Steps:
- Heat olive oil in a large skillet over medium heat; cook and stir garlic until fragrant, 1 to 2 minutes. Add eggplant; cook, stirring constantly, until eggplant is softened, about 5 minutes. Add tomatoes and juice; cook until sauce is slightly reduced, about 20 minutes.
- Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until cooked through but firm to the bite, about 13 minutes. Drain and transfer to a serving bowl.
- Pour sauce over pasta.

CREAMY EGGPLANT PASTA

- Peel and chop the eggplant in cubes. Boil it in slightly salted water for about 5 minutes or steam it for about 10 minutes. Remove the eggplant with a skimmer and don't toss the water.
- Drizzle a pan with oil and sauté the minced onion for a minute. Add the drained eggplant and sauté for 2-3 minutes more.
- Meanwhile, add more salt to the boiling water and toss the pasta in. Cook according to the packaging instructions, until al dente.
- Transfer the eggplant and onion in a blender, season with salt and pepper and add the tablespoons of milk. Blend until you get a smooth cream. Add a few tablespoons of pasta water to make it thinner if needed.
- Drain the pasta and mix it with the creamy eggplant sauce. Serve with abundant grated Parmigiano cheese on top.

- Preheat oven to 400F.
- Roast eggplant and onions: arrange sliced onions and diced eggplant on a sheet pan and toss with oil, garlic powder, and a generous pinch of salt & pepper. Roast for 20-25 minutes - flip halfway through roasting time.
- Cook pasta: bring a pot of well-salted water to a boil. Cook pasta as box instructs. I like to cook the noodles until they are al dente in texture! Tip: al dente means "to the tooth" - the pasta should have a bite to it and not be too soft.
- Heat sauce: In a sauce pan, simmer the marinara on low to heat up. Fold in roasted eggplant and onions to sauce when they're finished cooking.
- Serve: Serve pasta noodles with eggplant and marinara sauce, chopped fresh basil, and parmesan cheese!

This is an extraordinary recipe. The sauce is made with only 60 cloves of garlic! I've been astounding guest with this dish since 1981. Be daring, discover how mild & delicious the garlic sauce taste. The recipe came from a cookbook called "Sunday Best". Eggplant is my favorite vegetable. Steps:
- Salt and sweat the eggplant pieces for 30 minutes.
- Preheat oven 400 degrees.
- Meanwhile, heat 1 Tb.
- olive oil, saute onion until limp and golden.
- Add rest of ingredients through salt& pepper.
- Bring to boil, reduce heat and simmer, uncovered for 30 minutes, until sauce is thick and chunky.
- Or use any tomato sauce you personally like.
- Best if thick and chunky.
- Boil the unpeeled garlic cloves in water to cover for 2 minutes.
- Can skip, if your cloves are already peeled.
- Drain, hit each clove lightly with mallet or flat side of large knife.
- Peel.
- Place in a small saucepan with stock to cover.
- Simmer for about 45 minutes.
- Replenish stock as needed.
- Whirl garlic and stock in blender until pureed.
- Set aside.
- Rinse and drain eggplant of salt.
- Brush a large baking sheet with 1/4 olive oil.
- Place in oven until hot.
- Place eggplant on hot pan.
- Bake 25-30 minutes.
- Check frequently, turn with tongs after 15 minutes, do not burn or allow to become crisp.
- Looking for soft, golden, and cooked eggplant.
- May need more oil.
- Drain and blot off oil with paper towel.
- Reduce oven to 350 degrees.

- Heat up the olive oil, then stir in the eggplant, making sure it all gets coated in oil. Let cook, stirring occasionally, for about ten to fifteen minutes.
- Add the garlic and chili flakes to the pan and cook, stirring, for a couple more minutes.
- Add the tomatoes to the pan, then crush them and break them up with a wooden spoon. Pour in the balsamic vinegar, then add the sugar/honey. Simmer for about 15 minutes or until the eggplant is nice and soft.
- At the end of the cooking time, season well and stir in most of the basil.
- Meanwhile, boil the pasta according to the packet instructions (until al dente is best). Then drain, reserving some of the water.
- Add the pasta to the sauce and toss until well coated. Add enough of the reserved cooking water to make the dish nice and smooth and 'silky'.
- Rip the mozzarella into the pan and stir again briefly.
- Serve out into bowls immediately. Top with grated parmesan and the remaining fresh basil.

- Pre-heat your oven to 400F. Place the eggplant halves face down on a baking sheet. Spray with cooking spray and roast for 30-35 minutes (you'll know they're done when the skin shrivels). When ready, carefully scoop out the fleshy center with a spoon and run a knife through it to cut into strips.
- Bring a large pot of salted water to a roaring boil, and cook the pasta until about 2 minutes underdone.
- While the pasta cooks, heat the oil over medium-high heat in a large, deep sauté pan. Add the garlic and cook until just brown.
- Add tomatoes followed by the wine. Raise the heat and allow the alcohol to cook off the wine. While the wine cooks down, crush the tomatoes with a potato masher or the back of a spoon.
- Add the eggplant and basil to the tomatoes and mix well to combine, lower the heat and allow to simmer while the pasta finishes cooking.
- Before straining the pasta, with a ladle or strainer, use a mug to remove a cup of pasta water. Then drain the pasta and mix it into the sauce in the pan with half the cooking water. Cook for 2 - 3 minutes (adding more pasta water if it starts getting a bit dry). Check to see if the pasta is cooked. When done, add freshly grated cheese to the pasta and mix well to incorporate.
- Taste for seasoning and season with salt and pepper as needed. Serve with more grated cheese.

- To make the seasoning mix, combine the peppercorns, dry mustard, onion powder, salt, garlic powder, basil leaves and white pepper in a small bowl and set aside. Combine the cottage cheese, skim milk and cream cheese in a blender and process until smooth. Set aside. Heat a heavy 10-inch skillet, preferably nonstick, over high heat for about four minutes.
- Combine 1 cup of the eggplant, 1 cup of the onions, 1 cup of the mushrooms, and 2 tablespoons of the seasoning mix in the skillet. Stir and cook for two to three minutes.
- Add 1 cup of the apple juice and cook, scraping the bottom occasionally, until all the liquid evaporates and a glaze forms, about 15 minutes. Add the remaining apple juice, scrape the bottom of the skillet, and add the chicken stock, and the remaining eggplant, onions, mushrooms and seasoning mix. Stir, bring to a boil, and cook over medium heat for 10 minutes.
- Remove from heat and whisk the cottage cheese mixture into the sauce until blended. Add drained pasta, toss, and serve.

- In a sauce pan pour the tomato passata, add two cloves of garlic, 2/3 basil leaves and a pinch of fine salt to taste. Cook over low heat for 10 minutes. The tomato sauce have to be quite runny. So if you see that it's too thick add some water. That's necessary to bake lasagna noodles. When ready, turn off the heat and set aside.
- After washing and drying the eggplants, slice them lengthwise. Make some slices about 1 cm (half an inch) thick. Then cut the ends of the eggplant into cubes (the first and last slice).
- Fry the eggplant in plenty of extra virgin olive oil, both the slices and the cubes. Fry them to a temperature of 170° C (340 F). Do not exceed the recommended temperature: check with a kitchen thermometer. Drain with a skimmer and place them on kitchen paper to absorb the excess oil. Set aside
- Place the fresh ricotta in a bowl. Add two or three tablespoons of tomato sauce and mix everything until you get a reddish, homogeneous and thick cream. Set aside.
- Take a 13×9 inch lasagna pan and spread a little ricotta cream on the bottom. Then place the first layer of lasagna. Cover the lasagna with a little ricotta cream. Then add a layer of fried eggplant slices. Add 4 tablespoons of tomato sauce and a little grated salted ricotta.
- Keep going with the layers until you run out of ingredients, taking care to finish the last layer with only the ricotta cream on top. Bake in a preheated oven at 200°C (390 F) for 20 minutes.
- When cooked, take your eggplant lasagna out of the oven and add the diced fried eggplant and more grated salted ricotta. Decorated with a few basil leaves and let it rest for 10 minutes before serving.

- Peel the eggplant, leaving 1 inch of skin at the top and bottom. Using a mandoline, slice the eggplant lengthwise into 1/4-inch thick slices.
- Place the eggplant slices on a wire rack set over the sink and generously sprinkle with kosher salt. Wait 15 minutes, flip, sprinkle again, and wait another 15 minutes. RIGATONI WITH TOMATOES, EGGPLANT, AND MOZZARELLA

- Trim both ends of the eggplant and slice the eggplant into 1/2-inch-thick slices. Chop the slices into 1/2-inch dice.
- Place a large saucepan over medium heat and drizzle in 4 to 5 tablespoons olive oil. When the oil is hot, add the eggplant and as soon as it hits the pan stir with a spoon so the pieces become delicately coated with the oil on all sides and not soaked on just a single side. Cook, stirring occasionally, for 7 or 8 minutes.
- Add the garlic and onion and cook, still stirring occasionally, until they take on a little color. Add the tomatoes and vinegar, stir them around, and season with salt and pepper. At this point, if you want to give the dish a little heat you could add some chopped fresh or crumbled dried chille, but that's up to you. Add the basil sprigs and simmer the sauce nice and gently for about 15 minutes. By this time the eggplant will have cooked into a creamy, tomatoe-y pulp, which is just yum yum yum! If desired, fish out the basil sprigs. Stir in the cream.
- Meanwhile, while the sauce is simmering, bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions, or until it's soft but still holding its shape. Drain the pasta, saving a little of the cooking water. I like to put the pasta back into the pot it was cooked in with a tiny bit of the cooking water and a drizzle olive oil and move it around so it becomes sorta dressed with the water and oil.
- At this point, add the lovely tomato sauce to the pasta and season with salt and pepper to taste. When all my guests are sitting round the table, I take the pan to the table, tear up the mozzarella and the basil leaves, and gently fold these, tossing and stirring things about for 30 seconds. Then I very quickly heap out portions into bowls. By the time your guests start to eat, the mozzarella will have begun to melt, so it will be stringy and gorgeous and really milky-tasting and just lovely with the tomatoes and eggplant. Set out a block of Parmesan cheese and a grater so that everyone can help themselves.

- Toss the eggplant with the 2 teaspoons of salt and place in a colander.
- Let sit 20 minutes, then squeeze dry.
- Heat the olive oil in a heavy bottomed saucepan over medium heat and add the onion and sausage meat.
- Cook, using two forks to break up the meat as it cooks until it is no longer pink.
- Add the eggplant, and continue to cook until the eggplant has softened, about 8 minutes.
- Add the garlic and cook an additional minute or two.
- Add the tomatoes, paste, oregano, salt, pepper, and red pepper flakes if using and bring to a boil.
- Reduce the heat to a simmer, then cook for 20 minutes, stirring occasionally. (Add a small cup of water if sauce thickens too much).
- Stir in the parsley and basil.
- Taste, and adjust salt and pepper as needed.
- While the sauce is finishing cooking, cook the pasta in a large pot of lightly salted water until it is "al dente", following manufacturers instructions.
- Drain, and return the pasta to the pot.
- Add a large scoop or two of sauce to the pasta and toss to coat.
- Serve the pasta in individual bowls with an additional spoonful or two of sauce on top.
- Pass the grated cheese at the table, and enjoy!
EGGPLANT AND BACON PASTA
It's impossible to accuse this recipe of lack of flavor! The bacon and sausages are undoubtedly delicious to begin with. The eggplant is cooked in garlic infused oil, which will further enrich the taste. And there's also a heavy cream sauce on the table!

- Thinly slice the eggplant, in about 4 inch (10 cm) long sticks.
- Add the pasta in a saucepan full of simmering water. Cook them according to the instructions on the package.
- Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the garlic cloves and leave them in the pan for about 2 minutes.
- Remove them from the pan when ready and add the eggplant sticks. Add the remaining oil and a pinch of salt. Cook the eggplant for about 2-3 minutes, until golden brown.

- Preheat broiler.

- Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
- Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes, the oregano and 1 cup of water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Season with salt and pepper.
- Meanwhile, heat the remaining 3 tablespoons oil in a large nonstick skillet over medium-high heat. Add the eggplant and 1/2 teaspoon salt and cook, stirring occasionally, until golden brown and tender, 6 to 8 minutes. Transfer to a large bowl with a slotted spoon. Evenly coat each slice with the salt and purge on a sheet pan fitted with a rack for 30 minutes. Rinse with cold water and roll in paper towels to dry. Slice the pieces into thin strips to resemble pasta.
- In a large saute pan heat the oil. Add the garlic and chili flakes and toast. Add the eggplant "pasta" and toss to coat. Add the tomatoes and cook for 3 minutes. Add the cream and increase heat to thicken sauce. Finally add the basil and Parmesan and toss to combine. Season with pepper, no salt needed as the eggplant will have residual salt from the purge. Serve immediately.
