1 gallon hot water
1 pound kosher salt
2 quarts vegetable broth
1 pound honey
1 (7-pound) bag of ice
1 (15 to 20-pound) turkey, with giblets removed
Vegetable oil, for rubbing turkey

Steps:

  • Combine the hot water and the salt in a 54-quart cooler. Stir until the salt dissolves. Stir in the vegetable broth and the honey. Add the ice and stir. Place the turkey in the brine, breast side up, and cover with cooler lid.. Brine overnight, up to 12 hours.
  • Remove the turkey from the brine and dry thoroughly. Rub the bird thoroughly with the vegetable oil.
  • Heat the grill to 400 degrees F.
  • Using a double thickness of heavy-duty aluminum foil, build a smoke bomb. Place a cup of hickory wood chips in the center of the foil and gather up the edges, making a small pouch. Leave the pouch open at the top. Set this directly on the charcoal or on the metal bar over the gas flame. Set the turkey over indirect heat, insert a probe thermometer into the thickest part of the breast meat, and set the alarm for 160 degrees F. Close the lid and cook for 1 hour.
  • After 1 hour check the bird; if the skin is golden brown, cover with aluminum foil and continue cooking. Also, after 1 hour, replace wood chips with second cup.
  • Once the bird reaches 160 degrees F, remove from grill, cover with aluminum foil, and allow to rest for 1 hour. Carve and serve.

Try this recipe for brined hickory-smoked turkey breast this holiday season or if you're just looking for some amazing sandwich meat!

5 pound turkey breast (within a 4-7 pound range, thawed if frozen)
3 ½ cups water
1 cup apple juice
¼ cup kosher salt
¼ cup maple syrup
2 tablespoons brown sugar
1 tablespoon crushed red pepper
1 tablespoon garlic powder
1 tablespoon onion powder

Steps:

  • Combine all the ingredients of the brine solution, in a large bowl. Whisk the solution until all of the salt dissolves.
  • Place the breast into a 1 to 2-gallon size zip-top bag. Pour the brine solution over the meat. Make sure the meat is submerged completely. If you do not have enough to cover the meat, then make another batch.
  • Seal the bag squeezing as much air out of the bag as possible. Place the bag inside a bowl (to ensure no messy leaks inside the refrigerator).
  • Refrigerate and brine for 1 hour per pound of meat, but no longer than 24 hours.
  • Preheat the grill or smoker for indirect cooking at 250 degrees F. Fill a pan with warm water and place it below where the turkey will sit on the grate above.
  • Remove the turkey breast from the brine solution and rinse it under cold water. Pat the skin dry with paper towels.
  • Place the turkey breast-side up onto the smoker over the water pan.
  • Plan on smoking the turkey breast for about 30 minutes per pound at 250 degrees F.
  • Place turkey breasts in the smoker with 1 to 2 hickory chunks on top of the hot coals. Close the lid and smoke the turkey, keeping a close watch on the smoker to ensure it stays as close to 250 degrees F as possible. Resist the temptation to open the lid unless you need to add more charcoal or wood to maintain temperature and smoke.
  • Smoke until the turkey breast has an internal temperature of 160 to 165 degrees F, about 2 to 3 hours for a 5-pound turkey breast.
  • The carryover heat will finish cooking the meat.
  • Remove the turkey breast from the smoker and transfer it to a carving board. Allow the turkey breast to rest tented with foil for at least 10 to 15 minutes before slicing.

2 sprigs fresh thyme
3 bay leaves
4 -6 garlic cloves, sliced

1 (6 -8 lb) bone-in turkey breast

Steps:

  • Mix brine ingredients into water and stir until salt is completely dissolved. Place rinsed turkey into brine mixture in a food-safe container (roasting bags are good) with enough brine mixture to cover completely when bag is cinched. Refrigerate bird in brine mixture for about 12 hours.
  • Drain bird and pat dry. Meanwhile, soak mesquite chips in enough water to cover for approximately 30 minutes. Drain chips and place in small handfuls onto foil and make pouches with little holes pricked in the foil with a fork.
  • Prepare grill for indirect heat using a drip pan. Place liquid of your choice into drip pan (water or low carb beer is good). Rub turkey breast with softened butter on the outside and season with salt and pepper (add garlic if you like). Oil grill screen and put a pouch of mesquite chips directly on the coals.
  • Place turkey over the drip pan and cover grill. Grill for several hours, turning turkey as needed, and adding a pouch of chips and a few new coals about every 30-45 minutes to maintain a steady heat. Cook until meat in the deepest part of the breast reads 170°F (you will need an instant read thermometer for this). Allow bird to sit for 15-30 minutes, undisturbed, before carving to maintain juiciness.

Quick and easy brine to lock in flavor and moist, then a delicious butter rub make this Smoked Turkey packed with flavor and so juicy!

15 lb turkey (defrosted)
2 Tbsp olive oil
salt and pepper
16 c. hot water
8 c. apple cider
1 c. kosher salt
1 Tbsp black peppercorns
1 Tbsp Montreal steak seasoning
1 Tbsp thyme (fresh)
1 Tbsp rosemary (fresh)
1/2 c. butter (softened)
1 tsp ground black pepper
2 tsp dried thyme
2 tsp dried rosemary
1 tsp dried sage
1/2 tsp garlic powder

Steps:

  • Unwrap thawed turkey and remove any parts (neck, giblets etc.) that may be inside cavity.
  • In a large food safe bucket combine the hot water and salt. Stir until dissolved. Mix in remaining ingredients for the brine. Add turkey to brine, seal container and place in the fridge overnight (8-12 hours). If the brine mixture does not cover the entire turkey we add more water/apple cider to mixture.
  • The next day remove turkey from brine, rinse under cold water, and pat dry with paper towels. Place the turkey in a large foil roasting pan, breast side up.
  • Then tie the legs together with baking twine.
  • Heat your smoker to 250°F according to manufacturer's instructions. We recommend using cherry wood chips.
  • In a small bowl mix together the ingredients for the rub. Gently lift the skin of the turkey up and rub butter mixture under the skin.
  • Brush the turkey with olive oil. Season the turkey cavity with salt and pepper, to taste.
  • Put the turkey into the smoker and smoke for about 30 minutes per pound, or until an instant read thermometer reads 165 degrees F in the thickest part of the breast meat.
  • Remove turkey from smoker. I recommend using silicone mitts to lift the roasting pan off the smoker. Tent the turkey lightly with foil for at least 30 minutes before slicing, giving the juices time to redistribute.

The first time my husband cooked it he was concerned about it getting done, left it on the grill a little longer than suggested, and it literally fell off the bone when we moved it to the serving plate, but I hardly had any leftovers to put away! We have also stuffed the turkey with sweet onion while smoking and it turned out wonderfully.

1 gallon hot water
1 pound kosher salt
2 quarts vegetable broth
1 pound honey

Steps:

  • Combine hot water and salt in a 54-quart cooler; stir until salt dissolves. Stir vegetable broth and honey into the water. Add ice and stir. Place the turkey in the brine with the breast facing up; cover with cooler lid. Brine overnight to 12 hours.
  • Remove the turkey from the brine and pat dry with paper towel; rub vegetable oil over turkey to coat. Discard brine.
  • Put 1 cup wood chips in the center of each of two large sheets of aluminum foil. Wrap edges around wood chips to form small pouches, leaving small openings at the top.
  • Preheat an outdoor grill to 400 degrees F (200 degrees C) and lightly oil the grate. Place 1 pouch of wood chips directly over the flame beneath the grate.
  • Set the turkey over indirect heat, insert a probe thermometer into the thickest part of the breast, and set the alarm for 160 degrees F (70 degrees C). Close the lid and cook until the turkey's skin is golden brown, about 1 hour. Remove and discard first pouch of wood chips; replace with remaining pouch.
  • Cover turkey with aluminum foil, return cover to grill and continue cooking until the turkey is no longer pink at the bone and the juices run clear, about 3 hours more. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C).
  • Remove the turkey from the grill, cover with aluminum foil, and allow to rest in a warm area for 1 hour before carving to serve.

1 cup salt
1 cup brown sugar
2 gallons vegetable stock
2 cups apple cider vinegar
3 tablespoons pickling spice
1 onion, quartered
1 carrot, chopped into 2-inch pieces
1 tablespoon whole peppercorns
4 bay leaves
1 (10 pound) bag of ice
2 gallons cold water
16 to 18 pound turkey
2 tablespoons Worcestershire sauce
4 tablespoon kitchen bouquet browning sauce
2 tablespoons salt
Ground black pepper, to taste
2 tablespoons paprika
6 large oranges, quartered

Steps:

  • Mix salt, brown sugar, vegetable stock, apple cider vinegar, pickling spice, onion, carrot, peppercorns and bay leaves in a stockpot and bring to a boil until sugar and salt is well dissolved. Remove from heat and cool. In large pot or ice chest, add stockpot mixture to ice and cold water. Submerge turkey. Brine for 4 to 6 hours.
  • Remove turkey from brine and dry well. Combine Worcestershire sauce and kitchen bouquet browning sauce together and brush on skin of turkey. Rub salt, pepper and paprika onto turkey skin. Stuff inside of turkey with orange quarters and tie legs together.
  • Smoke turkey in smoker set to 250 degrees for about 7 hours. Checking internal temperature to be 170 degrees. Remove and let rest for 45 minutes.
