1/3-1/2 cup parmesan cheese
parchment paper

Steps:

  • Preheat oven to 350°F - use middle rack.
  • Grate enough cheese to use 1/3 to 1/2 cup of cheese per bowl - depending on the size you wish to make.
  • Cut individual sheets of parchment paper according to desired number of bowls.
  • Make an appropriate size circle on each sheet of parchment paper.
  • Bake for 5 - 10 minutes depending on size of desired bowl. Watch carefully after the 6 - 7 minute mark - you only want the bowls to bubble, melt and turn slightly golden colored.
  • Remove from oven - and carefully using the parchment paper turn the melted cheese over the bottom of the bowl- it conforms as it melts.
  • Serve your favorite salad in these delicious edible bowls.
  • Pictured is my pear and apple salad - a delicious combination.

Wow your guests and serve their salad in these gorgeous Parmesan salad bowls! They are easily made, right in your microwave. The lattice effect of the shredded parmesan cheese is stunning!

2 cups of grated fresh Parmesan cheese. (not the canned stuff!!)
Good quality parchment paper
*2 nesting bowls (or see my comments below)
2 microwave safe dinner sized plates

Steps:

  • Invert one bowl onto a dinner sized plate, set aside.
  • Cut your parchment paper to cover your microwave safe plate. In the center of the plate, on the parchment paper, place about 1/2 cup of cheese and spread into a circle with your fingers. It should be about 1/2″ bigger than your bowl you are mimicking. You don't need to be exact, and there can be small holes. Those give a more "lattice" effect when they are done.
  • Place in the microwave and cook for 2 minutes. The cheese will bubble and start to brown.
  • Take it out of the microwave, and carefully (IT'S HOT!) flip it upside down, with the parchment, onto the bowl inverted on to the plate. Cover with other bowl to form the cheese bowls.
  • Take off of the bowl while they are warm. They cool quickly, make sure to cool them before stacking them.
  • I used the same piece of parchment for all 4 bowls, and never had a problem.

Mounded 1/2 cup freshly shredded Parmesan
Pinch crushed red pepper
1 1/2 cups mixed greens
2 tablespoons bottled salad dressing
1/4 red onion, thinly sliced
1 radish, sliced
4 blackberries
2 tablespoons crumbled feta

Steps:

  • Heat a 12-inch nonstick skillet over medium-low heat.
  • Mix together the Parmesan and crushed red pepper in a small bowl. Add to the skillet in a very thin layer and cook until it is light brown, melted and bubbly, about 1 1/2 to 2 minutes. Remove the skillet from the heat and allow to sit and cool slightly, 20 to 30 seconds. Loosen the cheese circle by running a rubber spatula around the edge of the skillet. Carefully transfer the cheese to the inside of a small bowl (approximately 1 1/2 to 2 quarts), using the spatula to help push and form the cheese to the shape of the bowl.
  • Allow it to cool for several minutes before removing to allow the shape to set. (You can leave it inside the bowl until serving.)
  • Place the Parmesan bowl on a plate and fill with the greens. Drizzle the salad with the dressing. Top with the red onion, radish, blackberries and feta.

Parmesan bowls are delicious, easy to prepare and make an impressive presentation for salads. Make these using any bowl you would normally use as the mold.

vegetable oil cooking spray
1 1/3 cups parmesan cheese, coarsely grated
1 cup parmesan cheese, finely grated

Steps:

  • Spray an 8-inch non-stick saute pan with vegetable oil spray.
  • Heat the pan over medium heat.
  • For each Parmesan bowl, sprinkle 1/3 coarsely grated Parmesan to the bottom of the saute pan, distributing the cheese evenly across the pan.
  • Allow the cheese to bubble for about 30 seconds before adding an additional 1/4 cup of finely grated Parmesan.
  • When the cheese starts to turn golden brown, remove from the pan and place over any (flipped upside down) bowl you would normally use.
  • Now, I like to place a paper towel (or two) over the grated Parmesan to soak up any oil, while I gently press/mold the grated cheese to the bowl.
  • Allow a few moments for your Parmesan bowls to cool before removing.
  • Divide salad among the cooled Parmesan bowls, serve and Enjoy! :).
  • For a dramatic effect, tilt the bowl on the plate, allowing the greens to cascade out of the bowl onto the plate or try using different shaped molds for your Parmesan bowls.

This idea was the result of a comment on my parmesan crisp recipe stating that they liked to drape the crisp over a coffee cup while still hot to make a little bowl. I was about to prepare dinner, so I thought I would try it. This is a delicious way to serve anything that would taste good with parmesan cheese in or on it.

8 ounces coarsely grated parmesan cheese
1 teaspoon dried sweet red pepper

Steps:

  • Preheat broiler with rack on the middle shelf.
  • Place parchment paper to cover broiler pan.
  • Lightly spray with vegetable cooking spray.
  • Place 4 ounces of the grated parmesan in the center of the pan.
  • Flatten the Parmesan out into a circle about 1/4 inch thick.
  • Sprinkle with dried red sweet pepper.
  • Broil 3 minutes.
  • Remove from oven and slip paper onto a cooking rack.
  • Prepare pan with a second sheet of parchment paper.
  • Prepare remaining parmesan and cook as before.
  • Meanwhile, remove parmesan from the first paper and drape over an inverted cereal bowl and let cool ten minutes or more.
  • Repeat this process for the second batch.
  • Makes two very pretty bowls.

2 cups shredded Parmesan cheese
1/2 teaspoon coarsely ground pepper
2 romaine hearts, cut into bite-size pieces (about 6 cups)
1 cup grape tomatoes, halved
3/4 cup Caesar salad croutons, slightly crushed
1/4 cup creamy Caesar salad dressing

Steps:

  • In a small bowl, toss cheese with pepper. Heat a small nonstick skillet over medium heat. Evenly sprinkle 1/4 cup cheese mixture into pan to form a 6-in. circle; cook, uncovered, until bubbly and edges are golden brown, 1-2 minutes. Remove skillet from heat; let stand 15 seconds., Using a spatula, carefully remove cheese and immediately drape over an inverted 4-oz. ramekin; press cheese gently to form a bowl. Cool completely. Repeat with remaining cheese, making eight bowls., In a large bowl, combine romaine, tomatoes and croutons. Just before serving, drizzle with dressing and toss to coat. Serve in Parmesan bowls.
