1 lb fresh green beans, trimmed & rinsed
1 tablespoon olive oil
1 small onion, diced
3 garlic cloves, minced
3 ounces tomato sauce
1/2 teaspoon cumin
1 teaspoon paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon oregano
1/4 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper
4 tablespoons finely chopped parsley

Steps:

  • In 3 qt saucepan, saute onion in olive oil until tender, about 5 minutes, over medium heat.
  • Add minced garlic, stir & cook 30 seconds.
  • Add green beans, turn heat to high and stir quickly for about 1 minute.
  • Add tomato sauce and enough water to almost cover beans.
  • Add parsley, cumin, sugar, salt and pepper.
  • Cover pot and simmer on medium heat for about 25 minutes.
  • If it seems too watery, cook uncovered for 10 minutes. There should be about 1/3 to 1/2 the amount of liquid you started with.

1 pound fresh green beans, trimmed
2 tablespoons olive oil
1 onion, chopped
1 clove garlic, chopped
1 tablespoon chopped fresh parsley
1 (14.5 ounce) can diced tomatoes including juice
1 tablespoon white wine vinegar
1 teaspoon ground cumin
1 pinch white sugar, or to taste
salt and ground black pepper to taste
1 tablespoon olive oil
1 clove garlic, chopped

Steps:

  • Bring a pot of lightly-salted water to a boil; stir in the green beans and return to a boil. Reduce the heat to medium, and cook the green beans until just tender, about 8 minutes. Drain.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat; cook and stir the onion, 1 clove of garlic, and parsley in the hot oil until the onion is translucent, about 5 minutes. Stir in the tomatoes, wine vinegar, and cumin; bring the mixture to a boil, reduce heat to medium-low, and simmer for 30 minutes to thicken the sauce. Transfer the sauce to a bowl.
  • In a clean skillet, heat 1 tablespoon of olive oil over medium-low heat; cook and stir 1 clove of chopped garlic in the hot oil until fragrant beginning to brown, 2 to 3 minutes. Return the cooked green beans to the skillet; cook and stir to reheat the beans and coat them with oil. Pour the sauce over the beans and stir to coat. Serve hot.

1 small sweet onion, chopped
1 large garlic clove, minced
2 tablespoons olive oil
1 (8 ounce) can tomato sauce
1 tablespoon sugar
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 tablespoon red wine vinegar
1 tablespoon chopped fresh parsley

Steps:

  • Cook green beans in boiling water to cover 5 to 10 minutes or to desired degree of doneness; drain and set aside.
  • Saute onion and garlic in hot oil in a large skillet over medium-high heat 5 minutes or until onion is tender.
  • Add tomato sauce and sugar; cook, stirring often, 5 minutes. Add green beans, salt, pepper, and vinegar; cook 5 minutes. Sprinkle with parsley, and serve immediately.

2 tablespoons olive oil
1 onion, diced
3 tablespoons chopped garlic, or to taste
salt to taste
1 (28 ounce) can crushed tomatoes (such as San Marzano®)
1 (12 ounce) bag thin green beans, trimmed
1 teaspoon white sugar
⅛ teaspoon ground cinnamon

Steps:

  • Heat olive oil in a skillet over high heat; cook and stir onion, garlic, and salt in the hot oil until onion is softened and browned, about 15 minutes.
  • Mix tomatoes and green beans into onion mixture. Add sugar and cinnamon to mixture; bring to a boil, lower heat to medium-low, cover, and simmer until green beans are tender, 20 to 25 minutes.

2 tablespoons olive oil
2 cloves garlic, crushed
2 pounds fresh green beans, cut into 1-inch lengths
3 cups canned diced tomatoes with their juice
1 tablespoon chopped fresh chives
3 tablespoons pine nuts
2 tablespoons lemon juice
1 bay leaf
salt and pepper, to taste

Steps:

  • Heat oil in a large saucepan over medium heat. Add garlic; cook and stir until fragrant, about 2 minutes. Reduce heat if garlic begins to brown. Add green beans, then continue to cook and stir until bright green but not quite tender, about 4 minutes.
  • Mix in tomatoes, lemon juice and pine nuts, and season with chives, bay leaf, salt and pepper. Bring to a boil, stirring often. Reduce heat and simmer gently uncovered for 25 to 30 minutes. Remove and discard bay leaf before serving.

Green beans and tomatoes are a terrific combination which I found out when my BF and I ordered this dish at a middle eastern restaurant a few years ago. It can be found in Italian cuisine as well but I prefer the middle eastern (Lebanese) variety. This is a meatless version which I adapted from a recipe off the internet and like to serve over rice or couscous, making a light meal or more substantial side dish. The idea is to cook until the beans are in between soft and crisp so they have a nice consistency that goes well with the tomatoes. If you have no problem with inauthenticity, sprinkle with parmesan cheese too and you'll get the best of both worlds.

1 cup long grain rice, cooked according to package directions
3 tablespoons olive oil
1 onion, finely chopped
1 lb green beans, trimmed and cut in half
