EDNA LEWIS'S OVEN-BRAISED SOUTHWEST CHICKEN



Edna Lewis's Oven-Braised Southwest Chicken image

In this recipe, which was featured in The Times in 1989, the chef Edna Lewis suggests braising chicken over hominy with a mélange of aromatic vegetables to make a one-dish meal that is both light and filling. When the bird is cooked, its juices meld with the vegetables to make a thin sauce that can be thickened with cream. Hominy can be found in the canned-vegetables aisle of your supermarket.

Number Of Ingredients 15

1 chicken, 2 1/2 to 3 pounds
2 16-ounce cans yellow hominy (do not use white)
1 medium onion, finely diced
1 medium red or green bell pepper, seeded and finely diced
1 small carrot, peeled and finely diced
6 shiitake or domestic mushrooms, stems removed, caps diced
3 to 4 jalapeno peppers, seeded and diced
1 teaspoon ground cumin
1 teaspoon oregano
1/2 teaspoon freshly ground black pepper
1 bay leaf
1/3 cup dry vermouth
1/4 cup finely chopped cilantro
2 tablespoons heavy cream (optional)
Salt to taste.

Steps:

  • Preheat the oven to 325 degrees.
  • Cut the chicken into serving pieces, or have the butcher do so. Heat a nonstick skillet over a high flame and sear the chicken on all sides, but do not brown. This will keep the skin from seizing up during the baking. Set aside on paper towels.
  • Drain the hominy in a sieve, rinse it and drain it again. Spoon into a 3-quart casserole with a lid. Arrange the chicken pieces on top.
  • Layer the onion, bell pepper, carrot, shiitakes and jalapenos on top. Sprinkle with the cumin, then crumble the oregano over. Season with pepper and place bay leaf on top. Pour the vermouth into the casserole, cover and bake for 45 to 50 minutes, or until cooked through.
  • When the chicken is cooked, remove from the oven and discard the bay leaf. Add the cilantro and cream (if you like) to the casserole and mix to combine all the ingredients in the casserole. Season with salt to taste. Serve the chicken pieces with the hominy mixture alongside and spoon the juices over.

One 2 1/2-pound chicken
3 tablespoons butter
3 cups hominy
1 medium onion, chopped
1/4 pound mushrooms, sliced
1 small carrot, thinly sliced
1 bay leaf
1/2 teaspoon freshly ground black pepper
Pinch dried thyme leaves
1/4 cup white wine (not too dry)
1/2 teaspoon salt
1 tablespoon finely chopped parsley
2 tablespoons heavy cream (optional)

Steps:

  • Cut the chicken into 8 pieces. Rinse it under cold water and pat dry. Heat the butter in a skillet and when it foams, quickly sauté the chicken pieces, turning them so that they cook on both sides but do not brown. This seizes the skin so it does not shrivel during cooking. Drain the chicken on paper towels.
  • Put the hominy in a 2-quart casserole with a lid. Lay the chicken pieces on top and cover with an even layer of onion, sliced mushrooms, and carrot. Add the bay leaf and sprinkle the pepper and dried thyme over the vegetables. Add the wine and cover the casserole.
  • Cook in a preheated 325°F degree oven for 45 minutes. About 5 minutes before the casserole is finished cooking, add the salt and parsley. Take it from the oven and remove the bay leaf. Taste and add the cream if you want it. I do not always add it.

A broth developed from an Edna Lewis recipe makes full-flavored chicken noodle soup possible in less than ninety minutes. So good to have on those cold winter days!!

1 tablespoon vegetable oil
2 chicken breasts
2 cups boneless skinless chicken breasts, cut into 1-inch cubes
2 medium onions, cut into medium dice
2 quarts boiling water
table salt
2 bay leaves
1 large carrot, peeled and cut 1/4-inch thick
1 medium celery rib, sliced 1/4-inch thick
1/4 teaspoon dried thyme
2 cups egg noodles, preferably wide
1/4 cup fresh parsley leaves, minced
ground black pepper

Steps:

  • Heat oil in a large soup kettle. When oil shimmers and starts to smoke, add chicken breast halves; sauté until brown on both sides, about 5 minutes. Remove and set aside,.
  • Add half of chopped onions to kettle;sauté until colored and softened slightly, 2-3 minutes. Transfer to medum bowl; set aside.
  • Add half of chicken pieces; sauté until no longer pink, 4-5 minutes. Transfer to bowl with onions.
  • Sauté remaining chicken pieces. Return onions and chicken pieces (excluding breasts) to kettle. Reduce heat to low, cover, and simmer until chicken releases its juices, about 20 minutes. Increase heat to high; add boiling water along with both breast halves, 2 teaspoons salt, and bay leaves. Return to a simmer, then cover and barely simmer until chicken breasts are cooked and broth is rich and flavorful, about 20 minutes.
  • Remove chicken breasts from kettle; set aside. When cool enough to handle, remove skin from breasts, then remove meat from bones and shred into bite-size pieces; discard skin and bone. Strain broth; discard bones. Skim fat from broth, reserving 2 tablespoons (broth can be covered and refrigerated up to 2 days).
  • Return soup kette to medium-high heat, Add reserved chicken fat. Add remaining onions, along with carrot and celery; sauté until softened, about 5 minutes. Add thyme, along with broth and chicken; simmer until vegetables are ender and flavors meld, 10-15 minutes. Add noodles and cook until just tender, about 5 minutes. Adjust seasonings; sir in parsley, and serve.
