EGG FOO YUNG (FOR 2) WITH ORIENTAL SAUCE

Egg Foo Yung (For 2) With Oriental Sauce image

From Alberta Egg Producers website. This tastes a lot like our favorite Chinese restaurant's Egg Foo Yung, so I was thrilled to find out how easy it is to make at home! I usually double the amount of sauce, and I like to add a touch of oyster sauce to the sauce sometimes, too. For a complete Chinese experience, we usually eat this with Recipe #228704.

ALDER-PLANKED SALMON WITH EGG SAUCE

Alder-Planked Salmon with Egg Sauce image

Be sure to buy untreated cedar or alder planks. Soak the planks thoroughly in water so that you don't run the risk of a flare-up in the oven.

Provided by Michael Chiarello : Food Network

Categories     main-dish

Time 2h30m

Yield 4 servings

Number Of Ingredients 19

1/4 teaspoon dry mustard powder
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 (6-ounce) salmon fillets, skinned
1 tablespoon unsalted butter, melted
2 cedar or alder planks, or 2 untreated cedar shingles or shims (available at lumberyards), about 5 inches wide and 12 inches long, soaked at least 2 hours, or overnight, so as not to flame up
Olive oil
8 tablespoons unsalted butter, cut into 8 pieces
1 teaspoon minced shallots or scallions
1/4 cup dry white wine
1/4 cup fish stock, chicken stock or low-salt canned chicken broth
2 tablespoons fresh lemon juice
1/3 cup heavy cream
1/2 teaspoon hot sauce (recommended: Tabasco)
Salt and freshly ground black pepper
3 tablespoons chopped fresh flat-leaf parsley
2 hard-cooked eggs, coarsely grated or chopped
1 teaspoon fresh chives, optional
1 tablespoon Californian sturgeon caviar, optional

Steps:

  • Preheat the oven to 500 degrees F.
  • In a small saucepan, melt 2 tablespoons of the butter. Add shallots and saute 1 minute. Season with a pinch of salt. Add lemon juice, wine, stock and cream. Simmer over medium heat for 3 to 4 minutes, until reduced to about 2 tablespoons.
  • Lower the heat and whisk in the remaining butter 1 tablespoon at a time, adding each piece when the previous one is almost melted.
  • Add hot sauce and season with salt and pepper to taste. Strain the sauce through a fine sieve, into a bowl. Cover to keep warm until ready to serve.
  • Mix together the mustard powder, salt, and pepper. Brush the top of the salmon fillets with the melted butter. Season both sides with the mustard mixture and set aside.
  • Put the soaked shingles in the oven, directly on the racks, for about 3 to 5 minutes until the wood is lightly browned on top. Carefully take the shingles out of the oven and place them on a heat-proof surface.
  • Turn on the oven broiler.
  • Immediately brush the shingles with a thin layer of olive oil and lay the salmon fillets, skinned side down, on the browned side of each shingle. Place the shingles under the broiler and cook the fish for about 5 to 7 minutes, until firm but not dry. Remove the fillets to a platter or serve directly from the shingles.
  • Just before serving, stir the parsley and grated eggs into the reserved warm egg sauce. Fold in chives and caviar if using. Top the fillets with the egg sauce and a sprinkling of chives, and a dollop of caviar if using.

SCOTCH EGGS WITH MUSTARD SAUCE

Scotch Eggs with Mustard Sauce image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 50m

Yield 6 servings

Number Of Ingredients 13

8 large eggs
2 tablespoons distilled white vinegar
1 pound bulk pork sausage
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh tarragon
Grapeseed or vegetable oil, for frying (about 4 cups)
1 cup all-purpose flour
Kosher salt and freshly ground pepper
1/4 cup milk
1 cup panko breadcrumbs
1/2 cup low-fat mayonnaise
3 tablespoons stone-ground mustard
Juice of 1 lemon

Steps:

  • Place 6 eggs in a medium saucepan and cover with cold water. Add the vinegar and bring to a boil, then remove from the heat, cover and set aside 4 minutes. Meanwhile, fill a bowl with ice water. Using a slotted spoon, remove the eggs and immediately plunge into the ice water to stop the cooking; let sit 2 minutes. Gently peel the eggs and set aside.
  • Combine the sausage, herbs and one of the remaining eggs in a stand mixer fitted with the paddle attachment. Mix on medium speed until combined, about 3 minutes. With moistened hands, mold the sausage mixture around the cooked eggs to completely cover.
  • Preheat the oven to 350 degrees F. Heat about 3 inches of grapeseed oil in a small high-sided saucepan over medium-high heat until a deep-fry thermometer reads 325 degrees F (or until a pinch of panko sizzles in the oil). Season the flour with 1/2 teaspoon each salt and pepper in a shallow dish. Beat the remaining egg with the milk in another shallow dish. Put the panko in a third shallow dish.
  • Roll the sausage-covered eggs in the seasoned flour, shaking off the excess. Transfer to the egg-milk mixture and turn to completely coat. Let the excess egg drip off, then roll in the panko.
  • Fry the eggs until golden brown, about 3 minutes. Remove to a baking sheet, transfer to the oven and bake until the sausage is cooked through, 10 to 12 minutes. Mix the mayonnaise, mustard and lemon juice in a small bowl. Serve with the Scotch eggs.

BASIC SOUFFLé

Basic Soufflé image

Crispy on the outside and soft and fluffy on the inside, a soufflé can be filled with many of your favourite ingredients. Making a soufflé is actually a simple process, despite its reputation for being difficult to make. Try adding cheese, crab, vegetables and more for a decadent dinner.

The traditional Egg-lemon sauce (Greek Avgolemono) recipe image

warm stock or broth from your prepared soup. You'll need about 2-3 cups depending on how thick or runny you like your avgolemono.
juice from 2-3 lemons
2-3 eggs

Steps:

  • To prepare the classic Avgolemono recipe, start by cracking the eggs into a bowl and whisk well.
  • Gradually add the lemon juice and whisk again to combine.
  • Add a little of the warm stock or soup and whisk quickly, add more and whisk again. The reason for slowly adding the broth is to gradually warm up the eggs so you don't end up with an omelette instead of a sauce!
  • Pour gradually the egg mixture back into the pot, whilst constantly stirring and bring just below boiling point. Remove the pan from the stove and serve.

SALTED EGG YOLK SAUCE

Salted Egg Yolk Sauce image

Salted Egg Yolk Sauce is a trendy, versatile ingredient that has already made its way into Asian supermarkets. It's much more economical to make it yourself. Use it as a condiment, or as an ingredient for cooking!

Provided by Judy

Categories     Condiments

Time 2h35m

Number Of Ingredients 4

12 salted duck egg yolks ((12 egg yolks = about 6 ounces/170g) )
1/3 cup oil ((such as peanut oil, vegetable oil, canola oil, or light olive oil))
2 teaspoons granulated sugar
1/4 teaspoon salt ((optional, or to taste; we use sea salt))

Steps:

  • Lay out the cooked salted duck egg yolks evenly on a baking sheet lined with parchment paper. Using cooked salted duck yolks sold in vacuum-sealed packages is the most economical option. Bake for 10 minutes, until they begin to release oil. Cool completely.
  • If you are using homemade, raw salted duck egg yolks, crack open the eggs and remove the yolks. Under a gentle stream of water, rinse the yolks clean of any white. Roll each yolk in 1 teaspoon Shaoxing wine or Baijiu (Chinese hard liquor) if you have it. Lay them out on a baking sheet and bake them at 350°F for 15 minutes, or until they start to release oil. Cool completely.
  • Transfer the yolks to a food processor, and pulse until they have a very fine, powder-like consistency.
  • Add the oil, sugar, salt (if using), and powdered yolks to a nonstick pan set over medium/low heat. Stir and cook for 8-10 minutes, until the sauce is bubbling very slightly around the perimeter of the pan. Do not use high heat, or the sauce may burn.
  • Cool, and store in a clean, air-tight container. It will keep in the refrigerator for 1 month as long as you use a clean utensil to scoop out what you need each time. (Cross contamination shortens the shelf life of anything).

  • Egg Drop Soup. Considered Chinese comfort food, egg drop soup is basically a chicken broth with beaten eggs and spring onion. Some cooks prefer a more bland broth to allow the eggs and onions to shine through, but a chicken or vegetable broth makes for a nicely flavored soup.
  • Egg Foo Yung with Gravy. Egg foo yung is basically the Chinese version of the French omelet, which, although it tastes great on its own, is frequently accompanied by a brown sauce or gravy.
  • Tea Eggs. This savory snack is sold by street vendors throughout China and Taiwan. Hard-boiled eggs are gently tapped all over the shell so that cracks appear, then simmered in an aromatic mixture of black tea, soy, and spices.
  • Steamed Pork in Egg Custard. A traditional Cantonese dish, egg custard with pork is somewhat simple to make. Ground pork and spices are covered in a flavorful egg custard and then steamed for 10 minutes or until the eggs are thoroughly cooked.
  • Chinese Scrambled Eggs With Garlic Chives. This recipe is made with Chinese garlic chives, known for their super “garlicky” flavor, but use regular chives if you can't find the Chinese type.
