APPLE-MAPLE FRENCH TOAST
In this fall breakfast recipe, soft caramelized apples are a heavenly topping for a thick slice of fluffy French toast.

Steps:
- Whisk the eggs, milk, vanilla, and a pinch of ground cinnamon in a 9-by-13-inch baking dish. Add the bread in a single layer, turning until all the egg is absorbed.
- Meanwhile, heat a large skillet over medium heat, melt 1 tablespoon butter, and add apples, stirring to coat until starting to caramelize. Add the water, cooking until water has evaporated and apples are tender, about 4 minutes.
- Pour in the maple syrup and a dash of ground cinnamon; simmer for a minute to combine.
- In a large, heated nonstick skillet, melt about 1 tablespoon butter and saute the soaked bread until golden brown on each side, about 4 minutes. Place French toast on a plate and top with apple-maple mixture, plus more butter if you'd like!

- 1. Butter a casserole dish. In a bowl whisk the milk, vanilla, sugar, eggs, maple Syrup, and 1/2 tsp cinnamon together. Set aside.
- 2. Rip bread in to pieces like you would for stuffing. Toss in egg mixture with the apples and raisins. Coat evenly.
- 3. Pour in to a casserole dish. Drizzle melted butter over it. Mix 2 TB sugar with a 1/2 tsp cinnamon. Sprinkle over casserole. Dot with pieces of cream cheese. Cover with saran and put in fridge at least 3 hours or over night .
- 4. Bake at 350 for 35-45 minutes, or until lightly browned. I drizzle a little more butter over it before serving. Serve right away after removing from oven. Dust with powdered sugar, or serve with syrup.

- Arrange half of the bread cubes in a greased 13x9-in. baking dish. Layer with cream cheese and remaining bread. In a blender, combine the eggs, milk, butter and maple syrup; cover and process until smooth. Pour over bread. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving., For syrup, in a small saucepan, combine the sugar, cornstarch and cinnamon. Gradually whisk in cider and lemon juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in butter until melted. Serve warm with strata.

FRENCH TOAST STRATA
This is a good recipe to use when company comes or when you are entertaining for brunch. Sometimes, I add dried apricots, snipped into small pieces. The apple syrup (in database) is very good with this too. Prep time includes 8 hours in refrigerator.

- Grease a 9x13x2 rectangular baking dish.
- Place half the bread cubes in the dish.
- Sprinkle with cream cheese cubes and then remaining bread cubes.
- Combine eggs, cream, melted butter and syrup.

- Using a spatula, press layers down to moisten.
- Cover with plastic wrap and refrigerate for 2 hours, or overnight.

APPLE RAISIN FRENCH TOAST STRATA
A simple but elegant way to make breakfast fast. Put together the night before, and bake while you're in the shower. Serve with lots of extra maple syrup! You may also add extra raisins if you wish.

- Melt butter in a medium skillet over medium-high heat.
- Add in apples and saute until just softened (about 3 minutes) remove from heat.
- Stir in the raisins, walnuts, sugar, cinnamon, nutmeg and 1/2 cup sour cream.
