2 lbs ground beef
2 lbs Velveeta cheese
2 (10 ounce) cans Rotel Tomatoes (rotel is usually found with canned chili in stores)

Steps:

  • Brown ground beef.
  • Drain.
  • Pour in rotel.
  • Stir and let cook down some.
  • Cut velveeta into cubes.
  • Pour into ground beef.
  • Stir until all cheese is melted.

This has been around at least since the 60's and remains a hit at parties. Younger folks tend not to be familiar with it but love it. Use any flavor of Ro*Tel tomatoes and green chiles you want, but I like the mild. The recipe comes from the label on the can of RO*TEL.

1 lb Velveeta cheese
1 (10 ounce) can tomatoes and green chilies (Diced or Whole RO*TEL)

Steps:

  • Cut Velveeta Cheese into 1-inch cubes
  • In a saucepan, combine ingredients; stir over low heat until cheese spread is melted.
  • Serve with corn tortilla chips.
  • Microwave:
  • Place ingredients in a covered casserole.
  • Microwave on HIGH until Velveeta is melted, 3-5 minutes, stirring once.
  • Serve with corn tortilla chips.

1/4 cup margarine
1 medium green bell pepper, chopped
1 medium onion, chopped
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 (10 3/4 ounce) can condensed cream of chicken soup
1 (10 ounce) can ro*tel diced tomatoes and green chilies
2 cups cubed cooked chicken
12 corn tortillas, torn into bite-sized pieces
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 325 degrees F. In a large saucepan, cook pepper and onion in melted margarine until tender, about 5 minutes.
  • Add soups, RO*TEL and chicken, stirring until well blended.
  • In a 13 x 9 x 2-inch baking pan, alternately layer tortillas, soup mixture and cheese, repeating for three layers. Bake 40 minutes or until hot and bubbling. Serves 8.

Steps:

  • Combine undrained tomatoes and cheese in medium saucepan.
  • Cook over medium heat 5 minutes or until cheese is completely melted and mixture is well blended, stirring frequently.
  • Serve warm as a dip with tortilla chips, crackers or cut-up fresh vegetables.
  • COOK'S TIPS: To make in microwave, combine undrained tomatoes and cheese in 1-1/2-quart microwave-safe dish; cover. Microwave on HIGH 5 minutes or just until cheese melts, stirring after 3 minutes. Remove from microwave; stir until mixture is well blended. CAUTION: Dish will be hot; use hot pads.
