ROASTED EGGPLANT PASTA

Roasted Eggplant Pasta image

6 ingredient roasted eggplant pasta in a rich tomato sauce. This pasta dish is filled with satisfying flavor and can be served with your favorite gluten free or vegetable pasta! Simple & delicious.

Provided by Bethany Kramer

Categories     Main Course

Number Of Ingredients 8

1 large eggplant, (cut into cubes)
1 small yellow onion, chopped ((or half of a large onion))
1-2 Tablespoons oil
1/2 teaspoon garlic powder
2-3 cups tomato sauce
1 16 oz. box of pasta noodles ((see notes))
salt & black peppers
fresh basil (*optional)

Steps:

  • Preheat oven to 400F.
  • Roast eggplant and onions: arrange sliced onions and diced eggplant on a sheet pan and toss with oil, garlic powder, and a generous pinch of salt & pepper. Roast for 20-25 minutes - flip halfway through roasting time.
  • Cook pasta: bring a pot of well-salted water to a boil. Cook pasta as box instructs. I like to cook the noodles until they are al dente in texture! Tip: al dente means "to the tooth" - the pasta should have a bite to it and not be too soft.
  • Heat sauce: In a sauce pan, simmer the marinara on low to heat up. Fold in roasted eggplant and onions to sauce when they're finished cooking.
  • Serve: Serve pasta noodles with eggplant and marinara sauce, chopped fresh basil, and parmesan cheese!

PASTA ALLA NORMA (TOMATO AND EGGPLANT PASTA)

Pasta Alla Norma (Tomato And Eggplant Pasta) image

Pasta Alla Norma is a traditional Sicilian pasta dish made with eggplant/aubergine, tomatoes, basil and cheese. It's perfect for those nights when you want a healthy and filling vegetarian home cooked dinner, but without any fuss.

Provided by Helen

Categories     Main Course

Time 35m

Number Of Ingredients 12

4 tablespoons olive oil
1 medium eggplant ((aubergine) cut into small cubes (about 1cm²))
4 garlic cloves (crushed or sliced)
1/4 teaspoon crushed chilis ((or 1/2 teaspoon if you like))
28 ounces whole tomatoes ((two cans))
1 tablespoon balsamic vinegar
1 teaspoon sugar ((or honey))
salt and pepper (to taste)
1 bunch fresh basil
10 ounces pasta (I used a variant of penne, but any medium-sized pasta shapes will do)
1 ball of mozzarella
freshly grated parmesan cheese (to serve)

Steps:

  • Heat up the olive oil, then stir in the eggplant, making sure it all gets coated in oil. Let cook, stirring occasionally, for about ten to fifteen minutes.
  • Add the garlic and chili flakes to the pan and cook, stirring, for a couple more minutes.
  • Add the tomatoes to the pan, then crush them and break them up with a wooden spoon. Pour in the balsamic vinegar, then add the sugar/honey. Simmer for about 15 minutes or until the eggplant is nice and soft.
  • At the end of the cooking time, season well and stir in most of the basil.
  • Meanwhile, boil the pasta according to the packet instructions (until al dente is best). Then drain, reserving some of the water.
  • Add the pasta to the sauce and toss until well coated. Add enough of the reserved cooking water to make the dish nice and smooth and 'silky'.
  • Rip the mozzarella into the pan and stir again briefly.
  • Serve out into bowls immediately. Top with grated parmesan and the remaining fresh basil.

PASTA WITH EGGPLANT SAUCE {PASTA ALLA NORMA}

Pasta with Eggplant Sauce {Pasta Alla Norma} image

This traditional Sicilian pasta dish of eggplant cooked with tomato sauce makes for a satisfying vegetarian dinner that can be thrown together in under an hour.

Provided by Erren Hart

Categories     Dinner

Time 55m

Number Of Ingredients 10

1 pound pasta
4 small eggplants (cut in half)
cooking spray
1 tablespoon olive oil
3 garlic cloves
14 ounces can plum tomatoes
1 cup white wine
fresh basil (A big handful )
¼ cup Parmesan cheese (freshly grated )
salt and pepper (to taste)

Steps:

  • Pre-heat your oven to 400F. Place the eggplant halves face down on a baking sheet. Spray with cooking spray and roast for 30-35 minutes (you'll know they're done when the skin shrivels). When ready, carefully scoop out the fleshy center with a spoon and run a knife through it to cut into strips.
  • Bring a large pot of salted water to a roaring boil, and cook the pasta until about 2 minutes underdone.
  • While the pasta cooks, heat the oil over medium-high heat in a large, deep sauté pan. Add the garlic and cook until just brown.
  • Add tomatoes followed by the wine. Raise the heat and allow the alcohol to cook off the wine. While the wine cooks down, crush the tomatoes with a potato masher or the back of a spoon.
  • Add the eggplant and basil to the tomatoes and mix well to combine, lower the heat and allow to simmer while the pasta finishes cooking.
  • Before straining the pasta, with a ladle or strainer, use a mug to remove a cup of pasta water. Then drain the pasta and mix it into the sauce in the pan with half the cooking water. Cook for 2 - 3 minutes (adding more pasta water if it starts getting a bit dry). Check to see if the pasta is cooked. When done, add freshly grated cheese to the pasta and mix well to incorporate.
  • Taste for seasoning and season with salt and pepper as needed. Serve with more grated cheese.

Categories     lasagna recipes

Time 40m

Yield 8

Number Of Ingredients 9

1 liter of tomato passata
2 cloves of garlic
3 basil leaves
fine salt to taste
300 g (10,5 oz) of fresh Ricotta cheese
200 g (7 oz) of grated Ricotta Salata cheese
2 medium eggplants
1 liter of extra virgin olive oil for frying
About 10 lasagna noodles

Steps:

  • In a sauce pan pour the tomato passata, add two cloves of garlic, 2/3 basil leaves and a pinch of fine salt to taste. Cook over low heat for 10 minutes. The tomato sauce have to be quite runny. So if you see that it's too thick add some water. That's necessary to bake lasagna noodles. When ready, turn off the heat and set aside.
  • After washing and drying the eggplants, slice them lengthwise. Make some slices about 1 cm (half an inch) thick. Then cut the ends of the eggplant into cubes (the first and last slice).
  • Fry the eggplant in plenty of extra virgin olive oil, both the slices and the cubes. Fry them to a temperature of 170° C (340 F). Do not exceed the recommended temperature: check with a kitchen thermometer. Drain with a skimmer and place them on kitchen paper to absorb the excess oil. Set aside
  • Place the fresh ricotta in a bowl. Add two or three tablespoons of tomato sauce and mix everything until you get a reddish, homogeneous and thick cream. Set aside.
  • Take a 13×9 inch lasagna pan and spread a little ricotta cream on the bottom. Then place the first layer of lasagna. Cover the lasagna with a little ricotta cream. Then add a layer of fried eggplant slices. Add 4 tablespoons of tomato sauce and a little grated salted ricotta.
  • Keep going with the layers until you run out of ingredients, taking care to finish the last layer with only the ricotta cream on top. Bake in a preheated oven at 200°C (390 F) for 20 minutes.
  • When cooked, take your eggplant lasagna out of the oven and add the diced fried eggplant and more grated salted ricotta. Decorated with a few basil leaves and let it rest for 10 minutes before serving.

EGGPLANT PASTA

Eggplant Pasta image

I adore Eggplant Parmesan, but not so much the time it takes to make. You know what doesn't take a long time to cook? Noodles. Can you make noodles out of eggplant? Heck yeah you can. And if you play your culinary cards right, you can get all the flavor of eggplant Parm in just 60 seconds. When shopping for an eggplant, choose one with tight skin, no wrinkles or blemishes. It should be kind of heavy for its size, and when pressed with a finger, the flesh will give slightly, but bounce back all the way.A note on purging: Eggplants are 95 percent water, and that water is laden with rather bitter-tasting alkaloids. This is why most of the eggplant served in America feels like Styrofoam and tastes like old coffee. By "curing" the eggplant with salt, much of this troublesome fluid can be drawn out. The result: better flavor and a meaty, toothsome texture that won't remind you of biting off a chunk of cooler. This recipe first appeared in Season 5 of Good Eats.

Time 50m

Number Of Ingredients 10

1 large eggplant, about 1 pound
Kosher salt
1 tablespoon olive oil
1/4 teaspoon minced garlic
1/4 teaspoon red pepper flakes
1 small tomato, seeded and chopped
3 tablespoons heavy cream
1 tablespoon thinly sliced basil
2 tablespoons grated Parmesan cheese
1 tablespoon breadcrumbs

Steps:

  • Peel the eggplant, leaving 1 inch of skin at the top and bottom. Using a mandoline, slice the eggplant lengthwise into 1/4-inch thick slices.
  • Place the eggplant slices on a wire rack set over the sink and generously sprinkle with kosher salt. Wait 15 minutes, flip, sprinkle again, and wait another 15 minutes. Rinse thoroughly under cool water and gently squeeze out excess water. Place on paper towels and pat dry. Cut the slices into 1/4-inch wide strips so that they resemble linguine.
  • Heat a 10-inch saute pan over medium-high heat and add the oil. When it shimmers, add the garlic and red pepper flakes and toss for 10 seconds. Add the eggplant and toss to coat. Add the tomato and toss for 15 to 20 seconds. Add the cream and toss for another 10 seconds. Finish with the bail and Parmesan. Transfer to a serving dish, top with breadcrumbs, toss, and serve immediately.

RIGATONI WITH TOMATOES, EGGPLANT, AND MOZZARELLA

Rigatoni with Tomatoes, Eggplant, and Mozzarella image

Rigatoni with sweet tomatoes, eggplant, and mozzarella is a deceptively easy pasta dinner that tastes much more difficult. Cheesy and filled with silky eggplant, tomatoes, and cream, it also bakes into a magnificent casserole.

Provided by Jamie Oliver

Categories     Condiments

Time 35m

Number Of Ingredients 13

1 firm ripe pink, black, or white eggplant
Extra-virgin olive oil
2 garlic cloves (peeled and sliced)
1 onion (peeled and finely chopped)
Two (14-ounce) cans good-quality plum tomatoes ((or substitute chopped homegrown tomatoes and their juices))
1 tablespoon balsamic vinegar
Sea salt and freshly ground black pepper
1 to 2 fresh or dried chiles (chopped or crumbled (optional))
1 small bunch basil, leaves ripped, sprigs sliced
4 tablespoons heavy cream
1 pound rigatoni or penne
7 ounces cow's-milk mozzarella
1 piece Parmesan cheese (for grating)

Steps:

  • Trim both ends of the eggplant and slice the eggplant into 1/2-inch-thick slices. Chop the slices into 1/2-inch dice.
  • Place a large saucepan over medium heat and drizzle in 4 to 5 tablespoons olive oil. When the oil is hot, add the eggplant and as soon as it hits the pan stir with a spoon so the pieces become delicately coated with the oil on all sides and not soaked on just a single side. Cook, stirring occasionally, for 7 or 8 minutes.
  • Add the garlic and onion and cook, still stirring occasionally, until they take on a little color. Add the tomatoes and vinegar, stir them around, and season with salt and pepper. At this point, if you want to give the dish a little heat you could add some chopped fresh or crumbled dried chille, but that's up to you. Add the basil sprigs and simmer the sauce nice and gently for about 15 minutes. By this time the eggplant will have cooked into a creamy, tomatoe-y pulp, which is just yum yum yum! If desired, fish out the basil sprigs. Stir in the cream.
  • Meanwhile, while the sauce is simmering, bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions, or until it's soft but still holding its shape. Drain the pasta, saving a little of the cooking water. I like to put the pasta back into the pot it was cooked in with a tiny bit of the cooking water and a drizzle olive oil and move it around so it becomes sorta dressed with the water and oil.
  • At this point, add the lovely tomato sauce to the pasta and season with salt and pepper to taste. When all my guests are sitting round the table, I take the pan to the table, tear up the mozzarella and the basil leaves, and gently fold these, tossing and stirring things about for 30 seconds. Then I very quickly heap out portions into bowls. By the time your guests start to eat, the mozzarella will have begun to melt, so it will be stringy and gorgeous and really milky-tasting and just lovely with the tomatoes and eggplant. Set out a block of Parmesan cheese and a grater so that everyone can help themselves.

  • Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes, the oregano and 1 cup of water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Season with salt and pepper.
  • Meanwhile, heat the remaining 3 tablespoons oil in a large nonstick skillet over medium-high heat. Add the eggplant and 1/2 teaspoon salt and cook, stirring occasionally, until golden brown and tender, 6 to 8 minutes. Transfer to a large bowl with a slotted spoon. Add the pepperoni to the pan and cook until just starting to crisp, about 2 minutes. Transfer to the bowl with the eggplant.
  • Cook the cavatappi in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the bowl.
  • Add the tomato sauce, parsley, half of the Asiago and half of the Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and dollop the top with the ricotta, then top with the remaining Asiago and Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.

EGGPLANT PASTA

Eggplant Pasta image

Provided by Alton Brown

Time 50m

Yield 4 servings

Number Of Ingredients 10

2 medium-large eggplants
Kosher salt, for purging
4 tablespoons olive oil
1 teaspoon garlic, minced
1/2 teaspoon chile flakes
4 small tomatoes, seeded and chopped
1/2 cup cream
4 tablespoons basil chiffonade
1/4 cup freshly grated Parmesan
Freshly ground pepper

Steps:

  • Peel each eggplant leaving 1-inch of skin at the top and bottom unpeeled. Slice the eggplant thinly lengthwise, about 1/4-inch thick. Evenly coat each slice with the salt and purge on a sheet pan fitted with a rack for 30 minutes. Rinse with cold water and roll in paper towels to dry. Slice the pieces into thin strips to resemble pasta.
  • In a large saute pan heat the oil. Add the garlic and chili flakes and toast. Add the eggplant "pasta" and toss to coat. Add the tomatoes and cook for 3 minutes. Add the cream and increase heat to thicken sauce. Finally add the basil and Parmesan and toss to combine. Season with pepper, no salt needed as the eggplant will have residual salt from the purge. Serve immediately.

  • Place the chopped eggplant in a colander and sprinkle with salt. Rub the salt all over the eggplant and place the colander in the sink or over a large bowl or plate. The salt will remove some of the liquid in the eggplant and remove some of the bitterness. Let this sit while we make the sauce.
  • Once the sauce is made and your pasta is cooked and ready, rinse off the salt from the eggplant and gently squeeze any excess liquid from them. Just grab a handful at a time and squeeze the chopped eggplant, you don’t have to take a long time doing this.
  • Place a pan on medium heat, add 1 tablespoon of olive oil and eggplant. Cook for about 5 – 8 minutes, or until the eggplant has become slightly golden brown.
