Time 1h30m

Number Of Ingredients 23

2 tbs olive oil
1 cup medium grain rice
1 cup brown lentils
2 cups small macaroni noodles ((uncooked))
2 cups vegetable stock
1 garlic clove (, quartered)
1 tsp cumin
1 bay leaf
1/2 teaspoon salt
Salt to taste
For the Sauce:
2 tbsp olive oil
1 small onion (diced finely)
2 cloves garlic (finely minced)
1 15 oz can plain tomato sauce (cooked/pureed tomatoes)
2 tsp baharat spice blend
1/4 teaspoon red chile flakes ((omit if you don't like it spicy hot))
1 tbs red wine vinegar
Salt & pepper to taste
Crispy Onion Garnish:
2 large onions (, very finely sliced)
Oil for deep-frying
1 15 ounce can garbanzo beans (, rinsed and drained)

Steps:

  • Heat 2 tablespoons of olive oil in a medium saucepan over medium-high heat. Add the rice and fry it for 2 minutes, then add the vegetable stock. Bring it to a boil, decrease the heat to low, cover and simmer for 15 minutes or until the rice is cooked.
  • Rinse the lentils under cold water and add them to another medium saucepan with 2 cups of water. Add the garlic, cumin and bay leaf and bring it to a boil. Reduce the heat to low, cover and simmer for 20-30 minutes or until the lentils are tender. Once cooked, add the salt and stir to combine. Strain any excess liquid if necessary.Cook the macaroni according to package instructions until al dente.Note: Prepare the rice, macaroni and lentils while the sauce is simmering and leave them covered in the pots to keep warm.
  • To make sauce: Heat the oil in a medium saucepan over medium-high heat and add the onion. Cook until soft and translucent, about 5-7 minutes. Add the garlic and saute until golden brown. Add the tomato sauce, baharat, salt and pepper to taste, chile flakes (if using) and red wine vinegar. Bring it to a simmer, reduce the heat to low, cover and simmer for 20 minutes, stirring occasionally.
  • To make the crispy onions, heat the oil in a skillet. Add the onions and fry until dark brown. Using a slotted spoon, remove them from the oil and place them on paper towels to drain and cool.
  • Add the rice, lentils and macaroni to a large bowl and toss to combine (or simply scoop out desired amounts of each onto the plates). Sprinkle a little baharat over each portion and serve topped with some of the spicy tomato sauce. Top with garbanzo beans, the crispy onions and another sprinkle of baharat. Serve warm.

EASY ONE POT LENTILS AND RICE

Easy One Pot Lentils and Rice image

I made this for dinner tonight, and the whole family loved it. I make lentils and rice quite often in a million and one different ways, and never with a recipe, but decided to post this one for safe keeping so that I can make it this way again. I served this as a rice ring (with easy glazed carrots and raisins in the middle). I had no onions on hand, but this would be excellent with carmelized onions on top. You may need to use a little more or less water depending on the age of your lentils. I used 6 1/2 cups, and it was perfect. I hope you enjoy this as much as we did!

Categories     One Dish Meal

Time 45m

Yield 6-8 serving(s)

Number Of Ingredients 9

1 cup dry green lentils
6 1/2 cups water
4 -5 garlic cloves
1 -2 bay leaf
1/2 tablespoon cumin seed
1 pinch cinnamon
2 cups basmati rice
1/2-1 tablespoon kosher salt
1 tablespoon olive oil

Steps:

  • Cover the lentils with the water.
  • Peel and crush the garlic cloves lightly with the back of a knife. Leave the cloves whole, so that they flavor the dish but can be removed if desired. (I leave them out of the kids' portions, and give them to my DH and myself).
  • Add garlic to the pot, along with the bay leaves, cumin seeds and cinnamon. (DO NOT add salt at this point, as lentils will not cook properly).
  • Bring to a boil. Cook at a boil until the lentils are just tender. This should take about 25 minutes, but may take longer dependig on the age of your lentils.
  • Add the rice, salt and olive oil, and bring back to a boil.
  • Stir, cover pot, reduce heat to low, and cook for 15 minutes.
  • Check to make sure the rice is done, adjust seasonings, and serve. If there is still too much liquid in the pan, just let it sit uncovered for a few minutes.
  • Enjoy!

DIANA'S EGYPTIAN LENTILS & RICE

Diana's Egyptian Lentils & Rice image

Easy. Healthy. Vegan. Crockpot. Yummy. How can you *not* want to make this? Credit goes to "Diana in Wisconsin" of the Simple Living Discussion Forums. The amount of servings depends on whether you're making this as a main dish or a side.

Provided by Roosie

Categories     One Dish Meal

Time 8h15m

Yield 4-6 serving(s)

Number Of Ingredients 8

1 cup brown lentils
3/4 teaspoon salt
4 1/2 teaspoons olive oil
1 onion, chopped
1/2 teaspoon cinnamon
1 tablespoon ground cumin
1/2 cup rice
5 -6 cups homemade vegetable stock or 5 -6 cups chicken stock

Steps:

  • Place the olive oil into the bottom of the crock pot.
  • Turn the pot onto the highest setting and add the onions.
  • Allow the onions warm in the oil for 10-15 minutes.
  • Add the remaining ingredients, including the water.
  • If cooking the dish all day, reduce heat to low, otherwise leave on high setting.
  • Cover.
  • Stir the dish while in the crock- If it is dry, add a little water- If it's soup-like, remove lid for a little while, or turn heat to high setting.
  • It's tasty as a main meal or as a pilaf to accompany other meals- Cook for 8 hours on low or 4-5 on high.
  • NOTE: Start with 5 cups water or broth- That way it won't be"mushy" if you make this recipe while you're out for the entire day- You can always add more water or broth, but it's hard to"un-mush" lentils& rice!
  • Note for Vegetarian do NOT use chicken broth.

KUSHARI - EGYPTIAN RICE LENTILS AND TOMATOES

Kushari - Egyptian Rice Lentils and Tomatoes image

I saw this dish being made on a travel/food program so the measurements are a bit of a guess. I would say this would be about 6 serves. The tomato sauce is quite vinegary. If you a seasoned cook you could cook the lentils, rice and macaroni all together adding the ingredients at the right time so everything finishes cooking at the same time. I like to add a good sprinkle of chilli oil just before serving.

EGYPTIAN LENTILS RICE AND MACARONI

Egyptian Lentils Rice and Macaroni image

Although a vegetarian dish, this gets eaten with reckless abandon by carnivores. it sounds way too healthy (and it is) but dang! it is GOOD. try it. give about 45 minutes from start to finish. If you don't have cooked brown rice lying around, start that first and foremost. (This is modified from a recipe from joy of cooking and embellished with touches I figured out from an Egyptian restaurant in Washington DC).
