1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons best quality cocoa powder
3/4 cup superfine sugar
3/4 cup semisweet chocolate chips, plus 1/4 cup for sprinkling
1 cup milk
1/3 cup plus 2 teaspoons vegetable oil
1 egg
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup of the chocolate chips into a large bowl. Pour all the liquid ingredients into a measuring jug. Mix the dry and wet ingredients together, remembering that a lumpy batter makes the best muffins. Spoon into the prepared muffin cases. Sprinkle the remaining 1/4 cup chocolate chips on top and then bake for 20 minutes or until the muffins are dark, risen and springy.

1/2 cup packed light brown sugar
4 tablespoons unsalted butter, melted
1 tablespoon vegetable oil
2 teaspoons pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Line 12 muffin cups with paper liners.
  • Whisk together the flour, cocoa powder, baking powder, baking soda and salt in a large bowl. Stir in the chocolate chips. In a medium bowl, whisk together the milk, brown sugar, butter, oil, vanilla and eggs until smooth.
  • Quickly fold the milk mixture into the flour mixture with a rubber spatula. Divide the batter evenly among the prepared muffin cups. Bake until a toothpick inserted in the center comes out clean, about 25 minutes. Transfer the muffins from the pan to a wire rack to cool.

2 1/4 cups whole wheat pastry flour
1/2 cup mini semisweet chocolate chips
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1 cup 2-percent milk
2/3 cup packed light brown sugar
1/2 cup melted virgin or extra-virgin coconut oil
2 large eggs
1 teaspoon pure vanilla extract
1/2 teaspoon finely grated orange zest
12 small strawberries, hulls removed and trimmed as needed

Steps:

  • Position an oven rack in the center of the oven, and preheat to 350 degrees F. Line a 12-cup muffin pan with paper liners, and spray the liners lightly with cooking spray.
  • Whisk together the flour, 1/3 cup of the chocolate chips, baking powder and salt in a large bowl. Whisk together the milk, sugar, oil, eggs, vanilla and orange zest in a medium bowl until no sugar clumps remain. Fold the milk mixture into the flour mixture until just combined. (Don't worry if there are a few lumps.)
  • Spoon a heaping tablespoon of batter into each muffin cup liner. Stand a strawberry in each, point-side down. Evenly divide the remaining batter among the liners. Smooth the batter around and on top of each strawberry with a spoon. (It's OK if a little bit of strawberry pokes out.) Sprinkle the remaining chocolate chips over the tops.
  • Bake until the muffins are golden and spring back when pressed in the center, 22 to 25 minutes. Let cool in the pan for a few minutes, then transfer to a cooling rack to cool completely. Store at room temperature in an airtight container for up to 2 days.

1/2 cup wheat germ
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup cocoa powder
1/3 cup raspberry preserves, divided

Steps:

  • Preheat oven to 375 degrees F and grease muffin tins.
  • In a large bowl, mix the yogurt with the milk. Mix in the beaten egg, honey and vanilla.
  • Add the bran and wheat germ, mix and let stand for several minutes to absorb the liquids.
  • Into another bowl, sift the flour, baking soda, salt and cocoa powder. Stir together well.
  • Add to the wet mixture and stir only until combined.
  • Drop mixture into muffin tins until 1/3 full.
  • Add 1 heaping teaspoon raspberry preserves to the middle of each muffin tin.

1 (18 ounce) package devil's food cake mix (no pudding in the mix)
1 1/3 cups water

Steps:

  • Preheat oven to 350. Line 24 muffin cups with paper liners.
  • Beat cream cheese and sugar together in a large mixing bowl.
  • Add vanilla and egg, beat for 30 seconds, or until well combined.
  • Stir in chocolate chips and set aside.
  • Place the cake mix, water, oil, and eggs in a large mixing bowl. Blend with electric mixer on low for 2 minute, scraping sides down.

Steps:

  • Grease the bottom ONLY of a 12-cup muffin tin.
  • Preheat the oven to 400 degrees F.
  • In a medium mixing bowl, stir together the flour, sugar, baking powder and salt.
  • In a second medium sized bowl, combine the egg, milk, vanilla and vegetable oil.
  • Make a "well" in the dry ingredients and add the wet ingredients to the well.
  • Stir until the mixture is moist.
  • Don't overmix - the batter should be lumpy.
  • Fill the muffin tins half full.
  • Now, here is the surprise - drop a teaspoon of jelly into the center of each muffin.
  • Add more batter on top of the jelly so that each cup is 2/3 full.
  • Bake for 20-25 minutes, or until golden brown.
  • When the muffins are baked there will be a jelly surprise in the middle.

  • RESERVE 1/2 cup quick bread mix in small bowl. In large bowl, combine remaining quick bread mix, 1/2 cup oats, water, oil and eggs; mix well. Fill prepared muffin cups 2/3 full. Lightly press 1 chocolate candy into batter in each cup.
  • ADD remaining 1/4 cup oats, sugar and melted butter to reserved 1/2 cup quick bread mix; mix well. Sprinkle about 1 teaspoon mixture over top of batter in each cup.

Found this in a magazine and thought I'd post for all the chocoholics!!! You can use squares of Cadbury Caramello or other chocolate in place of the Nutella if you prefer. These are nice sprinkled with some icing sugar or even for dessert with some whipped cream, yogurt or custard.....the choice is yours:)

1 cup caster sugar
1 3/4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 cup cocoa
1 egg
1 cup plain yogurt
1/2 cup milk
1/2 teaspoon vanilla essence
100 g butter (melted)
12 teaspoons nutella

Steps:

  • Pe-heat oven to 200'C/400'F.
  • Place caster sugar in a bowl and add all other dry ingredients which have been sifted together.
  • Stir to mix well.
  • In another bowl combine the egg, yoghurt, milk and vanilla.
  • Pour into the midle of the dry ingredients and then add melted butter.
  • Mix together gently.
  • Place mixture into well greased muffin tins to come just over halfway up the tins.
  • Place 1 teaspoon of Nutella into the middle of each (or place a square of chocolate in)and then cover with another spoonful of muffin mixture.
  • Bake for approximately 15 minutes or until muffins are cooked and well risen.
  • Remove from oven but leave in tins for 5 minutes before removing muffins from tin to cool on a rack.
  • Sift over some icing sugar if desired -- this just gives a nice presentation.

TOPPING:
1/4 cup semisweet chocolate chips
2 tablespoons brown sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in yogurt and vanilla. ½ cup butter, softened
1 cup white sugar
1 egg
¼ cup milk
1 teaspoon vanilla extract
1 ¾ cups all-purpose flour
⅓ cup unsweetened cocoa powder
½ teaspoon baking soda
18 large marshmallows, halved
1 cup white sugar
½ cup unsweetened cocoa powder
¼ cup milk

¼ cup butter
18 pecan halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together 1/2 cup butter and 1 cup sugar until smooth. Beat in the egg, then stir in the 1/4 cup milk and vanilla. Combine the flour, 1/3 cup cocoa and baking soda; stir into the creamed mixture. Drop by heaping teaspoonfuls onto the prepared cookie sheet.
  • Bake for 8 minutes in the preheated oven. Remove cookie sheet and press marshmallow halves into the center of each cookie cut side down. Return the cookies to the oven for an additional 2 minutes. Remove from the oven and press lightly on the cookies to flatten slightly. Remove cookies to wire racks to cool.
  • To make the icing: In a small saucepan over medium heat, combine 1 cup sugar, 1/2 cup cocoa, 1/4 cup milk, 1 teaspoon vanilla and 1/4 cup butter. Bring the mixture to a boil, stirring occasionally, and let boil for 1 minute. Brush the cookies with the frosting then top each one with a pecan half before the icing sets.

1-1/4 cups all-purpose flour
1/2 cup sugar
1/3 cup baking cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1 cup unsweetened applesauce
1/2 cup fat-free milk
1/2 cup egg substitute
1 teaspoon vanilla extract
1/4 cup sliced almonds

Steps:

  • In a bowl, combine the flour, sugar, cocoa, baking powder and baking soda. In another bowl, whisk the applesauce, milk, egg substitute and vanilla until smooth. Stir into dry ingredients just until moistened., Coat muffin cups with cooking spray; fill three-fourths full with batter. Sprinkle with almonds. Bake at 400° for 20-25 minutes or until muffins test done. Cool for 10 minutes; remove from pan to a wire rack.
