BAKED EGGS WITH TOMATOES (UOVA AL PIATTO CON POMODORI)
This is a great dish to make for brunch or a light supper. It comes from a fabulous book called The Italian Cooking Encyclopedia by Hermes House publishing company.

Steps:
- Heat the oil in a shallow flameproof dish.
- Add the onion, and cook until soft and golden.
- Preheat the oven to 375 degrees F.
- Add the tomatoes to the onions, and cook for 5-10 mins., or until the tomatoes are very soft.
- Stir in the chopped basil.
- Break the eggs, one at a ime, and slip them into the dish in one layer on top of the tomatoes.
- Season with salt and pepper. Dot with butter.
- Cover the dish, and bake in the oven for 7-10 minutes or until the egg whites have just set, but the yolks are still soft.
- Serve at once.
- Variation: sprinkle 2-3 tbsp of freshly grated Prmesan cheese over the eggs before baking.

The first dish my Mom taught me. Since I imigrated to North America, I've tasted numerous omelets, scramble eggs, poached eggs, but this egg dish is unique in its own and is still my all time favorite. Enjoy.

Steps:
- Beat eggs together; season with salt and pepper, and add the"white" part of the green onion and sesame oil.
- Mix well.
- Add oil to the pan; turn up the heat.
- Add the egg mixture.
- break the egg into pieces.
- Toss and cook until the eggs are almost done.

- Take out the egg.
- Add more olive oil to the pan and cook the tomatoes.
- Season the tomatoes and add the rice vinegar and sugar; cook until the you can smell the tomatoes.
- Put the egg mixture back to the pan.
- Add the"green" part of the green onion.
- In a little bowl, mix corn starch with aliitle more than 1 tsp of water
- Toss.
- Serve hot.

CREAMY RICOTTA EGG CASSEROLE WITH FRESH TOMATOES
This is so easy to make and a bit different that the "generic" egg casserole dish. They are absolutely wonderful; creamy with just a hint of heat and fresh herbs and a tomato topping. This does need some time to cook, but easy. This will serve about 4-6 people depending on what else you are serving. Some pan seared potatoes and maybe some bacon or grilled sausage would be great with this. And don't think just breakfast. I served this with chicken sausage, potato hash, and fresh fruit, for a perfect dinner.

- Eggs -- In a large bowl, mix all the ingredients except for the tomatoes and chives. Mix well until everything is combined. Pour into a 13x9 pan sprayed with a non-stick spray or Pam.
- Bake -- In a 350 degree oven, middle shelf, bake for 45-55 minutes. To see if it is done, test like you would a cake -- stick a knife in the center to make sure it comes out clean.
- Then turn on the broiler, remove your dish and top with the tomato slices and plenty of salt and pepper. Broil 2-3 minutes until the tomatoes soften slightly and the top is lightly brown. Remove from the oven and cover with foil to let it rest. A good 10 minutes before serving.
- Serve -- Sprinkle with the fresh chives before serving. I don't try to cut this, but rather just spoon it. They are absolutely wonderful and creamy, and a nice change from traditional scrambled eggs. Add some potatoes, bacon or sausage and you have a wonderful meal. ENJOY!
ITALIAN EGG AND TOMATOES
A tasty and budget friendly meal that's inspiration comes from a local Italian restaurant. Prep time and cook time do not include making or grilling the polenta. As I use Parmesan cheese polenta I have made the night before and therefor just slice and grill it. You could also buy and use pre-made polenta although to me it has less flavor.

- Heat olive oil over medium heat and add diced onion sauteing till pale give or take about 3 minutes. Add garlic and diced tomatoes and heat for about 2 minutes. Season to taste with salt and pepper.
- Break eggs into skillet and cook for 2 minutes. Top each egg with slice of provolone. Cover skillet and reduce heat to low. Simmer 3 to 5 minutes or untill eggs are firm with soft centers and cheese has melted.
- Carefully spoon tomatoes and egg into two flat soup bowls and place two slices of grilled polenta into each of the two bowls on outer edge.

This is something my mom used to make when I was a kid. Its got a couple variations listed to make it easier for those of us that like to slack. This is an Assyrian breakfast that is very tasty and I can even get my daughter and boyfriend to eat it and they hate veggies of all kinds.

- Dice the yellow onion half into tiny tiny bits on one plate, and dice the tomato into small pieces on another plate. (Yes this dish makes a bit of a mess if you want to substitute the tomato you can use a can of diced tomatoes instead you will use a proportional amount to the number of eggs you are making).
- Put olive oil in the pan, you will want to cover the bottom of the frying pan, this is going to saute the onion, tomatoes and eggs so make sure it coats the bottom. You can also use 3 table spoons of butter for this (no one said this recipe was healthy) .
- Put in the onions and saute them until they are soft, add Seven Spices (this is also called allspice), paprika, salt and pepper to taste. Usually you want to sprinkle it across the pan, but don't use too much allspice cause it has a strong flavor.
- After you have mixed the onions and seasonings together, mix in the tomatoes. Saute these for about a minute making sure to mash the tomato pieces. It makes more sauce that way and brings out the flavor).
- Add eggs and cover the frying pan.
- Cook until egg whites are cooked but egg yolks are still a bit runny and you are done!
- Uncover, put in a plate and eat with bread! Pita bread is usually best but sliced bread works too :)
