  • Add in finely diced potatoes, frozen corn, and vegetable broth. Raise the heat to medium-high until the soup comes to a boil and reduce the heat to a strong simmer, about medium heat. Cook until the potatoes are tender, about 10 minutes.
  • Add in cooked green split peas, diced zucchini, smoked paprika, and salt. Simmer for an additional 5-7 minutes until zucchini is slightly cooked but not overly soft.
  • Add in milk and lime juice, stirring well to incorporate. Taste and adjust seasonings.
  • Serve with chives, additional corn kernels, and olive oil for topping.
  • Preheat the oven to 375.
  • Mix together the filling of diced kale, green split peas, green chiles, half of the cheese, minced red onion, lime juice, and salt.
  • Spread 1 cup of tomatillo salsa into the base of an 8x8 pan. Scoop about ½ cup of filling into the center of a tortilla and roll gently, placing the seam side down in the pan. Continue until all of your filling is used up, about 12 enchiladas, and then cover the enchiladas with the additional cup of salsa and additional cheese.
  • Bake at 375 for 20 minutes until browning and bubbly. Let cool slightly and top with avocado, baby tomatoes and cilantro before serving.
  • Preheat the oven to 375 degrees, and grease a rectangular baking dish with olive oil.
  • Using a vegetable peeler or a mandoline slicer, create thin lengthwise slices of squash.
  • In a mixing bowl, stir together cooked green split peas, ricotta, and mozzarella. If using packaged ricotta, stir in 1 tablespoon garlic powder, 2 teaspoons Italian seasoning, and ½ teaspoon salt.
  • Dollop the mixture into a slice of the squash and roll it up. Place it in the baking dish. Repeat until you've used up your filling, about 15 roll ups.
  • Slather the tops of the zucchini roll ups with pesto, and top with the halved baby tomatoes.
  • Bake at 375 for 20-25 minutes, until hot. Let rest 5 minutes and serve with a green salad.

From Super Food Ideas July 2008. Though I have listed chicken stock as per recipe I used a homemade ham stock. This bought back memories of New Years Eve parties that my parents used to have and there was always pots of mushy peas served. UPDATE- after making this several times now I have found the cooking time will vary between 25 to 45 minutes - I can only put it down to the split peas and that they may vary from packet to packet.

1 tablespoon olive oil
1 large brown onion (finely chopped)
2 garlic cloves (crushed or minced)
1 1/4 cups dried split green peas (dried peas rinsed)
2 cups chicken stock
2 cups water (cold)
2 tablespoons lemon juice
125 g bacon (rashers shortcut rind removed)
1/2 teaspoon paprika (to serve)
4 crusty bread rolls (to serve, I used bacon and cheese)

Steps:

  • Heat oil in a saucepan over medium high heat and add onion and garlic and cook stirring for about 3 minutes till onion is soft.
  • Add peas and stir to coat.
  • Add stock and cold water and bring to the boil.
  • Reduce heat to low and simmer partially covered for 25 to 45 minutes or until peas are tender (see note above).
  • Remove from heat and process half the soup in a blender or use a stick blender till smooth or do what I did and put the stick blender straight into the pot and process to your liking.
  • Return to pot or if you just used the stick blender, stir in lemon juice and cook for 3 minutes or until heated through.
  • While soup was cooking in the first 25 minutes, heat a frying pan over medium high heat and add bacon and cook till crisp or use recipe #208501 .
  • Transfer to a plate lined with paper towel and drain.
  • Crumble into pieces.
  • Ladle soup into bowls and top with crumbled bacon and paprika and serve with a roll.

1 large ham bone
2 cups dried split green peas
2 large carrots, peeled and diced small
2 medium onions, chopped small
2 large celery ribs, include leaves, chop small
1 large bay leaf
2 beef bouillon cubes
1 teaspoon salt
1/4 teaspoon black peppercorns, crushed
1 pinch dried thyme

Steps:

  • Rinse peas well in cold water and add to a large cooking pot.
  • Measure 8 cups of water and add to cooking pot.
  • Bring to boil, remove from heat, cover and let sit for 1 hour.
  • Return to stove and bring back to boil.
  • Add ham bone, carrots, onions, celery, bay leaf, beef bouillon, salt, peppercorns and dried thyme.
  • Reduce heat to simmer, cover and cook for about 1 to 1 1/2 hours, stirring occasionally.
  • Remove ham bone and cut off any remaining ham, cut into bite size pieces and return to soup.
  • Discard ham bone.
  • If there are big pieces of ham in the soup, remove, cut into bite size pieces and return to soup.
  • Remove bay leaf and discard.
  • Adjust seasonings to taste.
  • If you desire a smooth soup, then puree' in batches in a food processor or blender.
  • Or eat the soup without puree'ing.
  • If soup is too thick, add more water to your desired consistency.
  • Beef broth or chicken broth may be added, just reduce the water by the amounts used.
  • Smoked ham hocks are excellent to use instead of a ham bone.
  • If there is not enough ham on the ham bone, then add additional ham of your choice.
  • You may also use about 1/4 teaspoon of Liquid Hickory Smoke, to get a smokey flavor.
  • You may also use whole peas, but it will take a bit longer to cook these peas so that they are tender.

4 stalks celery, diced
⅓ white onion, diced
½ large carrot, shredded

ground black pepper to taste

Steps:

  • Melt butter and oil in a Dutch oven over medium-low heat. Add celery, onion, carrot, and salt. Cook and stir until tender, about 5 minutes. Stir in peas and garlic. Nestle ham bone into the pot; add stock and diced ham. Fill pot with water to about 1 1/2 inches from the top. Mix and bring soup to a boil.
  • Reduce heat to low and cover. Simmer, scraping the bottom of the pot and stirring every 30 minutes, until peas are mostly disintegrated, about 2 1/2 hours. Turn ham bone and skim surface for fat once every hour. Take bone out, remove any meat, and return meat to the pot. Season with salt and pepper.

This split pea soup recipe is my favorite! I probably say that a lot, but this is just so perfect for rainy days or cold nights. Comforting and so filling. We eat this dish with rice, but it also goes really well with sweet potatoes or white potatoes. I suggest that you put on your rice or potatoes before you begin the rest of the recipe. 1 small onion, finely diced
2 celery stalks, finely sliced
2 carrots, diced
3 small potatoes, cubed
2 teaspoons smoked paprika
1 teaspoons onion granules
1 clove garlic, crushed
2 teaspoons curry powder (no added salt or oil)
2 cups green split peas
8 cups water (or 1:1 veggie stock to water)
Juice of 1 lemon
Cooked rice or potatoes
Large handful of chopped parsley
Black pepper
Chili flakes
Lemon juice

Steps:

  • Place the onion, celery, carrots, potatoes, paprika, onion granules, garlic, and curry powder in a nonstick pot.
  • Sauté over medium-high heat, stirring occasionally, for 3 to 5 minutes or until the onions and celery are translucent. Add water 1 to 2 tablespoons at a time as needed, to keep the vegetables from sticking to the pan.
  • Add the spilt peas and water and/or stock. Cover the pot, turn the heat to medium, and simmer for 30-40 minutes until spilt peas and potatoes are soft.
  • Add the juice of 1 lemon.
  • Serve with rice or potatoes. Garnish with parsley and an additional squeeze of lemon, some pepper, and chili flakes.

  • Fry the onion in a little butter and cook for 2 minutes. Add the other vegetables and the potato and cook a few minutes more.
  • Pour in the hot stock and the split peas. Bring to a simmer and let them cook for 40 to 50 minutes under a lid or until the peas are cooked through.
  • Take the soup from the heath and mix well. Season if necessary but be careful with salt as the bacon is already quite salty. Add the smoked bacon cubes and let the soup stand for about 15 min with the lid on before serving so the smokey taste of the bacon can infuse the soup.
