Steps:
- Mix margarine, peanut butter and vanilla together. Add powdered sugar. Roll into balls. Chill for short time in the freezer or refrigerator. Melt bark for dipping in bowl. Insert toothpick into ball and dip in chocolate leaving an area exposed to resemble a "buckeye".
- Place on waxed paper and continue. When completed go back and "touch" the hole with finger to close the hole. I usually keep these in the freezer until ready to use! The refrigerator will do fine as well.

BUCKEYE BALLS
A friend of mine gave me this recipe many years ago and we would make dozens of them for our Christmas trays every year. They were the first things to go.

Steps:
- Mix first 3 ingredients together.
- Roll into 1" balls and place on waxed paper lined cookie sheet.
- Refrigerate 2 hours or overnight.
- Melt chocolate chips in double boiler with oil.
- Stick toothpick in center of peanut butter ball, dip in chocolate about 3/4 of the ball, leaving a small amount of the peanut butter ball showing. Put back on waxed papered cookie sheet, remove toothpick. Refrigerate until set.
- Keep in sealed container in cool place. The yield depends on how large you make the balls. Cooking time is actually refrigeration time.

BUCKEYES
Who doesn't love a confection inspired by nature? In this case, it's a peanut butter truffle dipped in chocolate, which resembles the nut from Ohio's state tree, the buckeye.

- Line a baking sheet with parchment. Beat the confectioners' sugar, peanut butter, butter, vanilla and salt with an electric mixer in a medium bowl until well combined. Scoop 2-teaspoonful mounds, and roll into balls; arrange them on the prepared baking sheet. Refrigerate until firm, about 20 minutes.
- Microwave the chocolate and shortening in a microwave-safe medium bowl in 30-second increments, stirring in between, until the mixture is completely melted and smooth, about 2 minutes.
- Stick a toothpick or skewer into the top center of a peanut butter ball. Dip the ball into the melted chocolate, leaving a circle of peanut butter visible on top. Let the excess chocolate drip off, then return the buckeye to the baking sheet. Repeat with the remaining peanut butter balls and chocolate.
- Chill the buckeyes until firm, about 30 minutes. Smooth out the hole left by the toothpick with an offset spatula. Serve at room temperature or well chilled. Refrigerate in an airtight container for up to 5 days.
CRUNCHY TOFFEE BUCKEYES

Steps:
- Combine the peanut butter, vanilla and salt in a large bowl. Beat with an electric mixer, adding about 1/2 cup confectioners' sugar at a time, until all the sugar is incorporated and the mixture is stiff and dry to the touch. Mix the toffee by hand.
- Roll the mixture into 1-inch balls (about 32) and place on plates. Insert a toothpick into the center of each ball and freeze until firm, 1 hour.
- Once the balls are frozen, put the chopped chocolate in a small, heat-safe bowl. Set the bowl over a saucepan filled with 1/2 inch of barely simmering water (make sure the bottom of the bowl does not touch the water) and heat, stirring, until melted. Remove the balls from the freezer and, one at a time, dip them in the chocolate, leaving a small round of peanut butter still visible. Let the excess chocolate drip off before returning the balls to the plate. Refrigerate until ready to serve. Remove the toothpick before serving.

- Combine the melted butter or margarine, confectioners' sugar, peanut butter and the vanilla together and mix well. Refrigerate for 1 hour or until firm. Roll into 1 inch balls and place on waxed paper.
- In the top half of a double boiler melt the chocolate chips and shortening, stirring constantly. Use a toothpick to dip balls into the melted chocolate, leaving a small uncovered area so balls resemble buckeyes. Place balls on waxed paper. Use fingers to blend in toothpick holes. Refrigerate until chocolate is firm. Enjoy!

- Line a baking sheet with waxed paper; set aside.
- In a medium bowl, mix peanut butter, butter, vanilla, and confectioners' sugar with hands to form a smooth stiff dough. Shape into balls using 2 teaspoons of dough for each ball. Place on prepared pan, and refrigerate.
- Melt shortening and chocolate together in a metal bowl over a pan of lightly simmering water. Stir occasionally until smooth, and remove from heat.
- Remove balls from refrigerator. Insert a wooden toothpick into a ball, and dip into melted chocolate. Return to wax paper, chocolate side down, and remove toothpick. Repeat with remaining balls. Refrigerate for 30 minutes to set.

These scrumptious Buckeye Balls are creamy buttery peanut butter balls dipped in chocolate. The family loves it when I make them for the Christmas holidays but you can change the sprinkles up to suit any holiday. I love to include these on my holiday cookie and candy trays along with Butter Cookies, Magic Cookie Bars, and Spritz...

Steps:
- 1. Using a stand mixer or hand mixer beat peanut butter, butter, vanilla and powdered sugar until it forms a fairly stiff dough. The dough should be stiff enough to roll into soft balls but not so stiff that it looks dry. If necessary add 1-2 more tablespoons powdered sugar.
- 2. Roll the dough into balls using about 1 rounded tablespoon per ball. Place on a parchment covered baking sheet with a little bit of space between each ball.
- 3. Place in the freezer uncovered for about 20-30 minutes. Take the balls out of the freezer and reroll into super smooth balls placing back on the parchment paper. Place a toothpick in the center of each ball and place back in the freezer for 10-15 minutes.
- 4. Add the chocolate chips and coconut oil to a microwave safe bowl. Microwave for 30 second intervals stirring between each interval until the chocolate is melted.
- 5. Using the toothpick dip the frozen peanut butter balls into the chocolate going about 2/3's of the way up. Immediately dust with sprinkles and place on parchment paper to set. Remove the toothpick and use your finger to smooth over the toothpick hole.
