EGGPLANT CASSEROLE

4 tablespoons olive oil
1 pound eggplant, cut into 1/2-inch dice
1 red pepper, cut into 1/2-inch dice
4 ribs celery, cut into 1/2-inch dice
1 onion, chopped into 1/2-inch dice
1/2 cup chopped fresh basil leaves
1 cup grated Parmesan
1/2 cup heavy cream
1 cup Italian seasoned bread crumbs
Salt and pepper

Steps:

  • Preheat an oven to 375 degrees F.
  • In a large saute pan over medium-high heat, add the olive oil. Add the eggplant and cook halfway through. Add red pepper, celery, and onion and cook for 3 to 4 minutes, or until vegetables begin to wilt. Add the basil leaves. Remove from heat. Add Parmesan, cream, bread crumbs and salt and pepper. Toss to combine.
  • Place skillet in the oven and cook until heated through, about 20 minutes. Serve with grilled lamb chops.

I found this on cooks.com. It is not the standard eggplant casserole. It is quiche like. Cooking time includes cooking the eggplant, and the green pepper and onion mixture. This makes a large casserole. I modified it to my family's tastes. I could not list the pizza seasonings blend I used in place of the dried oregano. It is a mixture of oregano, basil, thyme, rosemary, marjoram and garlic. I used it in place of the dried oregano and used 1 tsp verses the 1/8 tsp.

4 cups eggplants, pared and cubed
1/2 cup onion, chopped
1/4 cup green pepper, chopped
2 tablespoons butter
1 tablespoon flour
1 (10 3/4 ounce) can condensed cream of chicken soup
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon oregano, dried
1/4 teaspoon black pepper
3 eggs, beaten
1 large tomatoes, peeled and chopped
2 cups sharp cheddar cheese, shredded

Steps:

  • Cook eggplant, covered, in salted water, until just tender.
  • Drain well.
  • In saucepan, cook onions and green pepper with butter until just tender.
  • Blend in flour. Stir in soup and seasonings.
  • Heat and stir until bubbly.
  • Remove from heat.
  • Stir about half the mixture into beaten eggs.
  • Return to saucepan.
  • Fold in tomatoes, cheese and eggplant.
  • Bake in buttered casserole at 350 degrees for 35 minutes.

LUBY'S BAKED EGGPLANT CASSEROLE

I was looking for the Luby Eggplant Casserole, and a Luby relative offered this recipe to someone. I wrote and asked if they'd share, and this is the recipe. I've never eaten at Luby's, but I'm told this is their recipe.

1 medium eggplant (Peeled and diced)
0.5 (10 3/4 ounce) can cream of chicken soup or 0.5 (10 3/4 ounce) can cream of celery soup
1 cup whole kernel corn
1 medium yellow onion (diced)
1 large fresh tomato (diced)
1 cup bacon, small Pieces
1/4 cup margarine
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
4 ounces shredded American cheese (about 4 slices)
1 (16 ounce) packet Mexican cornbread mix
shredded cheddar cheese (to garnish)

Steps:

  • Bake Mexican cornbread per packet directions. Cut into halves after baking as you will only use 1/2 (approx 8x4x1").
  • Note: If you know how to make Mexican cornbread from scratch, it's better than the individual packets, but the packets will do. Slice bacon into small 1/8-1/4" pieces and fry in a deep skillet until almost done (brown but not crispy).
  • Dice eggplant, onion, and tomato into 1/4-1/2" pieces.
  • Add first onion to skillet and saute about 5 minutes on med-low. Add eggplant, tomato, salt, pepper, garlic powder, corn, margarine and saute another 5-7 minutes. Everything is now becoming transparent and starting to mesh together nicely.
  • Add chicken or celery soup, mix in, then add American cheese and stir until cheese has fully melted into mixture.
  • Take half the cornbread you baked, crumble it, and stir into the mixture. Pour into 9x3" round casserole dish or comparable square one and cover with foil.
  • Bake at 350°F for 40-50 minutes or until internal temperature is 165°F Remove foil and cover with shredded cheddar for final 10 minutes of baking. Do not let cheddar turn dark.

2 cups eggplants, cubed
1 onion, sliced
1 tablespoon olive oil
3 tablespoons margarine
fresh ground pepper
125 g shredded cheddar cheese
1 cup milk
1 cup cracker crumb
2 eggs, beaten

Steps:

  • Preheat oven to 180°C.
  • Heat oil in saucepan.
  • Sauté eggplant and onion until soft.
  • Remove saucepan from heat and stir through margarine until melted.
  • Add remainder of ingredients, and combine well.
  • Transfer to a casserole dish, and bake until golden and bubbling, approx 45 minutes.

2 cups eggplants, chopped
1/2 cup celery, chopped
1/2 cup bell pepper, chopped
1/2 cup onion, chopped
1 (10 3/4 ounce) can cream of mushroom soup
1 (4 ounce) jar pimientos
2 eggs
1/2 cup butter
1 (6 ounce) package Stove Top stuffing mix
salt and pepper
2 cups cheddar cheese, shredded

Steps:

  • Melt butter.
  • In large bowl, mix together eggplant, celery, bell peppers, onion, soup, pimientos, eggs, butter (melted) salt and pepper to taste.
  • Add Stove Top, mixing everything together thoroughly.
  • Place in 9 x 13 casserole, coated with nonstick cooking spray.
  • Top with shredded cheese.
  • Cover with tinfoil and bake at 350 for one hour.

After I picked the first ones I went looking for a recipe to use them in but all of the recipes I found in my cookbooks were very labor intensive and fed 6 to 8 people its just my wife and I. So I started going through my pantry and put this together it was great.

1 lb of sliced eggplant (slice 3/8 - 1/2-inch thick)
1 (8 ounce) container of sliced baby bella mushrooms (slice the same as the eggplant)
1/2 of a 3-inch dia white onion, sliced thin
3 tablespoons salted butter
1 (14 1/2 ounce) can hunt's diced tomatoes with basil, Garlic and Oregano
1 (15 ounce) can Hunts tomato sauce
shredded parmesan romano & asiago cheese
1 (8 ounce) container cottage cheese
3 tablespoons of diced garlic
1 cup Italian seasoned breadcrumbs
1 (5 ounce) package of shredded parmesan cheese

Steps:

  • Place the sliced eggplant in a bowl and coat with table salt to drain off fluids.
  • at room temp for 30 minutes.
  • MIX: The diced tomatoes, the tomato sauce, the 7oz of Parmesan Romano & Asiago Cheese, the 8oz of cottage cheese, the 3 tablespoons of garlic then set aside.
  • Rinse off eggplant and mix with baby bellas and onion.
  • Butter sides and bottom of casserole dish then layer in
  • eggplant mixture with sliced butter, sauce mixture, and bread crumbs and top with the shredded Parmesan.
  • Bake at 325 deg for 1 hr and 15 mins or until the Parmesan is golden brown and the internal temp is 145 deg. Let cool about 10 - 15 mins before serving.
